This is so good and so easy. This is one of Mom-maw's recipes and one of my favorite things to eat growing up add lot of pepper and only a little salt!

2 lbs stewing beef
1 1/2 cups water
3 teaspoons condensed beef broth (I like knorr)
1 1/2 cans cream of mushroom soup
salt (to taste)
pepper (to taste)

Steps:

  • Put stew beef in crockpot.
  • mix together concentrate and water.
  • pour over beef.
  • cook on low for 8- 10 hours.
  • remove beef and shred.
  • mix soup into broth until smooth.
  • add beef back in stir well.
  • cook for about 20 minutes on high.
  • serve over rice.

I'm always looking for good recipes for my crock pot. Found this one in a magazine that a camper left behind at the campground laundromat when I was on my last vacation.

2 lbs stew meat
1 tablespoon oil
3 medium onions, chopped
3 tomatoes, chopped
1 cup baby carrots
3 garlic cloves, minced
2 tablespoons quick-cooking tapioca
1 cup beef broth
1/4 cup dry red wine
1 teaspoon italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
2 small zucchini, halved and slice 1/4 inch thick

Steps:

  • Brown beef in oil, drain and put in crock pot.
  • Add onions, tomatoes, carrots, garlic and tapioca to the pot.
  • Combine broth, wine and seasonings. Pour over the items in the crock pot.
  • Cook on low for 8 - 10 hours.
  • The last 45 minutes add the zucchini and switch to high heat.
  • Serve over rice.

Served over pasta or polenta, or in sandwich rolls, this simple meat dish becomes a star.

1 medium yellow onion, diced small
3 garlic cloves, minced
6 tablespoons tomato paste
3 tablespoons chopped fresh oregano leaves (or 3 teaspoons dried)
1 beef chuck roast (4 pounds), halved
Coarse salt and ground pepper
1 to 2 tablespoons red-wine vinegar

Steps:

  • In a 5-to-6-quart slow cooker, combine onion, garlic, tomato paste, and oregano. Season roast with salt and pepper and place on top of onion mixture.
  • Add 2 cups water, cover, and cook on high until meat is tender and can easily be pulled apart with a fork, 4 1/2 hours (or 9 hours on low). Let cool 10 minutes, then shred meat in slow cooker with 2 forks and stir in vinegar to taste.

My mother used to serve this to our family as a one-dish meal by adding sliced potatoes with the carrots. I've updated it by substituting mushrooms for the potatoes and adding chili sauce. It's also good over rice or mashed potatoes.

2 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper, divided
3/4 pound boneless beef round steak, cut into thin strips
1 large onion, sliced and separated into rings
1 tablespoon vegetable oil
3/4 cup water
3/4 cup red wine or beef broth
1 to 2 tablespoons chili sauce
2 bacon strips, cooked and crumbled
1 garlic clove, minced
1/4 teaspoon dried oregano
Dash dried thyme
3/4 cupsliced carrots
3/4 cup sliced fresh mushrooms
Hot cooked noodles

Steps:

  • In a large resealable plastic bag, combine the flour, salt and 1/4 teaspoon pepper. Add beef, a few pieces at a time, and shake to coat., In a large skillet, saute beef and onion in oil over medium heat until meat is browned and onion is tender. Add the water, wine or broth, chili sauce, bacon, garlic, oregano, thyme and remaining pepper; mix well. Bring to a boil. Reduce heat; cover and simmer for 2 hours, stirring occasionally. Add carrots and mushrooms; cover and simmer for 30 minutes or until carrots and meat are tender. Serve over noodles.

  • Place chuck roast on a cutting board and dab both sides with a paper towel. Cut the roast into 6 even pieces and generously salt and pepper all sides.( I use almost a full tablespoon salt and about 1 teaspoon pepper.)
  • Heat 1 and 1/2 tablespoons of the olive oil in a large Dutch oven (or oven-safe heavy-bottomed pot) over medium-high heat. Brown the pieces on all sides for 3 minutes total. To get a good sear, don't overcrowd the meat; you can sear the meat in batches if needed). Don't skip this step. We are adding layers of flavor here. Once the meat is nicely seared with a good crust, remove the pieces from the Dutch oven and place them in the slow cooker. Use a 5-quart or larger slow cooker.
  • Turn heat down to medium-low and add the remaining 2 tablespoons of olive oil. Add the onion and saute for 2 minutes. Next, add in the carrots and celery and saute, stirring occasionally for 5-8 minutes. Add the garlic and saute for 30 seconds.
  • Turn the heat to high, add beef stock, and scrape up any browned bits. Stir and simmer for 3 minutes and then pour the stock and veggie mixture into the crockpot. While the veggies are simmering, you can add in everything else to the slow cooker: the crushed tomatoes, tomato paste, dried thyme, dried basil, dried oregano, bay leaves, and beef bouillon cube (See Note 1).
