MY MOM'S BEST MEAT LOAF



My Mom's Best Meat Loaf image

The Rice Krispies used in this recipe are my mom's secret ingredient. While they may seem odd or out of place, they help hold the meat loaf together. And once they are cooked, no one realizes they're even there. -Kelly Simmons, Hopkinsville, Kentucky

1/2 cup chili sauce
1/4 cup ketchup
2 cups Rice Krispies
1 medium onion, finely chopped
1 small green or sweet red pepper, finely chopped
3/4 cup shredded part-skim mozzarella cheese
1 large egg, lightly beaten
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds ground beef

Steps:

  • Preheat oven to 350°. In a small bowl, mix chili sauce and ketchup. In a large bowl, combine Rice Krispies, onion, green pepper, cheese, egg, salt and pepper; stir in half of the chili sauce mixture. Add beef; mix lightly but thoroughly., Transfer beef mixture to an ungreased 9x5-in. loaf pan. Make a shallow indentation down center of loaf. Spread remaining chili sauce mixture over loaf, being sure to fill indentation., Bake 60-70 minutes or until a thermometer reads 160°; use a turkey baster to remove drippings every 20 minutes. Let stand 10 minutes before slicing.

This meatloaf was a favorite lunch special in many of the restaurants and hotels I have worked at through the years. It is also a favorite 'employee meal'. Serving Ideas: Serve with a Peppercorn brown sauce. Posters comments: I cut the recipe in half & cook for 1hr. Leftovers are used for a second dinner or meatloaf sandwiches.

2 1/2 lbs ground beef
1/4 lb Italian sausage
3/4 cup tomatoes (chopped fine)
1/2 cup yellow onion (chopped fine)
1/2 cup green bell pepper (chopped fine)
1 tablespoon garlic clove (minced)
1 1/2 tablespoons Worcestershire sauce
2 tablespoons Pickapeppa Sauce
2 whole eggs
1 1/4 cups dry breadcrumbs
1 1/2 teaspoons black pepper
2 teaspoons oregano
1 tablespoon salt
1/2 cup ketchup
2 tablespoons honey
3 tablespoons Pickapeppa Sauce

Steps:

  • Mix all ingredients gently, but well and form into a loaf in a baking pan.
  • Do not overmix, as this tends to make for a tough (too firm) meatloaf.
  • Mix topping ingredients together and coat top of meatloaf.
  • Bake for 1 ½ hours at 350°F
  • Cover for first 45 minutes.

10 slices cooked bacon, crumbled
1 onion, chopped
1 green bell pepper, chopped
1 cup quick-cooking oats
1 (8 ounce) package shredded Cheddar cheese
½ cup sour cream
2 tablespoons Worcestershire sauce
1 teaspoon Cajun seasoning salt
2 slices oat-nut bread
1 (10.75 ounce) can seasoned tomato sauce
1 tablespoon brown sugar
1 ½ cups shredded Cheddar cheese
¼ cup chopped onion, or to taste
1 bunch parsley, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix ground sirloin, bacon, onion, bell pepper, oats, Cheddar cheese, sour cream, Worcestershire sauce, and Cajun seasoning salt in a large bowl; shape into a loaf.
  • Line 1 1/2-quart loaf pan with bread slices. Put loaf atop the bread.
  • Bake in the preheated oven until no longer pink in the center, about 15 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Stir tomato sauce and brown sugar together in a saucepan over medium heat; simmer until the sugar dissolves. Add Cheddar cheese in small batches, stirring to melt each batch before adding the next. Stir onion and parsley into the sauce and continue cooking until hot, about 5 minutes. Pour sauce over the meatloaf.

20 saltine crackers, crumbled
1 large egg, lightly beaten
1/2 cup ketchup
1 tablespoon yellow mustard
1 teaspoon salt
1/2 teaspoon pepper
1/2 yellow onion, finely chopped
Slices of white bread, lettuce and tomato, for making sandwiches, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • In a stand mixer, mix the beef, cracker crumbs, egg, ketchup, mustard, salt, pepper, and onion until just blended. Shape the mixture into two loaves and place side by side crosswise in a 9-by-13-by-2-inch pan. Bake the loaves for 1 hour, or until they are browned. Transfer to a platter immediately and allow the loaves to cool slightly and firm up before slicing.
  • For sandwich: cut 2 thick slices of cooled meatloaf and place on white bread with lettuce and tomato. If you've never had a cold meatloaf sandwich the next day, you don't know what you're missing

Steps:

1 tablespoon olive oil, plus more for greasing
1 large yellow onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
1 cup panko breadcrumbs
1 cup whole milk
2 lb ground beef
2 large eggs, beaten
½ cup fresh parsley, roughly chopped
1 tablespoon worcestershire sauce
½ teaspoon dried thyme
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
½ cup ketchup

Steps:

  • Preheat the oven to 350°F (180°C). Line a rimmed baking sheet with foil.
  • Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Add the tomato paste and cook, stirring often, until the tomato paste turns deep red in color, about 2 minutes. Remove the pan from the heat and let the onion mixture cool to room temperature.
  • In a large bowl, stir together the panko and milk. Add the ground beef, eggs, parsley, Worcestershire sauce, thyme, salt, pepper, and the onion mixture and use your hands to combine. Do not overmix!
  • Shape the beef mixture into a 10 x 5-inch loaf on the prepared baking sheet. Brush the top and sides with ketchup.
  • Bake the meatloaf until the top is browned and the internal temperature reaches 160°F (70°C), about 50 minutes.
  • Slice and serve.
