  1. cod
  2. kosher salt
  3. all-purpose flour
  4. yellow cornmeal
  5. seasoning salt
  6. hot smoked paprika
  7. baking powder
  8. baking soda
  9. lager beer
  10. club soda
  11. cider vinegar
  12. vegetable oil
  13. salsa
  14. hot sauce
  15. vegetables
  16. corn tortilla

Steps:

  1. special equipment: a deep-fry thermometer
  2. lightly season cod with salt and black pepper
  3. transfer to a wire rack set inside a rimmed baking sheet
  4. chill , uncovered , at least 1 hour or up to overnight
  5. whisk flour , cornmeal , seasoned salt , paprika , baking powder , baking soda , in a medium bowl
  6. add beer , club soda and vinegar and whisk just until combined and no lumps remain
  7. fit a large heavy pot with thermometer
  8. pour in oil to a depth of 3"
  9. heat over medium-high until thermometer registers 375
  10. working in batches , dip fish into batter , allowing excess batter to drip back into bowl
  11. lower carefully into oil and fry until light golden brown and just cooked through , 34 minutes
  12. transfer to paper towels to drain
  13. serve fried fish with tortillas , pico de gallo , hot sauce , pickled vegetables , limes , avocado , cilantro , and cabbage
