CREOLE RED BEANS AND RICE
This is a great Creole dish, and this is a good recipe. I usually have a bowl or two when we go to Louisiana. Very filling, and pocketbook friendly. Make sure you have a Louisiana hot sauce on the table so each one can "heat" it up. NOTE: There is a difference between Kidney Beans and Red Beans. The smaller red beans are similar to black beans, in that they never get truly soft. I recommend using Kidney Beans in this recipe.

BRAZILIAN SWEET BANANA AND RICE DISH
This is a Brazilian dish that has an odd ingredient, bananas. The bananas are almost a dessert on their own but are eaten along with rice in a dish that can be varied to one's taste.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking dish.
- Combine lemon juice, sugar, butter, and rum in a saucepan. Bring to a simmer over low heat, stirring occasionally, until sugar is dissolved and sauce thickens slightly, about 10 minutes.
- Arrange bananas cut-side down in the baking dish. Pour enough sauce over bananas to cover, reserving any extra sauce for serving.
- Bake in the preheated oven until bananas are soft and sticky, about 30 minutes.
- Bring water and brown rice to a boil in another saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 45 to 50 minutes.
- Combine black beans and diced tomatoes in a skillet over low heat; heat until warmed through, about 10 minutes.
- Heat oil in a large skillet over medium heat. Add sausage links; cook, flipping often, until no longer pink in the center, about 10 minutes. Slice sausage into small pieces.
- Scoop rice into a large bowl. Pour black beans on top. Sprinkle dill and basil on top. Add sausage; mix gently to combine. Serve bananas alongside.

CREOLE BLACK BEANS AND RICE
This one of my favorite recipes. It is a crockpot recipe but I'm sure you could cook it on the stovetop also. It's pretty spicy.

CREOLE RED BEANS AND RICE FRITTERS
I recently came across a recipe similar to this in a magazine and couldn't resist changing it up to suit my taste. The panko bread crumbs give these a crispy crunch on the outside but when you take a bite...the surprise inside is creamy red beans and rice. I served them up country-style for the rice cooking contest at the 2011 Texas Rice Festival and they won a 1st place medal in the adult appetizer division! Serve with ranch dressing for dipping.

CAJUN RED BEANS AND RICE
Being so far away from home, I tend to crave recipes I am unable to get here in Holland. This being one of them! Good ole Cajun and Creole Food. After one of these cravings I decided to do some research and came up with several recipes for Red Beans and Rice. I took bits and pieces from the different recipes, subbed ingredients I was unable to find here and created this easy and tasty recipe. Whenever my husband and I crave Cajun, this fits the bill. Depending on your taste, you may want to add more Cajun spices to suite your family's spiciness of preference. I love to serve this dish alongside grilled pork chops or smoked sausage
