Crock Pot Chicken Casablanca Ww Flex And Almost Core Recipe

Ingredients:

  1. olive oil
  2. onions
  3. fresh ginger
  4. garlic cloves
  5. boneless skinless chicken breasts
  6. carrots
  7. sweet potatoes
  8. currants
  9. cumin
  10. turmeric
  11. pepper
  12. cinnamon
  13. cayenne pepper
  14. diced tomatoes
  15. zucchini
  16. garbanzo beans
  17. fresh parsley
  18. fresh cilantro

Steps:

  1. saut onions , ginger and garlic in oil for 3 or 4 minutes and transfer to crockpot
  2. brown chicken in same pan over medium heat
  3. reserve in skillet
  4. add carrots , potatoes to crock pot
  5. place chicken on top of veggies
  6. stir seasonings in a small bowl and sprinkle over chicken along with currants and raisins
  7. if you like a very thick sauce , drain one of the two cans of tomatoes before adding to crock pot
  8. top chicken with diced tomatoes
  9. add zucchini to the top
  10. cover and cook on high for 4 to 6 hours
  11. add beans , parsley and cilantro 30 minutes before serving
  12. serve over cooked rice or couscous
