3 cups unpeeled sliced baking potatoes
1 cup onion, sliced thin
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon finely minced garlic
1 1/4 cups heavy cream
3/4 cup grated parmesan cheese
1 teaspoon finely chopped parsley

Steps:

  • Lightly grease a 2 quart baking dish.
  • Arrange potatoes in bottom of baking dish, then top with onions.
  • Sprinkle salt, pepper and garlic over potatoes and continue layering, ending with potato layer.
  • Pour cream over and sprinkle with parmesan cheese.
  • Cover and bake at 350° for 45 minutes to an hour or until tender.
  • Garnish with parsley before serving.

½ cup grated Parmesan cheese
½ cup all-purpose flour
salt and pepper to taste
10 potatoes, peeled and cubed
½ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a bag combine Parmesan cheese, flour, salt and pepper; mix well. Place potatoes in bag and shake to coat.
  • Pour butter into a 9x13 inch baking dish. Stir in potatoes.
  • Bake in preheated oven for 1 1/2 hours, stirring occasionally.

¼ cup butter
6 cloves garlic, minced
2 cups 2% milk
1 cup freshly grated Parmesan cheese
¼ cup chopped fresh parsley
1 teaspoon sea salt

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 20 to 25 minutes.
  • While potatoes are cooking, melt butter over medium-low heat in a small saucepan. Add garlic and saute until soft, about 5 minutes.
  • Drain potatoes and return to the pot. Add garlic-butter mixture, milk, Parmesan cheese, parsley, sea salt, and pepper; mash until smooth.

2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 cup whipping cream (can also use half and half)
1/2 cup grated Parmesan cheese (divided)
1 cup shredded mozzarella cheese (divided)
2 pounds russet potatoes (peeled and sliced about 1/8 inch thick)
Snipped fresh chives for garnish

Steps:

  • Preheat oven to 325 degrees. Lightly spray a 2 quart casserole dish with cooking spray and set aside. In a small saucepan melt 2 Tablespoons butter over medium heat and which in the flour, salt and pepper. Add the whipping cream and stir for about 2 minutes until it starts to thicken. Add 1/4 cup parmesan cheese.
  • Arrange half of the potatoes in the prepared casserole dish overlapping each other. Spread half of the sauce on top followed by 1/2 cup mozzarella cheese. Repeat with another layer of potatoes and sauce topped with mozzarella cheese and remaining parmesan cheese.
  • Cover with foil and bake for 40 minutes. Uncover and bake for 25-30 minutes more until the potatoes are fork tender and the top is starting to brown. Sprinkle with chives before serving.

Steps:

  • Place potatoes in a large saucepan; add broth. Bring to a boil. Reduce heat; simmer, covered, until potatoes are tender, 15-20 minutes. 16 ounces cremini mushrooms ((baby Bella), cleaned gently with a damp paper towel and your preference of slice sizes)
4 tablespoons butter
1 tablespoon olive oil
3 to 4 cloves garlic, (minced)
1 teaspoon dried thyme
¼ teaspoon salt
¼ teaspoon pepper
½ cup milk
1 tablespoon cornstarch
1 cup heavy whipping cream
1 cup fresh grated parmesan cheese, (divided into ¾ cup and ¼ cup)
2 tablespoons fresh parsley, (roughly chopped)
⅛ teaspoon red pepper flakes, (optional)
fresh thyme, (several sprigs (optional))
fresh parsley chopped, (for garnish)

Steps:

  • In a large cast-iron skillet over medium heat, melt the butter and olive oil.
  • Add the sliced mushrooms and minced garlic and cook until tender and brown, about 15 minutes.
  • Sprinkle the dried thyme over the mushrooms and cook for about one minute stirring several times.
  • Season with salt and pepper.
  • Mix the cornstarch into the ½ cup of milk and pour into skillet with the mushrooms. Stir until thickened.
  • Add the heavy whipping cream, ¾ cup of grated parmesan cheese, chopped parsley, red pepper flakes and fresh sprigs of thyme.
  • Lower the heat to medium-low and stir until the cheese melts. Remove the woody sprigs of thyme.
  • Serve garnished with the extra grated cheese and parsley as garnish.
