2 cups oats (regular or quick cooking)
2/3 cup reduced fat peanut butter (or regular)
1/4 cup honey
1/2 cup crushed pretzels
1/4 cup chocolate chips (mini chips work best)
2 tsp water (only if needed)

Steps:

  • Stir together the oats, peanut butter, and honey.
  • Crush the pretzels in a ziploc bag until they are in small pieces.
  • Add the crushed pretzels and chocolate chips to the mixture.
  • Form into balls. If the mixture is not sticking together for you, add water, 1 tsp at a time, until it does.
  • Place in the refrigerator for about 30 minutes. Store in an airtight container.

4 ounces cream cheese (softened)
1 cup creamy peanut butter
1 tsp vanilla extract
1 cup powdered sugar
1 cup crushed pretzels
½ cup mini chocolate chips
1 cup semi-sweet chocolate chips
16 oz chocolate candy coating (CandiQuik, Ghirardelli melting wafers, etc.)
chocolate sprinkles (crushed peanuts, crushed pretzels (optional))

Steps:

  • Line a large baking sheet with parchment paper and set aside.
  • In a large bowl, beat cream cheese until nice and fluffy.
  • Add peanut butter and beat until combined.
  • Add vanilla extract and continue beating just until incorporated.
  • Stir in powdered sugar, crushed pretzels and mini chocolate chips. (You can use your hands here to really work it all together. It's actually much faster. Likewise, you could put it all in stand mixer and mix it that way as well.)
  • Shape into 1-inch balls and place on prepared baking sheet. (You will need to give them a good squeeze in your hand before rolling into balls.)
  • Refrigerate for one hour or freeze for 15 minutes.
  • Combine chocolate chips with candy coating and melt according to package directions. (30 second intervals on high, stirring in between, usually does the trick.)
  • Dip balls into melted chocolate, and place back on parchment-lined baking sheet.
  • Sprinkle with chocolate sprinkles, crushed peanuts, or crushed pretzels if desired.

1 cup pitted dates (medjool ideal but any date works)*
1/2 cup unsweetened natural peanut butter
2 1/2 tbsp unsweetened cocoa powder
1/3 cup pretzels (gluten-free if necessary)
optional: pinch of salt

Steps:

  • Add dates to food processor (high speed blender will work here too) until broken up into small bits.
  • Add in the peanut butter and cocoa powder and process to combine. Mixture will come together into a sticky ball.
  • Break apart ball and add the pretzels. Pulse several times to break up pretzel bits.
  • Roll into balls and store in freezer for 20 minutes to firm up.
  • Keep in fridge for up to 2 weeks.

2 cups pretzel rods, crushed into crumbs
1 1/2 cups confectioners' sugar
1 cup plus 1/4 cup smooth peanut butter
1 1/2 cups milk chocolate chips

Steps:

  • In a medium bowl, add the melted butter, pretzel crumbs, confectioners' sugar and 1 cup of the peanut butter and stir together until well combined. Press the mixture evenly into the bottom of an ungreased 9-by-13-by-2-inch baking dish. Combine the chocolate chips and the remaining 1/4 cup peanut butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until the chocolate and peanut butter are melted and smooth; two intervals should be enough. 1 cup peanut butter (smooth or crunchy)
2 cups milk chocolate chips
1 cup pretzel (crushed into little pieces)
3 cups crispy rice cereal (rice crispies)

Steps:

  • In a double boiler or microwave (on 50 % power, in a large bowl) melt the chocolate and peanut butter. If microwaving, start with a minute and then add additional time (30 secs at a time, mixing in between) until melted. Be careful not to burn the chocolate.
  • Mix in the pretzels and rice cereal until everything is coated and well incorporated.
  • Drop by the teaspoonful onto a lined cookie sheet and place in the fridge. Once hardened, you can transfer to a bag or container. These are best stored in the fridge.

1 cup confectioners' sugar
1 teaspoon vanilla extract
1 cup plus 1 tablespoon creamy peanut butter

About 1 1/2 cups pretzel sticks

Steps:

  • Line an 8- or 9- inch square baking pan with foil.
  • Melt 8 tablespoons of the butter and add to a large bowl. Add the graham cracker crumbs, sugar, vanilla and 1 cup of peanut butter and stir until well combined. Transfer the peanut butter mixture to the prepared baking pan and smooth with an offset spatula to create an even layer.
  • Combine the chocolate chips, the remaining 4 tablespoons butter and the remaining tablespoon peanut butter in a medium microwave-safe bowl and microwave in 30-second intervals, stirring after each, until melted. Alternatively, this can be done over a double boiler. Pour the chocolate mixture over the peanut butter and smooth with an offset spatula.   • Line a baking sheet with waxed paper.

3 3/4 cups powdered sugar
1/2 cup butter or 1/2 cup margarine
2 cups crunchy peanut butter
2 cups Rice Krispies
6 ounces German sweet chocolate
6 ounces semi-sweet chocolate chips
2 ounces paraffin wax

Steps:

  • Combine first 4 ingredients in large bowl and mix well.
  • Roll dough into 1-inch balls and chill, covered.
  • For chocolate coating, melt German and semisweet chocolates, and paraffin wax in top of double boiler over boiling water, stirring constantly until smooth.
  • Use a toothpick to insert in each ball, dipping balls into chocolate mixture, one at a time.
  • Set balls on wax paper to harden.
  • Store in airtight container in refrigerator.

3 cups powdered sugar
3 cups crispy rice cereal, more for garnish
2 cups chocolate chunk, preferably dark, for coating

Steps:

  • In a large microwave-safe bowl, add the butter and peanut butter. Microwave for 1 minute.
  • Using a fork, stir together the melted butter and peanut butter until smooth. Microwave additional 20 seconds, as needed.
  • Add the powdered sugar and rice cereal to the bowl. Gently mix together until fully incorporated.
  • Using your hands, roll the mixture into approximately 30-40 1-inch balls (2 ½ cm). Place them on a wax paper-lined baking sheet and freeze for 15 minutes.
  • In a small microwave-safe bowl, add the chocolate chunks. Microwave for 60-75 seconds, stopping to check and stir every 30 seconds.
  • Drop the frozen balls in the melted chocolate one at a time, use a fork to roll around to ensure an even coating. Place back on a wax paper-lined baking sheet.
  • Garnish with additional rice cereal while the chocolate is still warm. Chill until the chocolate has set.
