1 (14.75 ounce) can cream-style corn
2 eggs
1 (8 ounce) package dry corn bread mix
1 cup sour cream
8 ounces Cheddar cheese, shredded

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking pan.
  • In a large mixing bowl, combine corn, reserved liquid, eggs, corn bread mix and sour cream; stir until blended. Pour batter into prepared pan; sprinkle with cheese.
  • Bake in preheated oven for 30 minutes, until golden brown.

2 tablespoons virgin olive oil or 2 tablespoons butter
1/2 cup chopped yellow onion
1/4 cup chopped green bell pepper
1 lb fresh jumbo shrimp, cleaned and deveined
2 tablespoons chopped fresh parsley
1/4 cup canned tomato sauce
2 tablespoons mild salsa
1 teaspoon salt
1 teaspoon fresh ground black pepper
2 tablespoons all-purpose flour
1 cup milk (whole or 2%)
1 tablespoon vegetable shortening, for greasing the baking dish
2 cups canned cream-style corn
1/2 cup grated parmesan cheese

Steps:

  • Preheat the oven to 375 degrees.
  • Heat the oil in a large skillet. Add the onions and bell pepper and sauté until tender, 3 to 5 minutes.
  • Add the shrimp and parsley and sauté until the shrimp begin to turn pink, 2 to minutes.
  • Stir in the tomato sauce, salsa, salt, and pepper.
  • Reduce the heat to low, cover the skillet, and simmer for 5 minutes.
  • Uncover the skillet and slowly sprinkle the flour over the shrimp mixture.
  • Mix well, then gradually pour in the milk.
  • Raise the heat to medium and cook, uncovered, until the mixture thickens, 3 to 5 minutes.
  • Remove from the heat and allow to cool for a few minutes.
  • Grease an 8- or 9-inch ovenproof baking dish with the shortening.
  • Spoon the shrimp mixture into the dish.
  • Pour the cream-style corn over the shrimp mixture.
  • Do not stir.
  • Sprinkle the Parmesan cheese on top.
  • Bake for 20 to 30 minutes or until brown.

6 ounces spaghetti
2 tablespoons salted butter
6 cloves garlic, minced
1 pound shrimp
1 small yellow onion, diced
½ cup sliced fresh mushrooms
½ cup white wine
5 ounces oil-packed sun-dried tomatoes, drained and cut into strips
3 cups baby spinach leaves
1 ¾ cups half-and-half
⅔ cup freshly grated Parmesan cheese
2 teaspoons dried Italian herb seasoning
1 tablespoon water
1 teaspoon cornstarch
1 tablespoon chopped fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain and keep warm.
  • While the pasta is cooking, melt butter in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute. Add shrimp and cook until are bright pink on the outside and the meat is opaque, 2 to 3 minutes. Remove shrimp and garlic to a plate.
  • Add onion and mushrooms to the hot skillet; cook until softened, 5 to 7 minutes. Add white wine and cook until reduced by half, 2 to 3 minutes. Add sun-dried tomatoes and cook for 1 to 2 minutes.
  • Reduce heat to low. Add spinach and half-and-half; cook until spinach wilts, 2 to 3 minutes. Stir in Parmesan cheese and Italian seasoning; simmer until cheese has melted, about 3 minutes.
  • If sauce is not thick enough, stir water and cornstarch together in a small bowl. Clear a spot in the center of the skillet and add cornstarch mixture to the center of the pan. Let it simmer while stirring the mixture quickly until the sauce thickens.
  • Add shrimp back to the sauce and cook until reheated, about 1 minute. Serve sauce over pasta. Top with parsley.

4 tablespoons butter
6 tablespoons flour
2 cups milk
1 pinch salt
1/2 lb shrimp, peeled
1/4 lb scallops
1/4 cup wine or 1/4 cup sake
1 tablespoon butter
1/2 yellow onion, minced
1/2 cup white mushroom, minced
1/2 teaspoon garlic, minced
salt and pepper, to taste
2 cups cooked rice
1 cup shredded monterey jack cheese
1 tablespoon chopped parsley

Steps:

  • Preheat oven to 350°F; butter 8-inch square baking dish and set aside.
  • In a sauté pan, melt butter until it foams and add flour slowly to form a paste. Slowly add milk and stir until sauce coats spoon, about 5-7 minutes Add salt. Remove from heat and set aside.
  • Marinate shrimp, scallops in wine for 10 minutes In a sauce pan, sauté onion until soft, then add mushrooms.
  • Add shrimp, scallops and wine and stir to coat with onions. Add garlic, salt and pepper and cook until shrimp and scallops are cooked, about 5 minutes
  • Remove pan from heat and drain liquid into a 2 cup glass measuring cup. Set aside. Add enough white sauce to the shrimp liquid to make 2 cups.
  • Put rice in prepared baking dish. Top with shrimp mix. Pour white sauce on top until shrimp and rice are covered. Sprinkle cheese on top. Bake 10-12 minutes until bubbly and cheese melts. Garnish with parsley and serve hot.
