1 cup grated Parmesan cheese
2 teaspoons dried oregano
1 ½ teaspoons dried basil
1 ½ teaspoons minced garlic
½ cup grated Parmesan cheese
2 tablespoons vegetable oil
4 skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bread into a food processor and blend until crumbled. Transfer bread crumbs to a shallow bowl. Add 1 cup Parmesan cheese, oregano, basil, and garlic; stir to combine.
  • Press chicken breast halves into bread crumb mixture until coated; arrange on a large baking dish. Drizzle chicken with vegetable oil and sprinkle with remaining 1/2 cup Parmesan cheese.
  • Bake in the preheated oven until chicken breasts are no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1 pinch garlic powder, or to taste
6 skinless, boneless chicken breast halves
½ cup margarine, melted

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a baking dish.
  • Mix cracker crumbs, seasoned salt, and garlic powder in a shallow bowl. Dip chicken breasts into melted margarine and press into cracker mixture until coated. Arrange chicken in prepared baking dish.

I've made it with just the mayonnaise on top and it really locks the moisture into the chicken. The bread crumbs and cheese are a must for me; they complement each other very well.

A recipe that my mom used to make when we were little and picky about what we ate. Now I feed it to my family and friends and everybody loves it! Good for a day when you don't want to stand at a stove forever but still want a really nice meal. For more flavor, you can add already mixed Italian dressing to the mayo and dry Italian blend.

1 (.7 ounce) package dry Italian-style salad dressing mix

Steps:

  • Set slow cooker to High and melt butter in the bottom of the crock. Mix mayonnaise with Italian salad dressing mix in a bowl and stir chicken pieces into the mixture to coat. Pour the chicken mixture into the slow cooker over the butter. Cover and cook until chicken is tender, 4 to 5 hours, stirring occasionally.

This is one of my favorite dishes. The sake and mayo marinade makes chicken tender and juicy. It is great with steamed white rice and some simple salt and pepper sautéed asparagus with garlic. I sometimes use chicken tender strips to save time. You can also use shrimp instead of chicken. I understand that many of you don't have sake, but if you use white wine instead, the chicken will not the taste the same.

½ pound skinless, boneless chicken breast, cut into 1-inch cubes
⅛ teaspoon salt
⅛ teaspoon ground black pepper
2 tablespoons sake (Japanese rice wine)
5 tablespoons mayonnaise, divided
1 tablespoon ketchup
1 ½ teaspoons honey
¾ teaspoon soy sauce
½ teaspoon lemon juice
2 tablespoons cornstarch
2 tablespoons all-purpose flour
1 egg
1 cup vegetable oil, or as needed

Steps:

  • Put chicken pieces in a bowl; season with salt and pepper.
  • Stir sake and 2 tablespoons mayonnaise together in a separate bowl until smooth; add chicken and mix to coat. Cover bowl with plastic wrap and refrigerate at least 15 minutes.
  • Whisk remaining 3 tablespoons mayonnaise, ketchup, honey, soy sauce, and lemon juice together in a bowl. Stir cornstarch and flour together in a separate shallow bowl. Beat egg in a third bowl.
  • Pour enough oil into a large skillet to be about 1/4 inch deep; heat over medium-high heat.
  • Remove chicken from the marinade and shake off excess. Discard remaining marinade.
  • Coat chicken in the cornstarch mixture; dip chicken pieces into the beaten egg and gently drop into the hot oil.
  • Fry chicken, turning regularly, until golden brown and no longer pink in the center, 7 to 10 minutes; transfer to a large bowl.
  • Drizzle mayonnaise sauce over fried chicken and quickly mix to coat.
