EASY CABBAGE CASSEROLE
This is a quick and easy recipe and is so delicious! This cabbage casserole is a favorite at family reunions and church suppers. Even the kids love it!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Mix cabbage, Cheddar cheese, onion, cream of celery soup, and butter in a large bowl. Mixture will be dry. Transfer to a large baking dish, spreading vegetables evenly; sprinkle with breadcrumbs. Cover baking dish with aluminum foil.
- Baked in preheated oven for 45 minutes and remove foil. Continue baking until bubbly and lightly browned, about 15 minutes more.

CRISP ROASTED CABBAGE

Steps:
- Cut the duck skin and fat into small pieces and put in a saucepan with 1 cup water. Bring to a simmer and cook until the fat is melted and the skin is brown and crisp, 45 minutes to 1 hour. Scoop out the duck-skin cracklings, drain on paper towels and season with salt. Reserve the duck fat.
- Preheat the oven to 425 degrees F. Heat 3 tablespoons duck fat (or olive oil) in a large skillet over medium-high heat. Brown the cabbage in batches, about 1 minute per side; transfer to a baking dish. Drizzle with 1 to 2 tablespoons duck fat (or olive oil), season with salt and toss. Roast until crisp on top, about 15 minutes, then turn the wedges and roast until the other side is crisp, about 8 more minutes. Sprinkle with the duck-skin cracklings and roast 2 more minutes. Drizzle with the vinegar.

I always read the food section in newspapers and magazines. If I find a recipe that I think my family will like, I test it out. I found this one while traveling some years ago. My family like it and it has become one of our favorites.

- In a large saucepan, cook cabbage in boiling salted water for 4-5 minutes or until almost tender; drain. In a smaller saucepan, saute onions and green pepper in butter until tender. Combine cabbage, onion-pepper mixture, cheese and 1-1/2 cups of croutons. , Spoon into a 13x9-in. baking dish. Pour milk or cream overall; do not stir. Sprinkle with remaining croutons. Bake, uncovered, at 350° for 20-25 minutes or until bubbly.

Steps:
- Cut up the cabbage and drop into boiling water; boil for about 5 minutes, turn off heat but leave in pot, covered.
- Saute the onion in the 2 Tablespoons butter.
- Drain cabbage and add soup and Velveeta.
- Add sauted onion with the salt and pepper to taste.
- Mix well and pour into a 10x13" casserole dish.
- Sprinkle with crushed crackers and drizzle with the melted butter.
- Bake at 350 degrees for about 30 minutes.

- Grease an ovenproof dish or casserole. Trim the outer leaves and stalk from the cabbage. Shred it, not too finely, wash it well, and drain. Peel and chop the onion. Scrape and wash the celery and cut into 1 in (2.5cm) lengths. Heat the oil and butter in a frying pan, and fry the onion gently for 2-3 minutes until soft. Add the celery and drained cabbage, fry gently for a further 5 minutes, stirring occasionally.
- Heat the oven at 400F/200C/Gas Mark 6-7. Make a white sauce with the remaining ingredients. Put the vegetable mixture into the greased dish. Pour the white sauce over the top. Crumble or grate the bread into crumbs, and sprinkle these on top of the sauce. Dot with a knob of butter. Bake for 15 minutes in the hot oven until the top is crunchy and golden brown.
