Crock-Pot Boston Butt Shoulder for Pulled Pork image

I prefer using a smoker, but this is excellent as well. The preparation is the same as for a smoker.

5 lbs boston butt
1/3 cup yellow mustard
1/2 cup your favorite barbecue rub (your favorite kind)

Steps:

  • Rinse roast and remove as much fat from the outside as is practical.
  • Dry the roast and slather with mustard.
  • Add enough rub to cover the roast evenly (don't be stingy).
  • Using hands, rub the spices and mustard into the roast on all sides.
  • Place 1 1/2 inch balls of aluminum foil in a 4 or 5 quart crock pot to raise the roast above liquids that will collect in the pot.
  • Place the roast into the crock pot and set on low.
  • Cook the roast until it is 190 to 200F internal temperature.
  • During the cook, the liquids collected may be removed and chilled for defatting.
  • Depending on how "hot" your crock pot cooks, this may take 8 to 12 hours on low or 5 to 8 hours on high. I recommend using temperature rather than time.
  • Another indication of doneness is to try to remove the blade bone by hand. If it can be easily removed, it is done.
  • Rest the roast until it can pulled apart by hand or with forks. Remove fat as you pull the pork.
  • Wet the roast with a portion of the defatted juices and mix.
  • Serve with your favorite sauce, applied on the side or on top for sandwiches.

1 (3 pound) pork shoulder
4 cups water, or as needed
8 cups white vinegar, or as needed
¼ cup kosher salt
1 large onion, cut into 8 wedges
1 tablespoon ground cumin
1 tablespoon ground mustard
1 tablespoon chili powder
½ cup brown sugar

Steps:

  • Place the pork shoulder into the ceramic bowl of a slow cooker. Pour enough water and white vinegar into the slow cooker to assure the pork is completely covered, maintaining a 2-to-1 ratio of vinegar to water. Add the salt. Put the ceramic bowl in the refrigerator and allow the pork to marinate at least 12 hours and up to 24 hours.
  • Drain enough of the liquid from the ceramic bowl until about 1/2-inch of pork is left exposed. Add the onion to the remaining liquid. Season the exposed surface of the pork with the cumin, mustard, chili powder, and brown sugar. Place the bowl into the base of the slow cooker and cook on High until the pork is tender and falls apart easily, 8 to 10 hours.
  • Carefully remove the pork to a cutting board; shred the meat into strands using a pair of forks. Remove and discard any excess fat.

I had a 4 1/2 lb. Boston Butt and didn't want to use it for the usual pulled or BBQ pork. So, this is what I came up with.This is a very plain pork recipe, so if you feel like adding other seasonings or BBQ sauce after cooking go right ahead.The size of the Boston Butt will determine how long the cooking time is.In the case of this recipe it was 8 hours on low.The amount of seasonings you will use is up to you.As I said this is a very plain recipe, and you can use the meat as starting point for all sorts of other dishes. If you've spent any time on Pinterest or food blogs, you've likely come across a recipe for three-ingredient barbecue pulled pork that can be made in the slow cooker. Methods and ingredients vary, but the recipe almost always calls for boneless pork shoulder, some sort of dark cola (usually Dr Pepper or root beer) and barbecue sauce. Dubious? We were too, so we asked the members of our NYT Cooking Community Facebook page if anyone had ever made it and if they liked it. We received more than 150 very opinionated responses. Many readers have come up with their own clever twists, like using coffee or beer in place of cola, adding onions or chipotles, rubbing the meat with a spice blend and searing the meat before cooking. We tried cooking it a few different ways and found we liked this adaptation best. It calls for a few more ingredients and an extra step or two, but it's got layers of flavor and it's still mostly fuss-free. (You can find the pressure-cooker version of this recipe here.)

1 tablespoon garlic powder
1 tablespoon onion powder
2 teaspoons hot or sweet smoked paprika

3 to 4 pound boneless pork shoulder or pork butt, trimmed of most of its excess fat
2 tablespoons vegetable oil, plus additional for greasing
1 yellow onion, chopped (optional)
1 (12-ounce) can dark soda, like Dr Pepper, root beer, cola or birch beer
1/2 to 1 1/2 cups homemade or store-bought barbecue sauce
Hot sauce (optional)

Steps:

  • In a small bowl, combine the garlic and onion powders, smoked paprika, salt and black pepper. Rub the spice mixture all over the pork. If you have time, cover with plastic wrap and refrigerate for 2 hours or up to overnight. If you don't, no worries; proceed to Step 2.
  • Lightly grease the crock of a slow cooker. Heat 2 tablespoons vegetable oil in a large skillet over medium-high. Sear the pork until golden brown on all sides, about 2 minutes each side. Add onion, if using, to the slow cooker. Add the pork on top of the onion. Pour soda over the pork and set the slow cooker to low for 6 to 8 hours, until the meat has collapsed and shreds easily.
  • Drain most of the liquid from the slow cooker and shred the meat directly in the pot. Add about 1/2 cup of the barbecue sauce and stir to combine. (At this point, if you like crisp bits in your pulled pork, you can spread the shredded pork on a sheet pan and place under a broiler for a couple minutes then return to the slow cooker.) Taste and add more barbecue sauce, hot sauce, salt or pepper, if desired. Serve with soft rolls and extra sauce on the side.
