Creole Sausage And Rice Pie With Red Bean Crust Recipe

  1. vegetable oil
  2. andouille sausages
  3. onion
  4. celery
  5. garlic cloves
  6. green bell pepper
  7. cayenne
  8. salt
  9. long-grain rice
  10. chicken broth
  11. green onion
  12. olive oil
  13. red bell peppers
  14. canned red beans
  15. fresh ground black pepper
  16. bay leaf


  1. make the red bean crustheat the oil in a 4-quart saucepan
  2. add in the onion , celery , chopped pepper , and garlic
  3. stir / saute until the onion is translucent , about 4 minutes
  4. add in the beans , salt , pepper , and bay leaf , stirring to combine
  5. slowly pour in the broth , and simmer for 30 minutes
  6. preheat the oven to 375
  7. in a 12-inch saute pan , heat the oil
  8. add in the sausage
  9. stir / saute for 2 minutes
  10. add in the onion , celery , garlic , green pepper , cayenne , and salt
  11. stir / saute for 4-5 minutes until the onions begin to turn golden
  12. add in rice and stir to coat it evenly
  13. gradually add in the chicken broth , stirring up any browned bits from the bottom of the pan
  14. transfer the rice mixture to a 13 x 9 inch casserole dish or a 4-quart casserole
  15. bake for 15 minutes
  16. after 15 minutes , the rice should have absorbed most of the liquid
  17. carefully spoon the red bean crust over the top of the rice
  18. bake for another 10 minutes until the rice is tender
  19. garnish the casserole with the chopped green onion

See more Good recipe. I agree with those suggesting cut back on the water salt and pepper. Especially if you are using Andouille sausage which is pretty much the way to go. Of course you can make it with any kind of sausage you want but if you do you are no longer making Creole Red Beans and Rice.

Make sure you have a Louisiana hot sauce on the table so each one can heat it up. NOTE: There is a difference between Kidney Beans and Red Beans.
