THAI BANANA SALSA WITH KING PRAWNS
Extremely refreshing. I make extra salsa to keep in the fridge for a pick-me-up after a long day at uni. You can serve it on a banana leaf with lime wedges.

Steps:
- In a large bowl, mix bananas, cucumbers, mint, cilantro, ginger, and red chile pepper to make salsa.
- In a small bowl, blend lime juice, fish sauce, and brown sugar until sugar has dissolved. Thoroughly mix into the salsa.
- Bring a large saucepan of lightly salted water to a boil. Place prawns in the water, and cook 3 minutes, or until flesh is opaque. Serve with the banana salsa.

This is such an addictive appetizer, they will disappear in a flash, and are so impressive looking. Can also be served for lunch or side dish. Simple to make and so tasty, hope you enjoy!

Steps:
- Heat oil to 350°F.
- Place 2 spring roll wrappers together with corners not matching.
- Lower wrappers into hot oil then immediately push soup ladle into center to form a cup.
- Cook until golden, lift and drain on absorbent paper.
- Allow to cool.
- Combine filling ingredients except gherkin. Spoon into crisp basket.
- Garnish with gherkin and serve.

BANANA CRISP
A diffrent kind of fruit crisp. It works equally well with slightly underripe or fully ripe bananas (just not mushy ones!). Serve with either whipped cream or ice cream (try coconut). If you don't want to use rum, omit it or use 1 teaspoon of rum extract for flavor.

Steps:
- Slice the bananas diagonally into a buttered 8" dish and sprinkle with the brown sugar.
- Mix orange juice, rind, rum and vanilla. Sprinkle this over the bananas and gently blend.
- Combine topping ingredients & sprinkle evenly over the bananas. Make sure you cover the bananas completely so they don't change colour.
- Bake @ 350* for 25 minutes, or until golden.Serve warm.
