This is very much like sour cream yet it is softer and has a little more tang. Use it to garnish anything from pies to soup. Try whipping it with a little bit of sugar for tangy whipped cream!

- Mix together buttermilk and heavy cream. Let sit at room temperature for six to eight hours.
- Cover and refrigerate for at least 24 hours before serving.

BBQ SOAKED SHRIMP WITH CREME FRAICHE DRESSING
Steps:
- Mix all ingredients in a medium bowl and season with salt and pepper, to taste;
- Preheat grill to high. Combine shrimp and bbq sauce in a large bowl, cover and refrigerate for 30 minutes. Remove shrimp from sauce, season with salt and pepper and grill for 2 to 3 minutes on each side, or until cooked through. Place shrimp on a platter and drizzle with the creme fraiche;

- Prepare creme fraiche ahead of time by combining heavy cream and sour cream. Cover with plastic wrap and let stand at room temperature for 12 to 24 hours.
- Clean, peel and devein shrimp, leaving tails on. Pat scallops dry with paper towels and season with salt and pepper.
- Melt butter in a large skillet. Add lemon juice and garlic. Place shrimp and scallops in butter and saute until scallops are opaque, 3 to 4 minutes per side. Remove to a warm platter.
- Add Cognac or wine to pan juice. Dissolve cornstarch in stock and add along with creme fraiche to pan. Simmer until thickened. Pour sauce over shellfish and garnish with basil sprigs.
