2 pounds ground turkey
2 (15 ounce) cans dark red kidney beans, drained
1 onion, finely diced
1 (28 ounce) can tomato sauce
1 (14.5 ounce) can fire roasted diced tomatoes
2 (1.25 ounce) packages chili seasoning mix
½ cup ketchup
¼ cup prepared yellow mustard
¼ cup brown sugar
1 (8 ounce) package shredded Colby-Monterey Jack cheese

Steps:

  • Heat a large, nonstick skillet over medium-high heat and stir in the ground turkey. Cook and stir until the turkey is crumbly, evenly browned, and no longer pink. Place the browned turkey, kidney beans, and diced onion in a slow cooker; mix well.
  • Combine the tomato sauce, fire roasted tomatoes, chili seasoning, ketchup, mustard, and brown sugar in the skillet. Bring to a simmer. Stir the sauce into the meat mixture in the slow cooker. Cook on High for 20 minutes. Sprinkle with shredded Colby-Monterey Jack cheese before serving.

2 pounds ground beef
2 tbsp olive oil
1/2 cup onion
2 garlic cloves
2 tbsp chili powder
2 cups beef broth
1/2 cup sugar free ketchup
1/4 cup yellow mustard
1 tbsp tomato paste
1/4 cup dill pickle relish
1/4 cup butter
1 1/2 cups heavy cream
1 tsp xanthan gum
1/2 tsp salt
1/4 tsp pepper
2 cups shredded cheddar cheese
1/4 cup dill pickle relish
optional: Cheddar Croutons made from these Low Carb Sandwich Buns

Steps:

  • In a large skillet over medium high heat cook the onion in the oil until softened, add the garlic and ground beef.
  • Cook until browned.
  • Add all the rest of the ingredients to the mixture and stir to combine.
  • Pour it into the crock pot and cook on low for 3 hours.
  • When ready to serve prepare the cheddar cheese sauce.
  • Melt the butter in a small sauce pan over medium low heat.
  • Once melted, add the cream and sprinkle the xanthan gum, continue to stir until thickened.
  • Add in the salt, pepper and cheddar cheese. Remove from heat once cheese is melted.
  • Stir in the relish.
  • Top over chili when ready to serve.
  • If using croutons simply chop the buns into pieces and toast a few minutes in the oven until crisp or to your liking.
  • Add them to a bowl first then chili then top with cheese.
  • Optional toppings would be more ketchup, mustard and pickles.

**MODIFIED - I doubled the amount of ground beef when making this for a party. I can see why Shelby Jo said that the cheese would have been overpowering with the original recipe! It was just right with the 2 pounds.** This is actually called 'All-American Cheeseburgers' from Gooseberry Patch's "Super-Fast Slow Cooking Cookbook". I didn't want you to think that you are making actual cheeseburgers, so I changed the name for Zaar. I see no reason why you couldn't use low fat ingredients. Enjoy!

Serve with chips and plenty of cold beer! They are sure to disappear! I leave the green peppers out since I hate them! This is a great recipe to take to a potluck and can easily be doubled.

2 lbs lean ground beef
1/4 teaspoon ground black pepper
2 ounces Velveeta cheese, cubed
2 tablespoons milk
2 -3 tablespoons pickle relish
2 tablespoons prepared mustard
3 tablespoons ketchup
1 green bell pepper, chopped
1 small onion, chopped
2 garlic cloves, put through press
8 sandwich buns
lettuce (optional)
tomatoes (optional)

Steps:

  • In a large skillet over medium heat, brown ground beef with green pepper, onion and black pepper until beef is cooked through.
  • Drain off excess fat and transfer beef to a 3 1/2 to 5-quart crock pot.
  • Add all other ingredients except Hamburger buns, Lettuce and tomato.
  • Cover and cook on LOW for 5 to 7 hours.
  • Serve the beef on toasted sandwich buns with an assortment of condiments.
