- 1. Preheat oven to 425°F.
- 2. Unroll the pizza dough as directed on the package onto a parchment-lined cookie sheet. Sprinkle half of the herbs on the dough and fold the dough in half lengthwise.
- 3. Brush the top with olive oil and evenly distribute the remaining herbs, onion, and cheese.
- 4. Salt and pepper to taste.
- 5. Bake for 15 minutes until the foccacia is golden brown and crispy.
- 6. Drizzle with extra-virgin olive oil and serve sliced.

- You can use a pizza stone or pizza pan if you have one. Make sure the pan is heated in the oven thirty minutes before you put the dough on it.
DELICIOUSLY EASY GARLIC HERB FOCACCIA
Make focaccia in an hour. Or a little longer if your bread machine doesn't have a pizza cycle. Also great as a pizza dough! I personally use 2 cups unbleached bread flour and 1 cup whole wheat flour. As with most recipes I have created - they are a base on which to build.

- Place 1 cup plus 3 tablespoons water, 1 tablespoon olive oil, bread flour, white sugar, 1 teaspoon salt, and active dry yeast, respectively, in the pan of a bread machine. Select pizza cycle; press Start.
- Combine crushed garlic and 1/3 cup olive oil in a small bowl. Set aside to let it steep, about 30 minutes.
- Combine Parmesan cheese, parsley, onion powder, and herbes de Provence in another small bowl.
- Preheat oven to 425 degrees F (220 degrees C). Grease a large rimmed baking sheet with olive oil.
- Deflate dough and turn out into the baking sheet. Stretch dough gently out to 1/2-inch thickness, using your fingers to make dimples that will hold the toppings.
- Pour garlic and oil mixture onto dough and spread it evenly over the dough and edges with your hands. Sprinkle Parmesan cheese mixture evenly on top. Sprinkle dough with salt and freshly ground black pepper.
- Bake in the preheated oven until golden brown, 20 to 25 minutes. Remove from the oven and transfer from the baking sheet to a rack. Let cool, 5 minutes. Cut into squares with a pizza cutter.

- In a small bowl, combine oil and garlic powder; brush over bread. Sprinkle with the remaining ingredients. Place on a baking sheet. Bake at 425° for 7-9 minutes or until lightly browned. Cut each half into five slices.

Steps:
- Stir the yeast into a large mixing bowl with the water & let proof for 10 minutes.
- Stir in the olive oil, rosemary, sage, olives & garlic. Using a wooden spoon, mix in the flours & salt & stir until the dough is thick & smooth.
- Knead by hand for 8 to 10 minutes until the dough is firm & elastic. Set the dough in a lightly oiled container, cover with plastic wrap & let rise until doubled.
- Turn the dough onto an oiled 10 1/2" X 15 1/2" baking pan & stretch it to fit. If it won't fit, let it rest for 10 minutes & try again.
- Cover with a towel & leave until it has half risen, about 30 minutes.
- 30 minutes before baking, preheat oven to 400F.
- Just before baking, dimple the top of the dough with your fingerti ps & sprinkle with some extra salt & 2 tsp of oil.
- Bake for 25 to 30 minutes until golden.
- Slide off baking sheet onto a rack & let cool for a few minutes before eating warm or at room temperature.
- VARIATION: Focaccia Dolce. Substitute 2 oz raisins & 1 oz pine nuts for the olives, herbs & garlic. Soak the raisins in warm water for 30 minutes before using & toast the pine nuts.

- In the bowl of a stand mixer, add warm water, yeast and honey and mix to combine. Cover with a clean kitchen towel and let sit for 10 minutes until foamy.
- Add in flour, olive oil and salt, and slowly start to mix with a dough hook attachment. As the flour begins to incorporate, increase the speed to medium. Once the dough is completely combined, continue to beat in your mixer if it can handle it to knead it, otherwise turn it out onto a lightly floured surface and knead by hand for about 2 minutes or until smooth.
- Lightly grease the bowl of the mixer with olive oil and add the ball of dough back into the bowl, turning to ensure the dough is completely covered with the oil. Cover with plastic wrap or a damp, clean kitchen towel and set aside in a warm place to rise for about an hour or until doubled in size.
- Once the dough has risen, punch it down to release the air and turn it out onto a lightly floured surface and continue to knead for about a minute.
