PAN-SEARED ASPARAGUS WITH CRISPY GARLIC

Pan-Seared Asparagus With Crispy Garlic image

Before asparagus got moved to its own botanical family, Asparagaceae, in the early 2000s, it was part of the lily family along with onions, chives, shallots and garlic. It makes sense then, that asparagus and garlic make such a good duo. When cooked with care, both can be mild and sweet (or pungent and bitter when cooked carelessly). To highlight the best of both ingredients, gently fry garlic into chips for a crispy topping, then use the lightly infused oil to sauté the asparagus. Both thin and chubby spears work, as would nearly any other vegetable you like with garlic: broccoli, kale, snap peas, fennel and more.

Provided by Ali Slagle

Categories     vegetables, side dish

Time 10m

Yield 4 servings

Number Of Ingredients 4

4 garlic cloves, thinly sliced
3 tablespoons extra-virgin olive oil
Kosher salt and black pepper
1 bunch asparagus (about 1 pound), ends snapped or trimmed

Steps:

  • Place a paper towel-lined plate next to the stove. In a medium or large skillet, combine the garlic and olive oil over medium-low heat. Cook, shaking the skillet often, until the garlic is very light golden, 3 to 5 minutes. Remove the skillet from the heat, tilt it, then use a slotted spoon to transfer the garlic to the towel-lined plate, leaving the remaining oil in the skillet. Season the crispy garlic with salt.
  • Return the skillet to medium-high heat. Add the asparagus, season with salt and pepper, and cook, shaking often, until bright green, crisp-tender and browned in spots, 4 to 5 minutes. Slide onto a platter, including any oil in the skillet. Top with the garlic chips and season again with salt and pepper.

ASPARAGUS WITH GREEN GARLIC

Asparagus With Green Garlic image

When you sauté or roast asparagus in hot olive oil, the asparagus will have a much more concentrated flavor than it would if steamed or blanched. Here I add the garlic to the pan once the asparagus is just about done, so that the garlic cooks only long enough to soften and sweeten. You can serve this skillet dish with grains or pasta, or with eggs -- fried, poached or scrambled. I find this asparagus so hard to resist that I decided to give you a range for the weight. One pound is adequate, but you might want to treat yourself to more than that.

Time 10m

Yield Serves four

Number Of Ingredients 6

1 small bulb green garlic that has formed cloves
2 tablespoons extra virgin olive oil
1 to 1 1/2 pounds asparagus, trimmed and cut on the diagonal into 2-inch lengths
Salt
Freshly ground pepper
1 tablespoon chopped flat-leaf parsley

Steps:

  • Separate the garlic bulb into cloves, remove the thick skins from each clove, and cut the garlic into thin slices.
  • Heat the olive oil over medium-high heat in a large, heavy skillet. Add the asparagus and salt to taste. Sauté until the asparagus is tender and the skin has shriveled slightly, about five minutes. Add the garlic, and continue to sauté for another minute until the garlic is translucent. Adjust salt, add the pepper and parsley, and serve.

Time 1h40m

Yield 4 servings

Number Of Ingredients 20

1 large pinch saffron, toasted in a saute pan then mixed with 3 tablespoons hot water
4 cloves garlic, crushed
1/2 pound snapper fillet, cut into 2-inch pieces
1/2 pound monkfish fillet, cut into 2-inch pieces
1/2 pound John Dory, cut into 2-inch pieces
1/2 pound sea bass fillet, cut into 2-inch pieces
Olive oil
1 onion, cut into medium dice
1 leek, cut into thin rings
2 celery stalks, sliced
1 can Roma tomatoes
1 orange, zested
Pinch fennel seeds
2 quarts rich fish fumet
2 tablespoons pastis
Salt and pepper
1 cup rouille (4 cloves garlic, 2 egg yolks*, 2 teaspoons cayenne pepper, 1 cup olive oil, salt)
1 baguette, sliced and toasted
Grated Gruyere
2 tablespoons chopped parsley

Steps:

  • Place the saffron, garlic and fish into a mixing bowl. Drizzle with a little olive oil and toss to coat. Refrigerate for at least 1 hour.
  • Saute the onion, leek and celery in olive oil until tender. Add the tomatoes, orange zest and fennel seeds and cook for about 5 minutes. Add the fumet and pastis. Bring to a boil and reduce to a simmer. Add the fish and cook until just done. Season with salt and pepper.
  • To serve, place a baguette slice in the bottom of a serving bowl and top with a spoonful of rouille and a bit of cheese. Top with the fish soup. Garnish with parsley.
  • To make the rouille, using either a mortar and pestle or a food processor, puree the garlic, egg yolks and cayenne pepper until smooth. Slowly drizzle in the olive oil and whisk to incorporate as you would for a mayonnaise. Season, to taste, with salt.
  • *RAW EGG WARNING
  • Food Network Kitchens suggest caution in consuming raw and lightly-cooked eggs due to the slight risk of Salmonella or other food-borne illness. To reduce this risk, we recommend you use only fresh, properly-refrigerated, clean, grade A or AA eggs with intact shells, and avoid contact between the yolks or whites and the shell.

GARLIC BROTH

Garlic Broth image

This can be substituted for meat or poultry stock as a vegetarian soup base.

