HAM AND GREAT NORTHERN BEAN SOUP FOR THE CROCK POT
Title says it all. Put this it together using a little bit from this recipe and a little bit from that recipe but mostly suggestions from my Mom. Tip I learned from someone else on Zaar was to add the salt at the very end of the cooking time, otherwise the beans get tough. You could also add 3/4 cup celery if you like celery in your soup, or saute the carrots and onion before putting them in the Crock Pot if you like the flavor from that, too.

Steps:
- Place the soaked and rinsed beans in a 5- or 6-quart crock pot. Look them over one more time for any bad beans or foreign matter.
- Add chopped carrots and onion.
- Pour chicken broth (pan drippings/chicken broth combination if you're using it) over beans, carrots, and onion. Mix gently.
- Add ham and stir again.
- Throw in ground thyme, basil, and ground black pepper. (Measurements in ingredients section are a guesstimate, I hardly ever use measuring spoons when cooking, I just make a cup in my hand and eyeball it.) To my tastebuds, a little thyme goes a long way so you may wish to add more than 1/2 teaspoon. Stir again.
- Add bay leaf and push it gently under the surface of the broth so it doesn't float.
- Cook on high for 1 hour, then low for 8 hours, stirring once in a while if you can. You could probably just cook on low for 8-9 hours if there's nobody home to change the setting. I just like to get things heated up and moving so I do high for an hour on just about everything I put in a Crock Pot.
- Remove the bay leaf.
- Add salt just before serving to the whole pot or individual bowls.
- This may taste good with a drop of Dijon mustard in individual bowls or even a tablespoon or two of cream.
- If it's too thin, just take the lid off for a while.

- Chop 6 slices of bacon into large chunks and fry in a large skillet until crispy. Once the bacon is fried, remove it and place it on a paper towel lined plate.
- Chop the onion and slice the carrots and celery into small, thin pieces. Add the veggies to the same pan you cooked the bacon in (leave the grease in there to really develop some flavors) and saute for 5 minutes just until the veggies have started to cook. It's okay if they aren't fully cooked they will soften up and finish in the slow cooker. Add the minced garlic and cook an additional minute until fragrant.
- Add all the ingredients to a large crockpot. Cook for 4-6 hours on HIGH and 6-8 hours on LOW or until the beans are soft and the ham is tender and cooked through.
- After the soup has cooked, remove the ham shanks from the slow cooker and shred the meat off the bone and return it to the crockpot. Stir the soup, taste and adjust the seasoning if necessary.

SLOW COOKER HAM AND BEAN SOUP - VALERIE'S KITCHEN
From fromvalerieskitchen.com
- The evening before you want to cook the soup, rinse beans, remove any debris and place in a large pot. Cover with water by at least 2-inches and soak beans overnight. They will more than double in size so choose your pot accordingly.
- The next day, drain and thoroughly rinse the soaked beans and transfer to a 6-quart slow cooker.
- Layer the remaining ingredients through the ham bone in the slow cooker in the order listed. Add about 5 cups of chicken broth, or just enough to cover the beans and veggies. Reserve any remaining chicken broth for later. Tuck the bay leaves into the mixture, cover and cook on HIGH for 1 hour. Reduce heat to LOW and continue to cook for an additional 5 to 6 hours. Stir occasionally during cooking time. When beans are tender, remove ham bone to a cutting board and remove and discard the bay leaves. Ad add the tomato sauce, stirring to combine. If you'd like a creamier texture, transfer about 1/3 of the soup to a blender or food processor and process until smooth. Return puréed soup to slow cooker, adding more broth, only if needed, to reach desired consistency. Cover and continue to cook for an additional 20 to 30 minutes.
- Meanwhile, pull ham off the bone and chop into small pieces. Return chopped ham to the slow cooker and discard ham bone. Stir in chopped parsley. Taste and season with additional salt and pepper, as needed.
