EMERIL LAGASSE'S CREOLE OLIVE SALAD

Emeril Lagasse's Creole Olive Salad image

An Emeril Lagasse recipe via About.com. Perfect for Mardi Gras! Don't use canned black olives-trust me it won't taste as good. To save money, I purchased only as many olives as were needed for this recipe from our local natural food store's very convenient 'olive bar'. Don't feel obligated to limit yourself to nicoise. Use a variety of imported olives (they don't have to be French either).

Provided by COOKGIRl

Categories     Fruit

Time 15m

Yield 2 1/2 cups salad

Number Of Ingredients 8

1 cup pitted brine-cured black olives, sliced (such as Nicoise)
1 cup large pimento stuffed olive, sliced
1/2 cup extra-virgin olive oil (good quality, please!)
2 tablespoons minced shallots (I tried cippolini and shallots in combination)
2 tablespoons finely chopped celery (I added 1 tablespoon of minced celery leaves, too)
2 tablespoons minced fresh flat-leaf parsley (aka Italian parsley)
2 teaspoons minced garlic (GAH-lic)
1 1/2 teaspoons fresh ground black pepper

Steps:

  • Combine black olives, pimiento-stuffed green olives, olive oil, shallots, celery, parsley, garlic, and pepper in a medium sized non-reactive mixing bowl.
  • Cover and refrigerate until ready to use. Note: I liked the taste of the salad better at room temperature.
  • Emeril says: "Olive Salad is used to dress those wonderful Italian sandwiches called muffalettas.".
  • We served the olive salad over a bed of mixed greens which included baby arugula.
  • Yield is estimated.

CREOLE MEATLOAF

Creole Meatloaf image

I don't care for Weetabix cereal as a cereal itself, but the recipe on the box I saw years ago for using the cereal in meat loaf is insanely yummy! I figured, people put corn flakes in meat loaf, so why not try this. I add green bell peppers as well as the red called for.

Provided by mysticchyna

Categories     Meat

Time 1h5m

Yield 6 serving(s)

Number Of Ingredients 9

2 lbs ground beef
1 egg
4 Weetabix (crushed)
1 cup chili sauce, divided (I use Heinz)
1/2 red bell pepper, finely chopped, divided
1/2 green bell pepper, finely chopped, divided
1 small onion, finely chopped, divided
1 teaspoon vegetable oil
1 teaspoon chopped garlic

Steps:

  • Combine the ground beef, egg, crushed Weetabix, 1/2 cup of the chili sauce, 1/4 cup each of the peppers, and 1/2 of the chopped onion in a bowl. Mix well but don't over handle.
  • Place in a large loaf pan, pat firmly.
  • Bake at 375°F, for 35 minutes.
  • Meanwhile, fry the remaining peppers, onion, and the garlic in the oil until tender. Stir in the remaining 1/2 cup chili sauce, and simmer about 5 minutes.

Yield Serves 6

Number Of Ingredients 30

2 cups of 3/4-inch cubed dried French or Italian white bread, crusts removed
1 1/2 tablespoons extra virgin olive oil
1/2 teaspoon Angel Dust Cajun Seasoning (see below)
Creole Anchovy Dressing
1 anchovy fillet
1 teaspoon minced garlic
1 large egg
2/3 cup vegetable oil
1/2 cup extra virgin olive oil
2 tablespoons Parmesan cheese
2 teaspoons Creole mustard
2 teaspoons freshly squeezed lemon juice
2 teaspoons freshly squeezed lime juice
1 teaspoon water
1/8 teaspoon Angel Dust Cajun Seasoning (see below)
1/8 teaspoon freshly ground black pepper
1/8 teaspoon salt
1 pound romaine lettuce, washed and cut into bite-sized pieces
Grated Parmesan cheese
3 tablespoons Hungarian paprika
1 1/2 tablespoons Spanish paprika
5 teaspoons salt
1 1/4 teaspoons dried thyme leaves
1 1/4 teaspoons dried oregano
1 teaspoon ground white pepper
1/2 teaspoon dried basil
1/2 teaspoon cayenne pepper
1/4 teaspoon freshly ground black pepper
1/8 teaspoon garlic powder
1/8 teaspoon onion powder

Steps:

  • To prepare croutons, heat the oil in a large nonstick saute pan over medium-high heat for 1 minute. Add the bread cubes, stirring and tossing in the pan to evenly coat the bread with the oil. Sprinkle in the Cajun seasoning while stirring continuously. Toast for 5 minutes, until golden brown. Reserve for garnishing the salad.
  • To make the dressing, place the anchovy and garlic into a food processor, cover, and pulse on and off several times. Add the egg, and, with the motor running, slowly add the vegetable and olive oils. Add the cheese, mustard, lemon and lime juices, water, Cajun seasoning, pepper, and salt; process briefly until ingredients are incorporated. Refrigerate until ready to use.
  • In a large bowl, toss romaine with the dressing, allowing approximately 3 tablespoons of the dressing per serving. Serve on chilled salad plates; top with croutons and additional Parmesan cheese. Serve immediately.
  • Combine all ingredients in a small bowl until thoroughly mixed. Store in an airtight container. The spice mix keeps its best flavor for about two months.

CREOLE MEAT LOAF

Creole Meat Loaf image

This meat loaf is not spicy, despite the name. It is a mix of ground beef and pork, with a nice creole sauce on top. It originally came from an old Southern Living cookbook, but the recipe has been changed significantly since its publication. If you would like, put the cheese of your choice on the meatloaf before adding the creole sauce. Also, feel free to substitute creole seasoning for the salt and pepper!
