SLOW COOKER CARNE ADOVADA



Slow Cooker Carne Adovada image

Tender and savory carne adovada, made in a slow cooker.

Number Of Ingredients 8

20 New Mexican dried red chile pods
2 tbsp olive oil
1/2 medium onion (diced)
4 cloves garlic (minced)
3 cups water
2 tsp salt
2 tsp oregano
4 lbs pork shoulder or pork butt (cut into 1" cubes)

Steps:

  • Remove the stems and seeds from the red chiles. Cut into 1" strips.
  • Add olive oil to a large pan over medium heat. Add in chiles, onion, and garlic. Saute for 5 - 10 minutes, until fragrant. Pour in water, salt, and oregano, stirring well. Bring to a boil, cover, then reduce heat to a simmer for 10 minutes.
  • Transfer chile mix to a blender, in batches if necessary, and blend until smooth. Strain red chile sauce through a sieve to filter out peels.
  • Stir red chile sauce into the pork. Cover and refrigerate for 12 - 24 hours.
  • Cook in slow cooker on low for 9 hours, until cooked through and fork-tender.

I learned to make this spicy red chile dish by experimenting in my kitchen after enjoying it at a friend's place. It takes a while to make, but it is well worth it. Serve hot with tortillas, cheese, lettuce, tomatoes, salsa and sour cream. This also works well with a pork roast.

¾ cup New Mexico red chile powder
1 teaspoon cornstarch
2 tablespoons fresh lemon juice
3 cups water
4 pounds beef roast, cut into cubes

Steps:

  • In a medium bowl, combine the chili powder, cornstarch, lemon juice and water. Mix together well. Place the meat in a resealable plastic bag with the marinade and turn to coat thoroughly. Marinate in the refrigerator for 6 to 16 hours.
  • Place in a slow cooker and cook on high setting for about 4 hours, or until the meat is completely cooked and shreds easily.

8 dried New Mexico chiles, stemmed and broken into small pieces
2 cups low-sodium chicken broth
1 tablespoon canola oil
4 pounds pork shoulder, trimmed and cut into 1-inch cubes
2 tablespoons all-purpose flour
6 cloves garlic
2 chipotle peppers in adobo sauce
1 cup diced onion
1 tablespoon cider vinegar
1 teaspoon kosher salt
½ teaspoon dried oregano
¼ teaspoon ground cumin

Steps:

  • Place New Mexico chiles in a heat-proof bowl.
  • Bring chicken broth to a boil in a small saucepan. Pour over the chiles; left soften, about 30 minutes.
  • Turn on a multi-cooker (such as Instant Pot®) and the select Saute function. Coat pork with flour and add to pot in batches; saute until golden brown, about 15 minutes.
  • Transfer soaked chiles to a blender. Add broth, garlic, and chipotle peppers; blend until smooth.
  • Combine blended chile sauce, onion, vinegar, salt, oregano, and cumin in a bowl; pour sauce over the pork.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 20 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove lid.

Your meal will be ready in 3 to 4 hours, and you don't need to be stuck in the kitchen in the meantime. And lucky you if there are leftovers-we love using this for meatloaf sandwiches the next day!

1 1/2 lb lean (at least 80%) ground beef
1 cup milk
1 teaspoon chopped fresh sage leaves or 1/4 teaspoon dried sage leaves
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1 clove garlic, finely chopped, or 1/8 teaspoon garlic powder
1 egg
3 slices bread, torn into small pieces
1 small onion, chopped (1/4 cup)
1/2 cup ketchup

Steps:

  • Line 4 1/2- to 5-quart slow cooker with foil. Spray foil with cooking spray.
  • In large bowl, mix all ingredients except ketchup. Shape mixture into loaf, and place in center of slow cooker. Spread ketchup over top.
  • Cover; cook on Low heat setting 3 to 4 hours or until meat thermometer inserted in center of loaf reads 160°F. Remove meatloaf from slow cooker to serving platter. Cut into pieces to serve.

1 cup chopped onion
2 teaspoons oregano
2 tablespoons red wine vinegar
1 1/2 teaspoons salt
1/2 cup chopped onion
2 bay leaves

Steps:

  • Mix chile powder with water to form a thick paste.
  • Blend paste, one cup onion, oregano, salt and vinegar in a blender.
  • Add mixture to pork cubes in ziploc bag, along with 1/2 Cup onion and bay leaves.
  • Marinate pork in mixture overnight.
  • Cook in crock pot on "auto" for 8-10 hours.
