Dad's Creamy Cucumber Salad image

This was my Dad's recipe and one of our family's all-time summer favorites.

2 large cucumbers, peeled and thinly sliced
1 sweet onion, thinly sliced
1 tablespoon sea salt
1 ½ cups mayonnaise, or more to taste
2 tablespoons vinegar
1 tablespoon white sugar
1 teaspoon dried dill weed
1 teaspoon garlic powder
1 teaspoon ground black pepper

Steps:

  • Mix cucumbers, sweet onion, and sea salt together in a bowl. Cover bowl with plastic wrap and let sit for 30 minutes.
  • Turn cucumber mixture into a colander set over a bowl or in a sink; let drain, stirring occasionally, until most of the liquid has drained, about 30 minutes more. Transfer drained cucumber mixture to a large bowl.
  • Stir mayonnaise, vinegar, sugar, dill, garlic powder, and black pepper together in a bowl with a whisk until smooth; pour over the cucumber mixture and stir to coat vegetables with the dressing.
  • Cover bowl with plastic wrap and refrigerate at least 2 hours.

1 cucumber, peeled and thinly sliced
⅓ cup balsamic vinegar
3 tablespoons olive oil
1 tablespoon lemon juice
salt and pepper to taste
1 twist lemon peel for garnish

Steps:

  • Place the zucchini slices into a steamer basket and set over one inch of water in a saucepan. Bring to a boil, cover and steam for 3 to 5 minutes, or until tender. Remove from the steamer and cool slightly.
  • In a salad bowl, combine the zucchini and cucumber slices. In a separate bowl, whisk together the balsamic vinegar, olive oil, lemon juice, salt and pepper. Pour over the zucchini and cucumber. Toss to coat, then garnish with lemon peel.

1/3 cup extra virgin olive oil
1/4 cup cider vinegar
1/4 cup balsamic vinegar
1 teaspoon dijon-style mustard

1 garlic clove, minced
1/8 teaspoon black pepper

Steps:

  • In a large bowl, combine zucchini, cucumber, onion, olives, tomatoes, and parsley.

This raw zucchini cucumber salad with a lemon basil vinaigrette is a fun and healthy way to enjoy the fresh flavors of summer.

1 medium zucchini
1 medium cucumber
2 cups arugula
1 cup cherry tomatoes (halved)
1 juice of lemon
2 tablespoons extra virgin olive oil
2 tablespoons fresh basil (minced)
1 teaspoon dijon
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In the bottom of a medium bowl, whisk together the lemon basil vinaigrette: lemon juice through pepper.
  • Trim both ends of the zucchini and use a vegetable peeler to create long, wide ribbons. I find that it's easiest to place the zucchini flat on a cutting board and peel the vegetable horizontally.
  • Repeat the same process with a cucumber and place both the zucchini and cucumber ribbons in the bowl on top of the vinaigrette.
  • Add arugula and cherry tomatoes to the bowl and toss well until vegetables are evenly coated with the vinaigrette. Check for seasoning and adjust accordingly.

  • Very thinly slice cucumbers and onion (cut in half), about 1/16" or 1.5mm thick, where you can almost see through the slices. A mandoline makes really easy work of this.
  • Place cucumbers and onion in strainer and sprinkle with about 1 teaspoon salt and toss to coat. Let sit over a bowl or clean sink at least 30 minutes, but preferably an hour or more, so excess water can drain. If you don't do this the cucumbers won't soften as they should, and your salad can end up very watery.
