Ingredients:

  1. fish fillets
  2. plain flour
  3. cornflour
  4. egg white
  5. water
  6. oil
  7. green ginger
  8. garlic cloves
  9. tomato sauce
  10. chili sauce
  11. sugar
  12. soy sauce
  13. dry sherry

Steps:

  1. the strength of the chili sauce will effect how hot this dish is', "i recommend a sweet chili sauce for those who don't like it too hot", 'place oil , ginger , garlic , tomato sauce and chili sauce in a pan on medium heat for 5 minutes
  2. add remaining ingredients and let it simmer on low for a few more minutes
  3. leave the sauce to sit while you prepare the fish
  4. chop the fish into approximately bite-size pieces
  5. sift the flour and cornflour into a bowl
  6. make a well in the flour and add the egg white and water
  7. mix to a smooth batter
  8. coat the pieces of fish with the batter
  9. heat oil in large pan and dip the fish into the oil
  10. cook the pieces for a few minutes each
  11. heat the sauce back up
  12. once the fish is all cooked add the sauce to the fish in a large frying pan
  13. serve when hot
  14. enjoy
