Slow Cooker Buffalo Chicken Dip is made entirely in your crock pot! Great served with tortilla chips straight out of the slow cooker.

2 chicken breasts ((about 1 1/4 pounds))
¼ cup Ranch flavored seasoning mix, divided (like Hidden Valley )
8 ounces sour cream
8 ounces cream cheese
1 cup shredded mozzarella, divided
½ cup cayenne pepper hot sauce (like Frank's Red Hot)
½ teaspoon kosher salt

Steps:

  • Spray the inside of the slow cooker with nonstick cooking spray. Place chicken breasts in the slow cooker set to high heat. Sprinkle on 2 tablespoons of ranch seasoning o the chicken, cover, and cook through, about 2-3 hours.
  • Once the chicken is cooked through, use to forks to shred the chicken inside the slow cooker. Add in remaining 2 tablespoons of ranch seasoning mix, sour cream, cream cheese, ½ cup mozzarella, hot sauce, and salt. Stir to combine.
  • Set the slow cooker to low and heat the dip until melted and gooey, about an hour. Sprinkle on remaining mozzarella cheese and cover until melted. Serve warm with tortilla chips and celery.

2 (10 ounce) cans chicken
2 (8 ounce) packets cream cheese
3/4 cup hot sauce (I use Frank's)
1 cup ranch dressing
2 cups mild cheddar cheese
2 loaves baguette

Steps:

  • Drain canned chicken and put in medium sauce pan.
  • Add hot sauce and cook on medium until heated throughout. My personal favorite is Frank's hot sauce.
  • Add cream cheese and stir until blended thoroughly.
  • Add ranch dressing and mix.
  • Add 1-1/2 cups of cheddar cheese and heat for a few minutes until mixed and melted.
  • Pour the dip into the crock pot and sprinkle the remaining cheddar cheese on the top. Keep heated on low.
  • I serve on baguette that has been sliced and toasted. However, it is also tasty on corn chips.

2 lbs chicken breast (boneless, skinless)
2 tbsp ranch seasoning (or 1 packet hidden valley ranch, 1/2 tsp reserved)
1/2 cup chicken broth
8 oz cream cheese
1/4 cup buffalo sauce (or more according to how spicy you want it)

Steps:

  • Pour the chicken broth into the crock pot. Lay the chicken breast on top, then top with the ranch seasoning. Cover and cook on high for 2.5 hours or low for 3.5 hours. (Cook to internal temperature of 165˚F)
  • At the end of the cook time, remove the chicken and shred it. Drain the broth, reserving 1/4 cup of the broth.
  • Place the shredded chicken, the reserved ranch seasoning and broth, and cream cheese back into the crock pot and stir until everything is evenly combined.
  • Stir in buffalo sauce adding additional sauce until you reach your desired level of spice.

1 cup Frank's Red Sauce - Buffalo flavor
2 8 ounce packages 1/3 less fat cream cheese, softened
1 cup light ranch dressing
1 cup shredded reduced-fat Cheddar cheese (divided)

Steps:

  • Heat chicken and hot sauce in a skillet over medium heat, until heated through.
  • Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm.
  • Mix in half of the shredded cheese, and transfer the mixture to a slow cooker.
  • Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly.
  • If cooking in the oven, add to a 450-degree oven for 10-15 minutes.
  • Serve with cut up veggies- celery, carrots, green peppers, and cucumbers are our favorites!

15 ounces chicken broth (omit if using rotisserie chicken)
4 ounces 1/3 fat cream cheese (softened)
1 cup sour cream
1 teaspoon vinegar
1/2 cup Franks Red Hot Sauce
1/2 cup crumbled blue cheese
1 cup shredded cheddar cheese
Tortilla chips, bread or veggies for serving

Steps:

  • Place chicken in slow cooker and add chicken broth to cover. Cook for 4 hours. Skip this step if using prepared rotisserie chicken.
  • Combine cream cheese, cheddar cheese, sour cream, vinegar and hot sauce until smooth. Add half blue cheese crumbles.
  • Pour over chicken in slow cooker and mix well.
  • Cook low for 2-3 hours.
  • Turn to warm and serve in slow cooker or transfer to serving dish. Top with remaining blue cheese. Serve warm.
