4 Parsnips. Try and choose ones where the end is fat as well as the top.
2 Tablespoons Vegetable Oil
Salt and Pepper for seasoning

Steps:

  • Preheat oven to 220C or 425F.
  • Peel the parsnips and cut the ends off. Then cut lengthways down the middle, and again down the middle. This leaves you with 4 long pieces. Then cut the parsnips in half so you have 8 pieces per parsnip. They should look a bit like a finger of a fat chip/fry!
  • Place in a saucepan with cold water and a pinch of salt, and bring to the boil.
  • Keep an eye on the parsnips once the water starts to boil. After approximately 7 - 10 minutes drain the parsnips and set aside. (7 -10 minutes is from when the water starts to boil)
  • Whilst the parsnips are in the saucepan cooking, place a baking pan with the oil in and leave until hot and sizzling.
  • Then place the parsnips in the hot oil and spoon some of the oil over them. Cook for about 15 minutes, turning them over halfway through. If they are not golden and crispy like in the photo, leave them in for a little longer.
  • When done, place on some kitchen paper then serve with your dinner. You may wish to sprinkle some salt and pepper

1-1/2 lb. parsnips, peeled
3 Tbs. olive oil
2 generous pinches cayenne
1/4 tsp. salt; more to taste
2 large cloves garlic, minced

Steps:

  • Position an oven rack on a lower-middle rung; heat the oven to 450°F. Cut the parsnips into matchsticks 2 inches long and a scant 1/2 inch thick, discarding any woody core. Dump the matchsticks onto a rimmed baking sheet large enough to fit them in a single layer. Sprinkle the olive oil, cayenne, and salt over all; toss to mix and coat well. Roast for 15 min., stirring once or twice. Sprinkle with the garlic, stir well, and continue roasting until the parsnips are well browned, about another 15 min. Let cool slightly, taste for salt, and serve.

1 pound parsnips
6 tablespoons butter
Salt to taste
Freshly ground black pepper to taste

Steps:

  • Scrape the parsnips, and cut into thin sticks about a quarter of an inch thick and three inches long. Discard the woody core of each parsnip.
  • Drop the parsnips into a saucepan of boiling salted water, and cook until they are almost tender (about 3 minutes). Remove and pat dry with paper towels.
  • Melt butter in a large frying pan. Sprinkle parsnips with salt and pepper, and add to the butter. Fry over medium heat until the parsnips are crisp and golden. If necessary, add more salt. Serve immediately.

2 quarts pure peanut oil
1 pound parsnips
Kosher salt
Freshly ground black pepper

Steps:

  • Heat peanut oil in a 5-quart Dutch oven over high heat to 370 to 375 degrees F.
  • Meanwhile, scrub the parsnips to remove any excess dirt. Lay the parsnip flat on a cutting board, and using a vegetable peeler, peel off 4 to 5 flat, wide noodle-shaped strips. Rotate the parsnip 90 degrees and repeat. Continue to rotate until you can no longer peel strips. Repeat with the remaining parsnips.
  • Gently add a small handful of parsnips to the oil, stirring gently, until lightly browned and crisp, approximately 1 to 1 1/2 minutes. Remove the crisps from the oil using a spider or slotted spoon; hold over the pot and allow to drain for 30 seconds. Transfer to a cooling rack set over a half sheet pan and sprinkle with salt and pepper, if desired. After the first batch, the oil temperature may drop. Adjust the heat in order to maintain a minimum temperature of 325 to 350 degrees F. Repeat until all parsnips are cooked. Serve warm or at room temperature. Once completely cooled, store in an airtight container for up to 3 days.

  • In a large saucepan cover parsnips with water, cover and boil over medium-high heat until tender, about 10 minutes. Drain.
  • In a plastic bag combine flour and seasoning salt. Dip parsnips in butter and place them in the bag. Shake bag to coat parsnips with the seasoned flour.

Although it takes about an hour to prepare and fry enough chips for eight, it's worth the effort: They are absolutely irresistible. If kept in resealable plastic bags, they'll stay crisp for up to five days.

4 pounds parsnips, peeled
Vegetable oil, for deep-frying (about 8 cups)
Coarse salt, for sprinkling
Mild smoked paprika (also called pimenton), for sprinkling

Steps:

  • Shave long, thin strips from parsnips with a peeler (preferably swivel), turning to use all sides. (Reserve ends and cores for another use, such as stock or soup.) Toss parsnip strips by hand to separate.
  • Heat 3 inches oil in a heavy medium-size pot until it registers 365 degrees on a deep-fry thermometer. Add parsnip strips to the oil in small handfuls (do not crowd), turning gently with a wire skimmer, until pale gold and crisp, about 45 seconds. Transfer chips to paper towels to drain, and sprinkle with salt. (Return oil to 365 degrees between batches.) Before serving, sprinkle with smoked paprika.

1kg parsnip, peeled and cut into thumb-width batons
2 tsp English mustard powder
2 tbsp plain flour
4 tbsp rapeseed oil
about 3 tsp clear honey

Steps:

  • Boil the parsnips for 5 mins, then drain well and let them steam-dry for a few mins. Mix the mustard powder with the flour and plenty of seasoning. Toss the parsnips in the mix, then shake off any excess.
  • Heat oven to 220C/200C fan/gas 7 - you can do this while the turkey is resting. Put the oil into one large, or even better 2, non-stick baking trays (the parsnips mustn't be crowded if they're to become really crisp), then heat in the oven for 5 mins. Carefully scoop the parsnips into the fat, turn them a few times, then roast for 30 mins or until golden and crisp. Drizzle the honey over the hot parsnips, give them a little shake, then scatter with flaky sea salt and tip into a serving dish.

1 medium or large parsnip
Special equipment: a deep-fat thermometer; a Y-shaped vegetable peeler

Steps:

  • Heat 1 inch oil in a 2 1/2- to 3-quart heavy saucepan over moderate heat until thermometer registers 360°F.
  • While oil heats, peel parsnip, then shave as many ribbons as possible from parsnip with vegetable peeler.
  • Fry ribbons in 3 batches, stirring frequently, until edges are golden but middles are still pale, about 40 seconds to 1 minute per batch. Transfer parsnips as fried with a slotted spoon to paper towels to drain, then season lightly with salt. (Return oil to 360°F between batches.) Parsnips will crisp as they cool.

100ml rapeseed or sunflower oil
5 tbsp polenta
2 tsp paprika

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Blanch the parsnips in boiling water for 4-5 mins until slightly soft. Drain, leave to steam-dry, then tip into a large bowl. Drizzle over the oil and toss to coat all the parsnips.
  • Mix the polenta, 2 tsp sea salt, 1 tsp ground black pepper and the paprika, and sprinkle over the parsnips. Toss well, then lay the parsnips out on one large baking tray (or two small ones), with lots of space between them. Roast for 15 mins, turn them over, then roast for another 20-25 mins until golden and crunchy.

Gently add a small handful of parsnips to the oil, stirring gently, until lightly browned and crisp, 1 to 1 1/2 minutes. Remove the crisps from the oil using a spider or slotted spoon; hold over the pot and allow to drain for 30 seconds. Transfer to a wire rack set in a half-sheet pan and sprinkle with salt and pepper, if desired.

Using a swivel blade peeler, peel long strips from the parsnips (discarding the peel) and place in a large bowl with the sunflower oil. Season with pepper and toss well. Arrange the parsnip strips in single layers on 3 baking trays. Roast in the oven for 25-30 minutes, turning halfway, until golden and crisp.
