Cheese grits are a Southern tradition. Paula shares an easy cheesy grits recipe that's perfect for any meal. Cheddar, and milk make this a creamy treat topped with bacon crumbles.

3 1/4 cups whole milk
1 cup quick cooking grits
1/2 stick butter
1/4 cup grated cheddar cheese
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
for serving bacon crumbles

Steps:

  • In a medium saucepan, bring the milk to a boil over medium-high heat.
  • Add the grits, 1/2 teaspoon of salt, 1/4 teaspoon of pepper and the butter. Cook and stir frequently, until the grits are soft.
  • Stir in cheese and bacon.

2 cups water
1 1/4 cups milk
1 teaspoon salt
1 cup (not instant) quick cooking grits
1/2 cup butter

Steps:

  • In a small pot, bring water, milk and salt to a boil. Slowly stir grits into boiling mixture. Stir continuously and thoroughly until grits are well mixed. Let the pot return to a boil, cover pot with a lid, lower the temperature, and cook for approximately 30 minutes stirring occasionally. Add more water if necessary.
  • Grits are done when they have the consistency of smooth cream of wheat.
  • Serve with butter, fruit or savory with a meal.

A great casserole for anyone who is a fan of grits and cheese.

4 beaten eggs
1/2 cup milk
16 oz cubed cheddar cheese
1/4 teaspoon garlic powder
2 cups regular grits
1/4 teaspoon pepper
1 teaspoon salt
6 cups chicken broth
1 stick butter
8 oz grated sharp white cheddar cheese

Steps:

  • Preheat oven to 350 °F. Grease a 4 quart casserole dish.
  • Bring the broth, garlic powder, salt and pepper to a boil in a 2 quart saucepan. Stir in the grits and whisk until completely combined. Reduce the heat to low and simmer until the grits are thick, about 8 minutes.
  • Add the cubed cheddar cheese and milk and stir. Gradually stir in the eggs and butter, stirring until all are combined. Pour the mixture into the prepared casserole dish. Sprinkle with the white cheddar cheese and bake for 35-40 minutes or until set.

1 cup uncooked grits (not instant)
4 tablespoons unsalted butter
1 cup heavy cream
2 teaspoons freshly ground black pepper

Steps:

  • Bring the milk and water to a boil in a heavy-bottomed saucepan over medium heat. Stir in the salt. Slowly add the grits, stirring constantly. When the grits begin to thicken, turn the heat down to low and simmer for 30 to 40 minutes, stirring occasionally to prevent the grits from scorching. Add the butter and cream, stirring to incorporate thoroughly, and simmer for 5 minutes. Stir in the pepper. Serve the grits immediately or keep them warm, covered, in a double boiler over simmering water.
  • Note: If the grits are too thick, stir in more cream or milk. Remember that grits solidify as they cool; they will get thicker once on the plates.

2 cups water
1 1/4 cups milk
1 teaspoon salt
1 cup quick-cooking grits
1/2 cup butter, plus
1 tablespoon butter
1/3 cup diced green onion
4 teaspoons processed cheese, cubed (suggested ( Velveeta)
1/4 teaspoon garlic powder
2 1/2 cups shredded cheddar cheese, divided
1 (14 ounce) can Rotel Tomatoes

Steps:

  • Preheat oven to 350 degrees F.
  • In a saucepan, bring the water and milk to a boil. Add the salt and slowly add the grits and return to a boil, stirring constantly for 1 minute. Reduce the heat, cover, and cook for 3 minutes. While stirring the grits add the 1/2 cup of butter and stir until butter is melted. Cover and cook for 3 to 5 minutes, or until the grits are thick and creamy. Remove from heat and set aside.
  • Using a skillet, sauté the onions in the remaining tablespoon of butter for 1 minute. Add the processed cheese, garlic powder, 1 1/2 cups Cheddar, and onions to grits, and stir until the cheese is melted. Add the tomatoes and mix well. Pour the grits into a greased 8 by 11 by 2-inch casserole and bake for 40 minutes.
  • Sprinkle remaining 1 cup cheese over the casserole for the last 5 minutes of cooking time.
