CROCK-POT® CHICKEN CHILI
Made a chicken chili recipe, and it was bland. So I took the ingredients and added my own flair. My family loves it when it gets cold out, because they know this will be on the menu. It's very flavorful. Serve with tortilla chips and sliced avocado for something different. Serve with sour cream and cheese.

Steps:
- Mix green salsa, diced tomatoes with green chile peppers, white beans, chicken broth, corn, onion, oregano, cumin, salt, and black pepper together in a slow cooker. Lay chicken breasts atop the mixture.
- Cook on Low until the chicken shreds easily with 2 forks, 6 to 8 hours.
- Remove chicken to a cutting board and shred completely; return to chili in slow cooker and stir.

- Place chicken breasts in the bottom of a slow cooker. Pour cannellini beans, black beans, corn, and tomatoes over the chicken in order listed. Sprinkle ranch dressing mix, chili powder, cumin, and onion powder on top. Place cream cheese on top. Cook on Low until chicken is fork-tender, 6 to 8 hours.
- Remove chicken breasts and shred with two forks or cut into bite-sized chunks. Stir chicken back into the slow cooker; mix chili thoroughly.

CROCK POT CHICKEN CHILI
This is just what you need on these cold evenings! Throw a salad together, add some cornbread and your meal is ready! You can add some heat by adding some crushed red pepper flakes (yes, the ones at the pizza parlors in the shakers). I always serve sour cream and some grated cheddar and jack cheese (grated together) with this meal. Try not to open the lid and peek; each time you open a crock pot, add another 20 minutes to the cooking time.

- Lightly grease the crock of your slow cooker with vegetable oil.
- Put chicken breasts into the bottom of the slow cooker crock; add chicken broth, black beans, cannellini beans, diced tomatoes, yellow onion, chili powder, garlic, cumin, paprika, garlic powder, hot sauce, salt, and black pepper.

- Place frozen chicken breasts in bottom of crock pot.
- Sprinkle the packet of taco seasoning over the chicken.
- On top of chicken and seasoning pour the black beans, great northern beans, tomatoes and green chilies, cream of chicken soup, and chicken broth.
- Cook all day on low, or half day on high.
- About one hour before serving, cut up block of cream cheese and drop into crock pot, stirring occasionally to melt.
- Before serving, remove chicken breasts, cut into pieces, and mix back into the chili. Serve topped with sour cream or shredded jack cheese if you'd like.

- In your crock pot combine your black beans, corn, rotel tomatoes, ranch mix, cumin, chipotle chili powder, onion powder, ground red pepper, minced garlic, ground black pepper, garlic powder & chicken stock.
- In a large skillet heat your butter and add chopped onion. Cook over medium heat until onions are translucent and tender.
- Add your onions to the crock pot and mix well.
- Cut your chicken breasts in half and add to the mixture.
- Spoon the cream cheese over the top of the chicken mixture and cover with a lid. Cook on low heat 5-7 hours, or until your chicken breasts shred easily with a fork.
- When chicken is done, remove from the crock pot and shred with 2 forks. Return to the chili mixture and stir well until all cream cheese lumps have dissolved.
- Serve with bread and enjoy!

- Drain and rinse the black beans. Place chicken at the bottom of the crock pot, then pour out the whole can of corn (undrained), Rotel tomatoes, and black beans on top of chicken.
- Top with seasonings and ranch dressing mix. Stir together.
- Place cream cheese block on top. Cover with lid and cook on low for 6-8 hours.
- After the cooking time is over, take chicken breasts from crock pot and shred and add back to the chili. Stir together and enjoy!

SLOW COOKER THICK AND CREAMY WHITE CHICKEN CHILI
Steps:
- Combine onion, chicken, beans, broth, chili powder, cumin, pepper, salt, green chiles and tabasco sauce in the slow cooker. Cover and cook on low for 4-6 hours, or until chicken is very tender.
- Remove the chicken from the slow cooker and place it on a cutting board. Let it rest.
- Start melting butter in a large pan on the stove over medium heat. Once the butter is melted, whisk in flour, a tablespoon at a time. Add in the milk, about a half cup at a time, and whisk. The mixture will become thick and creamy. Add the mixture to the slow cooker and stir.
- Shred the chicken and stir it back into the slow cooker.
- Stir in sour cream and juice from lime. Season to taste (I added in salt and pepper and more cumin).
- Ladle into bowls and top with grated cheese and cilantro.

- Place chicken in slow cooker. Mix seasonings, salt and pepper in small bowl. Sprinkle chicken with seasoning mixture. Add remaining ingredients, except cream cheese; stir to mix. Cover.
- Cook 8 hours on LOW or 3 to 4 hours on HIGH.
- Remove chicken from slow cooker. Shred, using 2 forks. Set aside.