Provided by Food Network

Categories     side-dish

Time 1h30m

Yield 8 cups

Number Of Ingredients 5

3 small heads garlic, smashed and peeled
1 tablespoon olive oil
9 cups water
Kosher salt to taste, optional
Freshly ground black pepper to taste, optional

Steps:

  • Cut the garlic cloves in half lengthwise and, if necessary, remove the green germ growing through the center. In a medium saucepan, heat the oil over low heat. Stir in the garlic cloves and cook, stirring often, until the outside of the garlic is translucent and cloves are soft, about 20 minutes. Don't let the garlic brown. Pour in water. Bring to a boil. Lower the heat and simmer, uncovered, for 40 minutes. The garlic will be very tender. To eat the broth on its own, season with salt and pepper, to taste, and add vegetables as desired. If using as a soup stock in other recipes, omit the salt and pepper.

SKINLESS BASS RECIPES FOR HOUSEBOAT GRILLING

Skinless Bass Recipes for Houseboat Grilling image

Provided by Food Network

Categories     main-dish

Time 35m

Yield 2 servings

Number Of Ingredients 14

2 (8-ounce) striper fillets, skin removed
Olive oil, to taste
2 tablespoons lemon dill Parmesan sauce (store bought or make your own)
Crushed garlic croutons, to taste
1 tablespoon shredded Parmesan
Salt and pepper
2 (8-ounce) striper fillets, skin on
Chopped tomato
Diced shallots
Chopped cilantro leaves
Sweet peppers, chopped
Chives
Garlic
Olive oil

Steps:

  • Place 2 fillets and place on a sheet of tin foil. Lightly cover them with olive oil, and then drizzle 2 tablespoons of lemon dill Parmesan sauce over each fillet. Sprinkle crushed garlic croutons generously over them and top with 1 tablespoon of cheese over the fillets. Fold tin foil sheets inward to hold juices in. Place these on your grill for about 20 minutes.
  • Take the skin-on fillets and cover both sides with olive oil, salt and pepper. Place directly on BBQ and cook for about 20 minutes. You may score the skin side with a knife to keep filet from curling.
  • Meanwhile, combine all the ingredients for the dressing. Set aside and leave at room temperature.
  • Remove the skinned fillets from the grill and serve with asparagus and angel hair pasta.
  • Transfer the skin-on fillets to a serving platter and generously spoon some of the Tomato Shallot dressing.

LEEK-AND-ASPARAGUS CRISPY RICE

Leek-and-Asparagus Crispy Rice image

This recipe is a masterclass in how mixing textures can elevate a simple, weeknight dinner to new and delicious levels. By giving the rice a few minutes in a hot skillet to form a crackly crust, you're creating little nuggets of crunch to disperse throughout the bowl. Leeks take on a buttery quality once cooked, melting into fluffy rice and crisp-tender asparagus. Lastly, an egg-fried just until the yolk can be used as a silky sauce-becomes the crown on top of a most excellent vegetarian rice bowl.

Provided by Lauryn Tyrell

Categories     Food & Cooking     Ingredients     Pasta and Grains     Rice Recipes

Time 40m

Number Of Ingredients 11

2 tablespoons unsalted butter
3 tablespoons extra-virgin olive oil
2 cups chopped leeks, white parts only (from 2 large), washed thoroughly
Kosher salt and freshly ground pepper
8 ounces asparagus, trimmed and cut into 2-inch pieces
3 cups cooked white rice
1 teaspoon grated lemon zest, plus 1 tablespoon fresh juice
1 cup blanched fresh or thawed frozen peas
1/3 cup grated Parmigiano-Reggiano, plus more for serving
1/2 cup chopped fresh parsley and dill, plus more for serving
Fried eggs, for serving (optional)

Steps:

  • Heat butter and 2 tablespoons oil in a large nonstick skillet over medium-high. Add leeks, season with salt and pepper, and cook, stirring often, until translucent, 3 to 4 minutes. Stir in asparagus and 1/2 cup water. Reduce heat to low, cover, and cook until asparagus is bright green and just tender, 3 to 4 minutes. Uncover, increase heat to high, and cook until most of liquid has evaporated, about 1 minute. Transfer to a bowl.
  • Return skillet to high heat; swirl in 1 tablespoon oil. Spread rice in a single layer; cook, undisturbed, until crisp in places, about 4 minutes. Stir in leek mixture, lemon zest and juice, peas, cheese, and herbs. Season with salt and pepper. Serve with more cheese and herbs, topped with a fried egg.

SPRING GARLIC BROTH

Spring Garlic Broth image

Also known as young garlic. Spring garlic is subtly garlic flavored. It looks almost identical to spring onions/green onions except the tops are flat and not tubular. We bought a bunch of spring garlic at our local farmer's market last weekend and I didn't want to throw them away (or "donate" the tops to the pig trough this time around). The farmer told us the tops can be used to make a simple broth and that is exactly what we made. No waste! Many uses!

Provided by COOKGIRl

Categories     Vegetable

Time 1h5m

Yield 5 1/2 cups

Number Of Ingredients 2

12 garlic, tops (roughly the top 6 inches of the garlic)
6 cups water (approximately because I didn't measure)

Steps:

  • Pour the water into a large stock pot and add the young garlic tops.
  • Bring almost to a boil over medium-high heat then cover and simmer for 1 hour.
  • Strain, set aside to cool, cover and store in the refrigerator. Use within 1 week.
  • Uses: soup (especially good for ramen type soups), rice or other grains, braising vegetables, etc.
  • Yield is estimated.
