Looking for an alternative to the preservatives in commercial crackers, I began the quest to make my own.

1 cup rye flour
1 cup all-purpose flour
1 tablespoon caraway seed
1 ½ teaspoons salt
1 teaspoon onion powder
1 teaspoon garlic powder
⅓ cup canola oil
1 teaspoon honey
¼ cup water, or as needed

Steps:

  • Combine the rye flour, all-purpose flour, caraway seed, salt, onion powder, and garlic powder in a bowl. Stir in the canola oil and honey. While stirring with a fork, slowly add the water until the dough comes together in a ball. Cover and rest for 10 minutes.
  • Preheat an oven to 375 degrees F (190 degrees C).
  • Divide the dough into 4 sections, rolling each piece out on parchment paper to 1/8 inch thick. Cut into desired shape then place on a baking sheet. Prick each cracker a few times with a fork.
  • Bake in the preheated oven until the edges are brown and the crackers are crisp, 10 to 12 minutes. Remove immediately to a cooling rack.

Different kind of cracker. Rye flour takes longer to cook then bleached all purpose and it has a little after taste. It mixes well with Cheddar cheese. For people that have not experienced the flavor of rye, it is a nice surprise when they taste the cracker for the first time. Most of the reactions say they taste the Cheddar cheese aftertaste, not realizing it is the rye they are enjoying.

8 ounces grated Cheddar cheese
¾ cup rye flour
⅓ cup chopped walnuts
2 tablespoons salted butter, at room temperature
½ teaspoon salt
½ teaspoon ground white pepper
½ teaspoon paprika
⅛ teaspoon cayenne pepper

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Mix Cheddar cheese, rye flour, walnuts, butter, salt, white pepper, paprika, and cayenne pepper together in a bowl until dough kneads easily. Roll dough onto a flat work surface using a rolling pin until dough is very thin. Cut dough into squares and place on baking sheet 1/2-inch apart. Puncture each cracker with a fork a few times.
  • Place the baking sheet in the oven and reduce heat to 400 degrees F (200 degrees C). Cook crackers until crisp, 15 to 18 minutes. Cool crackers on baking sheet, about 3 minutes.

  • Preheat the oven to 220 C. In a large mixing bowl, combine the flours, salt en pepper and stir to combine. Add the water and olive oil and mix briefly by hand into a sticky dough ball. Leave to rest for 5 minutes.
  • Divide the dough into 2 and add half between two sheets of parchment paper. Use a rolling pin to roll it out as thinly as you can - the thinner the more crisp your crackers will be. It's okay to use a knife to 'cut and paste' the dough to create a nice rectangular shape. Alternatively, you could use a pasta machine if you own one.
  • Remove the top layer of parchment paper. Wet the dough with a pastry brush dipped in a little water (or use a fine spray mister). Add the seeds of your choice to the top - up to you how many or little you use! Sprinkle a little sea salt and black pepper over the top for extra flavour (optional). Gently roll with a rolling pin over the top to press the seeds a bit into the dough.
  • Use a knife or pizza cutter to pre-cut the dough. This will create the lines on which the baked crackers will snap once baked. I like mine in triangular shapes, but you could go for anything you like (and maybe depending on how you intend to serve them).

  • Add the flour, nutritional yeast, Italian seasoning, salt, garlic powder, black pepper, and baking powder to a food processor and pulse several times to combine. Add the water and olive oil and pulse, stopping the sides as needed until everything is mixed and you have a crumbled dough.
  • Dump the dough crumbles onto a clean work surface and gather together with your hands to form a ball of dough. Use a rolling pin to roll the dough out as thinly as possible (about 1/16" thick). They will puff up and get a bit thicker once baked. I find it helpful to peel up the dough and rotate it a few times while rolling it out to help get it thin.
  • Use a pizza cutter or sharp knife to cut the dough into a grid pattern making crackers that are about 1 1/2" square. Use a fork to prick each cracker 2 - 3 times, this will stop them from getting large bubbles when baking. Peel up each cracker and place on the prepared baking sheets, making sure the crackers don't touch. Re-roll any leftover dough scraps and cut more crackers until all the dough is used up.
