Out of all my corn recipes, this is my favorite. You need just a few ingredients and a slow cooker to make this delicious side dish. Because it cooks on its own, you'll have extra time to prepare the main course. -Judy McCarthy, Derby, Kansas

6 cups frozen corn (about 32 ounces), thawed
1 package (8 ounces) cream cheese, cubed
1/3 cup butter, cubed
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a 3-qt. slow cooker, combine all ingredients. Cook, covered, on low until heated through and cream cheese is melted, 3-4 hours. Stir well before serving.

This is NOTHING like canned creamed corn! My husband is not a fan of corn or creamed dishes, but he thinks this is great. Easy and quick to prepare and is an especially delicious side dish for chicken or pork. Everyone always asks for the recipe.

2 (10 ounce) packages frozen corn kernels, thawed
1 cup heavy cream
1 teaspoon salt
2 tablespoons granulated sugar
¼ teaspoon freshly ground black pepper
2 tablespoons butter
1 cup whole milk
2 tablespoons all-purpose flour
¼ cup freshly grated Parmesan cheese

Steps:

  • In a skillet over medium heat, combine the corn, cream, salt, sugar, pepper and butter. Whisk together the milk and flour, and stir into the corn mixture. Cook stirring over medium heat until the mixture is thickened, and corn is cooked through. Remove from heat, and stir in the Parmesan cheese until melted. Serve hot.

This soup is really easy to make, lower in fat than most cream soups, and delicious - especially if you are fighting off a cold! Try adding a chopped green chile pepper sauteed in the initial onion mixture or some small slices of chicken stirred in.

1 clove garlic, minced
¼ cup chopped fresh parsley
1 tablespoon margarine
3 tablespoons all-purpose flour
2 ½ cups milk
1 cup chicken broth
2 (12 ounce) cans whole kernel corn
2 ½ tablespoons cream cheese
1 teaspoon garlic salt
1 teaspoon ground black pepper
ground cayenne pepper to taste

Steps:

  • In a large pot over medium heat, combine the onion, garlic, parsley and butter or margarine. Saute for about 5 minutes, or until onions are tender.
  • Add the flour, stirring well, to make a pasty mixture. Whisk in the milk and the broth. Add the corn and the cream cheese and allow to heat through. Add the garlic salt, black pepper and cayenne pepper to taste. Stir together and serve.

Creamy and perfectly seasoned, this homemade Creamed Corn recipe is ready in under 15 minutes. It's made with simple ingredients using frozen corn so it's an easy side dish to prepare for any occasion.

2 tablespoons unsalted butter
1 small sweet onion (, diced)
2 cloves garlic (, minced)
5 cups frozen corn (, thawed and excess moisture removed)
3/4 cup heavy cream
1 1/2 tablespoons granulated sugar
3/4 teaspoon kosher salt
1/4 teaspoon freshly cracked black pepper
pinch of cayenne pepper
pinch of ground nutmeg
1 cup whole milk
2 tablespoons all-purpose flour
1/2 cup freshly grated Parmesan cheese
finely chopped fresh parsley (, for garnish)
finely cracked black pepper (, for garnish)

Steps:

  • In a large nonstick skillet, melt butter over medium-high heat. Add onion and sauté until softened and translucent, stirring frequently, about 2-3 minutes.
  • Add garlic and cook for 30 seconds until fragrant.
  • Add corn, heavy cream, sugar, salt, pepper, cayenne pepper, and nutmeg. Stir to combine and cook for about 1 minute.
  • In a measuring cup or bowl, thoroughly whisk together the milk and flour until flour is fully incorporated; slowly pour into the corn mixture and stir to combine. Cook, stirring constantly for 4-5 minutes, or until thickened and corn is cooked through.
  • Remove from heat and stir in the Parmesan cheese until melted.
  • Taste and adjust seasonings, if desired. Serve immediately while hot and still shiny with a little cracked black pepper and fresh chopped parsley.

I do love corn puddings, & this recipe is right up there with the rest of 'em! It comes from the 2010 cookbook, Taste of Home Casseroles Recipe Cards, & I did tweak it just slightly!

1 (3 ounce) package low-fat cream cheese, softened
2 large eggs
1/3 cup granulated sugar
2 3/4 cups sweet corn
1 (4 3/4 ounce) can cream-style corn
1 (8 1/2 ounce) can cornbread mix
1 cup 2% low-fat milk
2 tablespoons unsalted butter, melted
1 teaspoon salt
1/2 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees F, then grease a 13"x9" baking pan.
  • In a small bowl, beat together the cream cheese, eggs & sugar until blended.
  • Stir in remaining ingredients, then transfer to the prepared baking pan.

In the country, we planted a large garden every spring. It never seemed like a chore to shell peas or shuck corn because I always knew how good they were going to taste when they were cooked! If you've never had homemade cream-style corn, you don't know what you're missing. We always had a huge corn crop, so we made a lot of creamed corn and froze it in quart containers to enjoy year round. The kind of fresh corn you use can determine the thickness of the cooked dish. If it's too thick, add a little water. If it's too thin, add a little cornstarch.

12 ears fresh sweet corn, such as Truckers' Favorite or Merritt
4 tablespoons (1/2 stick) butter
Salt to taste

Steps:

  • Shuck the corn and remove all the silks. Wash and drain the corn. Shave just the tips of the kernels using a very sharp knife or vegetable peeler. Cut away from you, allowing the tips to fall into a large bowl. Using the back of the knife, scrape the creamy juice from the kernels into the same bowl.
  • Melt the butter in a skillet over medium heat and add the corn. Cook the creamed corn for 20 minutes, stirring often, until thickened. Add water if the mixture becomes too thick. Season with salt to taste.
  • Be sure you use juicy corn for this; otherwise, you won't get the right creamy texture.
