  • Peel and cube potatoes.
  • Boil until tender.
  • Drain and mash.
  • Beat in cream cheese til smooth.
  • Stir in rest of ingredients.
  • Serve hot.

10 medium russet potatoes, peeled and halved
1/2 cup butter, cut into cubes
1 (8 ounce) package cream cheese, cut into cubes and softened
1 cup sour cream
1 (1 ounce) hidden valley dry ranch dressing mix (start with 1/2 package adding in more to taste)
milk (optional and as needed for extra creaminess, or use whipping cream) (optional)

Steps:

  • Cook the potatoes in boiling water until fork-tender; drain and place in a large bowl.
  • To hot potatoes add in cubed butter, cream cheese, sour cream and 1/2 package dry dressing mix; at low speed using an electric mixer beat until until the potatoes are semi chunky (low speed only to start as the potatoes are hot).
  • Continue beating at HIGH speed until the potatoes are smooth and very fluffy.
  • At this point do a taste-test if you desire a more stronger ranch flavor then add in more dry dressing mix until desired flavor is achieved, you may also add in milk or whipping cream for a more creamy taste (start with a small amount and add in more).
  • TO MAKE AHEAD; spread the potato mixture into a greased 13 x 9-inch pan and refrigerate up to 1 day, remove from fridge about 1 hour before baking, then set oven to 350°F and bake uncovered for 30 minutes or until hot.

1-1/2 cups shredded cheddar cheese (about 6 oz.), divided
1 cup Hellmann's® or Best Foods® Real Mayonnaise
1 cup sour cream
3 green onions, finely chopped (optional)
6 slices bacon, crisp-cooked and crumbled

Steps:

  • Preheat oven to 375 degrees. Spray 2-quart shallow baking dish with nonstick cooking spray; set aside.
  • Cover potatoes with water in 4-quart saucepot; bring to a boil over high heat. Reduce heat to low and cook 10 minutes or until potatoes are tender; drain and mash.
  • Stir in 1 cup cheese, Hellmann's® or Best Foods® Real Mayonnaise, sour cream, green onions and 4 strips crumbled bacon. Turn into prepared baking dish and bake 30 minutes or until bubbling.

4 slices bacon, cooked, crumbled
2 tablespoons thinly sliced green onions

Steps:

  • 1.) In 3-quart saucepan, heat milk, water and butter to boiling. Stir in ranch dressing mix and sour cream; beat until smooth. Stir in 3 slices of the bacon and both pouches of potatoes just until moistened; let stand 1 minute. Stir with fork until smooth.

3 pounds russet (Idaho) potatoes, scrubbed but unpeeled
1 ½ cups half and half, plus extra if necessary
Salt, to taste
6 tablespoons butter, softened

Steps:

  • Place potatoes in a large pan with water to cover. Bring to a boil. Reduce heat and simmer, covered, until tender when pierced with a thin-bladed knife, 20 to 30 minutes.
  • Heat half and half in microwave.
  • Process unpeeled potatoes through a food mill into a medium bowl. (Or, using a potholder, peel and drop them into a bowl. Puree using a potato masher or standing mixer fitted with the paddle attachment.) Stir in half and half and a sprinkling of salt (or beat, if using mixer) until smooth and fluffy. (Can be cooled and refrigerated in an airtight container up to 2 days.)
  • Thirty minutes before serving, microwave until warm. Transfer to a heatproof bowl set over a pan of simmering water. Stir in butter to melt. Cover with plastic wrap. Keep warm until serving time.
