  1. boneless skinless chicken breast halves
  2. dijon mustard
  3. fat-free evaporated milk
  4. dry breadcrumbs
  5. parmesan cheese


  1. preheat oven to 475
  2. spray a 13" x 9" baking dish with nonstick cooking spray
  3. in a small bowl , combine mustard and evaporated milk
  4. combine breadcrumbs and cheese in a seperate small bowl
  5. dip chicken into mustard / milk mixture , coating on both sides , then into breadcrumb / cheese mixture , coating both sides
  6. place in prepared dish
  7. bake at 475 for 15-20 minutes or until chicken center reaches 170 degrees f
