BASIC CREPES
Here is a simple but delicious crepe batter which can be made in minutes. It's made from ingredients that everyone has on hand.

- In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
- Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
- Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

- Weigh the flour in a large jug or bowl. Crack in the eggs, add half the milk and a pinch of salt. Whisk to a smooth, thick batter. Add the remaining milk and whisk again. Set aside for at least 30 mins.
- Heat a large non-stick crêpe pan or frying pan. Add a drizzle of oil, then wipe out the excess with kitchen paper. When the pan is hot, add enough batter to just cover the surface, swirling it and pouring any excess back into the bowl. The pancake should be as thin as possible. When the edges are peeling away from the sides of the pan, shake it to see if the pancake easily releases and is browning on the underside. If not, cook a little longer. Flip and cook the other side for a minute or two. Serve, or keep warm in a low oven.

EASY PANCAKE MIX CREPES RECIPE

- Add pancake mix, ½ cup milk, egg, and vanilla extract to a medium-sized bowl.
- Whisk to make a smooth mixture.
- Add the remaining 1 cup milk and butter and whisk to make a smooth lump-free batter.
- Note - To check if the batter is of the right consistency, take a ladle and dip it in the crepe batter. Touch the back of the ladle with your finger. If the mark remains, it means it is of the right consistency and if the gap closes soon, it means that the batter is too runny. If it is too runny, add some more pancake mix to it and whisk well. If it is too thick, then add some milk to it.
- Cover the bowl and let the batter rest for 30 minutes to release the gluten.
- Tip - If the batter still has lumps, then pass it through a fine-mesh strainer.
- Tip - You can also add all the ingredients to a blender or a food processor and blend until smooth.
- Place a 10-inch non-stick skillet or a frying pan on the stovetop.
- Heat the pan over medium-high heat until the pan is HOT.
- Brush the pan with butter and immediately pour ¼ cup of batter into the center of the pan.
- Quickly pick the pan up and tilt and twirl it until the batter covers the bottom of the pan.
- Return the pan to the stovetop and cook until the edges start to peel away from the pan.
- When you notice that the batter is completely set and you can't see liquid anymore on the pan, it is ready to flip. It takes approximately 30-40 seconds for the crepes to cook perfectly.
- Carefully flip the crepes into half using a spatula or your fingers and then again to make a triangle.
- Remove it on the serving plate and serve it with your choice of topping.
- Repeat with the remaining batter.

- Place pancake mix, milk, eggs, vanilla, and melted butter in blender and process until smooth. If possible, let mixture rest for at least 30 minutes. Alternatively, you can make the batter the day before and keep it in fridge overnight.
- Place a 7- or 8-inch nonstick skillet (or crepe pan) over medium heat. Coat with a little bit of butter. Pour about ¼ cup batter in pan and gently tilt and swirl pan until batter evenly coats the bottom. If you're using a 7-inch pan, you may want to use slightly less than 1/4 cup batter.
- Let cook for about 1-1 ½ minutes until crepe is turning golden on bottom and edges are pulling away from pan. You can either use your fingers or a spatula to pull edges up and when ready, flip. Cook for another minute before removing crepe from pan to a plate.

- In a liquid measuring cup {or small bowl} combine the milk, egg, vanilla extract and oil. Whisk to combine the ingredients. Add wet ingredients to the pancake mix and whisk to combine. The batter will be thin.
- Heat a medium nonstick skillet over medium high heat. Once the pan is warm, spray it with nonstick cooking spray. Then scoop between 2 & 3 tablespoons of batter into the hot pan and swirl it around in a circular motion so that it covers the bottom of the pan.
- Cook until the batter starts to peel from the sides of the pan, the bubbles have popped and the top starts to look dry. Turn over and continue to cook for about 20 seconds. Carefully remove the crepe and repeat with the remaining batter.

- Melt 3 Tablespoons of butter in the microwave or on the stove. Cool for about 5 minutes before using in the next step. The remaining butter is for the skillet.
- Combine the cooled melted butter, flour, sugar, salt, milk, water, eggs, and vanilla to a blender or large food processor. If you don’t have a blender or food processor, use a large mixing bowl and whisk by hand. Blend on medium-high speed for 20-30 seconds until everything is combined. The mixture will be silky smooth and the consistency of cream. Cover the blender tightly or pour into a medium bowl, cover tightly, and chill in the refrigerator for 30-60 minutes and up to 1 day. (After refrigerating, if the batter looks separated, give it a quick stir before cooking in the next step.)
- Use the remaining butter for greasing the pan between each crepe. Place an 8-inch skillet over medium heat and generously grease it with some of the reserved butter. If you don’t have a skillet this size, use a larger one but make sure you keep the crepes thin. Once the skillet is hot, pour 3-4 Tablespoons (closer to 3 is best) of batter into the center of the pan. Tilt/twirl the pan so the batter stretches as far as it will go. The thinner the crepe, the better the texture. Cook for 1-2 minutes, then flip as soon as the bottom is set. Don’t wait too long to flip crepes or else they will taste rubbery. Cook the other side for 30 seconds until set. Transfer the cooked crepe to a large plate and repeat with the remaining batter, making sure to butter the pan between each crepe. If desired, separate each crepe with parchment paper so they do not stick together. Though, if using enough butter in your pan, the crepes won’t stick.
