Slow Cooker Black Bean Chili is a great tasting crock~pot dinner.

Number Of Ingredients 10

1 pound black beans (dried, rinsed but not soaked)
1 onion (chopped)
1/2 teaspoon garlic powder
2 tablespoons chili powder - you can add up to 2 more tablespoons if you like it hotter.
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon baking soda
29 ounces tomatoes (14.5 ounces each, diced)
3 ounces tomato paste
2 3/4 cups water

Steps:

  • Do not soak the black beans.
  • Put the beans in your Slow Cooker.
  • Add the onion and spices.
  • Add the tomatoes and tomato paste and the water and stir well.
  • Cover and turn on low and cook for 6 - 8 hours.
  • Or if you want it faster you can cook on high for 3 - 4 hours.
  • Check about halfway through and see if the beans have absorbed most of the liquid. If it is seeming too dry to you add warm to hot water at 1/2 cup intervals. It is a chili - not a soup. But if your like lots of liquid in your chili do whatever you like - it will still be excellent!

2 tablespoons olive oil
2 large onions (diced)
3 cloves garlic (minced)
1 red bell pepper (chopped)
1 green bell pepper (chopped)
3 (14-ounce) cans diced tomatoes (undrained)
2 cups vegetable broth
2 teaspoons cumin
1 tablespoon chili powder
1/2 teaspoon crushed red pepper flakes
1 (10-ounce) package frozen corn
2 (15-ounce) cans black beans (drained and rinsed)
To Serve: sour cream, shredded cheese, chopped green onion, cilantro, limes

Steps:

  • Gather the ingredients.
  • In a heavy skillet, saute the onions in the olive oil until tender, stirring frequently, about 4 to 5 minutes. Add the garlic and cook 2 minutes longer. Add the cumin and cayenne pepper. Cook for two minutes longer to bloom the spices.
  • Combine the onion mixture with the bell peppers, tomatoes, broth, corn, black beans, and Picante or taco sauce into a 4 to 5-quart slow cooker.​
  • Cover and cook on low about 10 hours or until the vegetables are tender. You can thicken this chili if you'd like using a mixture of about 2 tablespoons cornstarch with 1/3 cup water. Add to the slow cooker, cover, and cook for 20 to 30 minutes or until thickened. If you have a newer, hotter cooking crock pot , cook the whole recipe on low for 6 to 7 hours.
  • Serve with optional garnishes of your choice, along with tortilla chips for dipping, if desired.

1 medium yellow onion (diced, about 2 cups)
3 medium cloves garlic (minced)
1 jalapeno pepper (diced*)
2 14.5-ounce can fire-roasted diced tomatoes (plain diced tomatoes also work)
4 cups cooked black beans
1/2 cup orange juice (I use fresh-squeezed from about 2 medium naval oranges)
1/2 cup golden raisins
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon smoked paprika
1/2 teaspoon cinnamon
1/4 teaspoon allspice
1/2 teaspoon kosher salt
2 cups diced ripe mango (from about 2 large mangoes)
Additional salt and pepper (to taste)
Sour cream or cashew sour cream
Lime wedges (for squeezing over the top of individual servings)
Diced avocado
Sliced scallions
Chopped mango
Halved cherry tomatoes
Cilantro

Steps:

1 large sweet onion, chopped

2 to 3 tablespoons chili powder
