Feta ties with Sharp Cheddar and Havarti for my favorite cheeses. I love the sharp taste of a good Feta on salads with sweet tomatoes and cucumbers.

GREEK CREAM CHEESE-STUFFED CHICKEN
A delicious creamy blend of Greek flavors rolled up in chicken. I just threw this together last night and it turned out amazing. I made 3 chicken breasts and still have a huge bowl of filling. I am going to try to make several other dishes with it. Tonight - stuffed burgers. Tomorrow - filling on rye bread topped with shrimp or cucumber as an appetizer. It might also be delicious with lamb, fish, or in a pita wrap with lettuce. Experiment with this filling because it is delicious all on its own. Serve with Greek salad or side dish of choice.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Cut each chicken breast from one side through the middle horizontally to within one-half inch of the other side. Open the two sides and spread them out like an open book.
- Mix cream cheese, feta cheese, tomato, olives, onion, and spinach together in a large bowl. Spoon cheese mixture onto 1 side of each opened chicken breast. Fold each chicken breast closed and place on a piece of aluminum foil.
- Cook the chicken breasts on the preheated grill until no longer pink in the center and the juices run clear, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

CREAMY FETA DIP & DRESSING

- Combine sour cream, yogurt, lemon juice and all ingredients except buttermilk and feta in a pint jar or quart sized bowl and mix well.
- Add the buttermilk slowly, stirring until desired thickness is reached (see note to thin for a dressing). Fold in the feta. If using a bowl, transfer to a jar with a lid.
- Refrigerate one or more hours before using, and taste to adjust seasonings again.
- Shake well before each use. This tends to get thinner as it sits in the fridge- I just add a bit more sour cream, salt & pepper if I'd like it thicker.

CREAMY FETA SALAD DRESSING AND DIP

Steps:
- With a fork, mash the cheese and buttermilk together until it resembled the consistency of cottage cheese.
- Add the remaining ingredients and blend well.
- Add salt and pepper to taste.
- Let sit, covered, in the refrigerator at least a few hours to blend flavors.
- If it's too thick, just add a little milk until it's the texture you desire.
- This is sooo good on a salad with fresh greens, tomatoes, cucumbers, slices of red onions, and kalamata or ripe olives.

- Combine all of the ingredients in a food processor fitted with the steel blade. Process until well-blended and creamy. Taste and adjust seasoning, if necessary. Serve immediately or chill until ready to serve.
- Make Ahead: This dressing will keep nicely in the refrigerator for up to 4 days. However, it will thicken up quite a bit in the fridge; before serving, whisk well then add a bit of milk, little by little, to thin to desired consistency.

FETA-STUFFED CHICKEN BREAST

Steps:
- Use a sharp knife to slice a pocket in the thickest part of each chicken breast.
- Mix bread crumbs, Parmesan cheese, garlic powder, salt, and pepper together in a small bowl.
- Cut feta block into 10 slices crosswise, then cut in half again lengthwise. Roll each piece of feta in the bread crumb mixture to coat. Stuff 2 pieces coated feta into the pocket of each chicken breast. Season breasts with salt and pepper.
- Heat oil in a large frying pan over medium heat. Working in batches to avoid overcrowding, add chicken and cook until cheese is melted and chicken is no longer pink in the center and the juices run clear, about 3 to 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove to a plate and keep warm while cooking remaining chicken.
- Slice chicken at a 45-degree angle and arrange on a plate. Sprinkle with crumbled feta.

- Measure Greek yogurt, crumbled feta, dill leaves, apple cider vinegar, Worcestershire sauce, garlic powder, salt, onion powder, and black pepper into a blender or food processor. Blend/process until smooth and creamy. Add 1 tablespoon milk and blend again. Check consistency and, if a thinner dressing is desired, continue adding 1 tablespoon milk at a time -- blending in between -- until preferred consistency is reached.
- Adjust seasonings to taste, transfer dressing to a bowl or jar, tightly cover, and refrigerate for a few hours before serving (which allows time for the flavors to blend). If the consistency of the dressing is too thick after chilling, thin it out with a splash of additional milk.
