1 onion, chopped
2 garlic cloves, smashed
1 (28 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 1/2 teaspoons salt
1 teaspoon dried oregano
12 ounces cottage cheese (we like 2%)
1/2 cup grated parmesan cheese or 1/2 cup asiago cheese
12 ounces lasagna noodles, uncooked
16 ounces shredded mozzarella cheese

Steps:

  • Brown ground beef, onion and garlic in frypan.
  • Add tomato sauce, tomato paste, salt and oregano.
  • Cook long enough to get it warm.
  • Spoon a layer of meat sauce onto the bottom of the slow cooker.
  • Add a double layer of uncooked lasagna noodles (break to fit) and top with cheeses.
  • Repeat with sauce, noodles and cheeses until all are used up.
  • Cover and cook on low for 4 to 5 hours.

2 1/2 cups store-bought rotisserie chicken, (diced)
2 cups shredded Italian cheese blend
15 ounce container ricotta cheese
2 (15 ounce) jars cheesy alfredo sauce
1/2 cup water
1 teaspoon Italian seasoning
1 teaspoon minced garlic
9-12 lasagna noodles, ((depending on your slow cooker size))
2 cups shredded mozzarella cheese
dried parsley ((optional))

Steps:

  • In a bowl combine Italian cheese blend with ricotta cheese. Mixture will be thick.
  • In a separate bowl, combine both jars of alfredo sauce with water, Italian seasoning and garlic.
  • Assemble the lasagna layers: Spread 1/4 of the alfredo sauce into the bottom the slow cooker. Arrange 3-4 lasagna noodles on top of the alfredo sauce (break noodles to fit.)
  • Spread 1/3 of the chicken on top of lasagna noodles.
  • Then spread 1/3 of the cheese mixture on top of the chicken.
  • Then repeat these same steps two more times (alfredo sauce, noodles, chicken, cheese mixture.) Try to make sure the alfredo sauce covers to the edge of the noodles.
  • Finally, top with shredded mozzarella cheese and dried parsley (optional.)
  • Cover and cook on low for 2 1/2 - 3 hours (or until noodles are tender.)

  • In a large bowl mix together the cottage cheese, grated Parmesan cheese, and shredded mozzarella cheese.
  • Spoon a layer of the meat mixture onto the bottom of the slow cooker. Add a double layer of the uncooked lasagna noodles. Break to fit noodles into slow cooker. Top noodles with a portion of the cheese mixture. Repeat the layering of sauce, noodles, and cheese until all the ingredients are used.

1 small shallot
1 tablespoon Dijon mustard
1 1/2 pounds boneless, skinless chicken breasts (or chicken thighs)

1 teaspoon dried thyme
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
2 1/2-3 1/2 cups low-sodium chicken broth
1 cup frozen peas
1/2 cup nonfat plain Greek yogurt
1/2 cup freshly grated sharp cheddar cheese (divided (I love white cheddar for this))
Chopped fresh parsley (optional for serving)

Steps:

  • Lightly coat a 5-quart or larger slow cooker with nonstick spray. Add the rice, carrots, shallot, and Dijon mustard, and stir to combine. Arrange the chicken breasts on top, then sprinkle with the garlic powder, thyme, salt, and pepper. Pour in the chicken broth. Cover and cook on HIGH for 1 1/2 to 2 1/2 hours, until the chicken is cooked through.
  • Remove the chicken to a plate and cover to keep warm. Stir the rice, vegetables, and broth, then re-cover and continue cooking on high until the rice is tender, about 1 additional hour.**

1 teaspoon dried thyme leaves
2 tablespoons unsalted butter , softened

Steps:

  • Spray a 3-quart slow cooker with nonstick cooking spray.
  • Rinse the wild rice in a colander and drain well.
  • Combine the wild rice in the prepared crock pot together with onion, salt, pepper, chicken broth, water, mushrooms, and thyme and mix well.
  • Cover crock pot and cook on high for 3 to 4 hours or on low for 7 to 8 hours. If you have a newer, hotter cooking slow cooker, check at three hours on high and 6 hours on low.
  • The pilaf is done when the rice is tender and has absorbed the liquid.
  • Stir in the butter, then cover the crock pot and let stand for 10 minutes. Stir gently but thoroughly and serve.

• Two bone-in chicken breasts, skinless
• Eight cups of chicken stock
• Two tbsp of fish sauce
• Ten star anise
• 1½ tablespoons of light brown sugar
• One cinnamon stick
• 2½ inch piece fresh ginger, peeled and thinly sliced
• Six ounces pho rice noodles
• Six cloves
• 4-6 cups of bok choy, chopped
• One cup of fresh basil leaves
• Twelve ounces bean sprouts
• One lime, quartered
• Two jalapeños

Steps:

  • Toss the chicken stock with brown sugar, fish sauce, cinnamon, star anise, ginger, and cloves. Place the chicken breast flesh in the slow cooker and cover with stock. Cook the chicken and stock in the crockpot on low for 6 to 7 hours.
  • Remove the chicken breasts from the crockpot and place them on a plate. Take the whole spices out of the soup. Add the bok choy to the stock and simmer for another 30 minutes on high in the crockpot.
  • Shred chicken, slice jalapeos, and prepare sprouts, basil, and lime for garnishing while the bok choy cooks.
  • About 20 minutes before the bok choy is done, return the rice noodles and shredded chicken to the broth to complete cooking for the last 10 minutes.
  • Toss bean sprouts, jalapeos, basil, and lime to taste into big cups of soup.
  • If desired, top with sriracha, chili paste, and/or hoisin sauce.
  • (optionally add soft boiled eggs at the very end, if you like them)
