Creamy Macaroni & Cheese - for Two or One image

I shouldn't be surprised that there are more than 600 recipes for this dish. After reading many, many of them, I have come to the conclusion that this one has it's place here at Zaar. The sauce is smooth and creamy, with little pockets of melted cheese throughout. I hope you like this as much as I do. Cooking time includes the making of the sauce and baking.

Number Of Ingredients 11

1 cup pasta, with nooks & crannies for holding the sauce
2 tablespoons butter
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup onion, chopped finely
2 tablespoons flour
1 cup milk
1 cup sharp cheddar cheese, grated
1/3 cup sharp cheddar cheese, cubed
1/2 teaspoon chives, chopped, mostly for colour
1/4 teaspoon red pepper flakes (optional)

Steps:

  • Preheat oven at 350°F.
  • Cook pasta in boiling salted water until al-dente. Drain and set aside.
  • Heat the milk in the microwave, on high for 1-1/2 minutes.
  • In a medium saucepan, melt butter. Add salt, pepper and chopped onion. Sauté on medium heat, until the onion is transparent and soft, but not brown.
  • Sprinkle the flour on top, and allow the butter to absorb some of it before stirring.
  • Add the hot milk in 3 additions, stirring constantly. The mixture will get thick very quickly.
  • After the final addition of milk, continue heating the mixture, on medium heat, stirring constantly, until thick and bubbly.
  • *Remove from heat* and stir in the grated cheese, chives and red pepper flakes.
  • Add the drained pasta and mix well.
  • Fold in the cubed cheese.
  • Pour into two greased onion soup bowls.
  • Bake for 20 - 25 minutes.
  • Allow to cool a bit before serving.

This mac and cheese recipe is great for large groups and is made doubly cheesy and creamy with both velveeta and cheddar cheese. Velveeta cheese is designed to melt more evenly than freshly grated cheeses so you'll always get a perfect cheese sauce with this recipe (and when you're cooking for 100 people, a foolproof recipe is what you need!).

8 pounds uncooked elbow macaroni
1 1/2 pound butter or margarine
3 cups all-purpose flour
8 teaspoons salt
1 teaspoon black pepper
2 gallons milk
8 pounds Velveeta cheese, cubed
24 ounces shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F. Cook the macaroni until al dente as directed on package. Drain and evenly distribute amount long, shallow pans (hotel or catering pans are usually 12x20x4 and for the 100-serving size recipe you'll need 3 pans). In a large saucepan or Dutch oven, melt the butter or margarine. Stir in the flour until smooth. Add the salt and pepper and slowly add the milk, stirring constantly, until smooth. Stir in the Velveeta cheese and continue stirring until the cheese is melted and the mixture is smooth and creamy. Pour the cheese sauce over the macaroni in the pans to evenly coat. Sprinkle the shredded cheddar over the top of the macaroni (8 ounces per pan). Bake the macaroni at 350 degrees F for one hour or until bubbly in the middle.

1/2 cup all-purpose flour
1/2 teaspoon salt

2 cups half-and-half
2 cups milk
2 (10 ounce) packages sharp cheddar cheese, shredded and divided (I use Cracker Barrel)

1 (16 ounce) package elbow macaroni, cooked

Steps:

  • In a big skillet, melt the butter over medium-high heat.
  • Whisk the flour in gradually until the mixture is smooth.
  • Cook and whisk continually for 2 minutes.
  • Add in salt, pepper, cayenne, and garlic; stir to combine.
  • Gradually whisk in half-and-half and milk.
  • Cook and whisk continually for 8-10 minutes or until mixture is thickened.
  • Add in half of the sharp cheddar cheese; stir.
  • Add in all of the extra-sharp cheddar cheese; stir until smooth.
  • Take skillet off stove burner.
  • Mix together the cooked macaroni and cheese mixture; transfer to a greased 13x9 inch casserole dish.

  • Mix cornsartch with a little of the milk till desolved.

  • Stir and cook over med heat to a boil, reduce heat and simmer 1 minute.
  • Remove from heat.
  • Stir in shredded cheddar cheese and stir until melted.
  • Stir in cooked macaroni noodles.
  • Stir in cubed monterey Jack cheese
  • Optional additions:.
  • Sprinkle individual servings with chili powder and garlic salt.

1 pound elbow, shell or other bite-size shaped pasta
2 (12 fluid ounce) cans evaporated milk
1 cup chicken broth
3 tablespoons butter
⅓ cup flour
1 ½ tablespoons Dijon mustard
½ cup grated Parmesan cheese
Freshly ground black pepper
1 pound grated extra-sharp cheddar cheese

Steps:

  • Bring 2 quarts of water to boil in large soup kettle. Add salt and pasta. Using package directions as a guide, cook until al dente. Drain. To prevent sticking, drain and immediately pour onto a large lipped baking sheet and let cool while preparing sauce.
  • Meanwhile, microwave the milk and chicken broth in a 4-cup Pyrex measuring cup or bowl until hot and steamy (not boiling). Melt butter in the empty pasta pot; whisk in flour, then hot milk mixture. Continue to whisk until thick and bubbly, 3 to 4 minutes. Whisk in mustard, Parmesan and pepper.
