SIMPLE CHICKEN SOUP MADE IN CROCK POT
Just a very basic, surprisingly delicious recipe for basic chicken soup made in a crock pot. I even surprised myself!

Steps:
- Layer in crock pot in this order:.
- Starting at bottom:.
- -Carrotts.
- -Celery.
- -Onions.
- -Bay leaves.
- -Chicken (whole).
- -pour in broth till not quite half way up (save the rest for when you get home to add at the end) I kept in fridge but NOT in the can.
- Put on high for 1-hr. before you leave for work, then LOW until you get home. I had it on low from 8:00am till 5:30pm and it was done perfectly!
- Remove the chick and de-bone it, put chick back in soup w/rest of canned soup from refrigerator.
- OH, THEN I ADDED SOME FROZEN PEAS AND DEHYDRATED PARSLEY FLAKES.
- I had cooked rice but I would never put it into the soup, we just put it in our bowls and added the soup -- perfect and REALLY DELICIOUS!

I came across this when I was looking for a way to use some cooked leftover chicken I had. I adapted it a bit to fit our taste.

- Mix all above ingredients and place into crock pot.
- Pour broth in over ingredients and turn on low for 6 hours.
- Stir a couple of times during cooking process to mix soup.
- Serve with cornbread or muffins.

I just found this recipe at my Moms on a recipe card which I wrote out when I was around 8 I think. I remember making it for dinner and it was good however I would likely use it on noodles now instead of as a soup and add some veggies. The original recipe card said Chicken Stew (crossed out) soup. - Place chicken, water, celery, carrot, green onion, chicken bouillon, parsley, bay leaf, seasoned salt, salt, dried basil, and pepper into the bottom of a slow cooker. Cover and cook on Low until chicken breasts are no longer pink in the centers, 5 to 6 hours.
- Remove and discard bay leaf. Remove chicken, shred using 2 forks, and return to the pot. Stir in egg noodles.
- Cover and continue to cook on Low until noodles are tender, 20 to 30 minutes more.

- Combine chicken, condensed soups, frozen vegetables, seasoned salt, white pepper, onion powder, and garlic powder in a large bowl; stir until it is mixed well. Add milk slowly, while stirring, until fully incorporated. Pour into the bottom of a slow cooker.

- Rinse chicken and pat dry with paper towels; set aside.
- In a 4 quart crock pot, combine onion, carrots, celery, potatoe, and 3 Tablespoons of the parsley.
- Add chicken, then pour in tomato sauce and broth.
- Cover and cook at low setting for 7 to 8 hours. Chicken and potatoes should be tender when pierced with a fork.
- Lift out chicken and place on cutting board to cool to touch.
- Next, skim and sicard fat from broth mixture. Stir in corn and turn crock pot to high heat. Cover and cook for additional 15 minutes.
- Once chicken is cool, dicard bone and skin. Tear chicken into bite size pieces.
- Return chicken to crock pot and sliced zucchini to broth; cover and cook until zucchini is tender (about 10 to 15 minutes).
- Season soup with salt and pepper.
- Before serving, sprinkle the remaining 1 Tablespoon of parsley on top of soup.

- I use pre-cooked or frozen chicken, I boil the onion, celery, and carrots first(not the corn) and then throw them in the crock-pot.If I am cooking the chicken tenders, I throw the veggies in the pan afterwards, and saute. If the veggies and chicken are pre-cooked, you only have to wait until soup is fully heated.
- Melt butter in large skillet.
- Add chicken and cook until browned.
- Add cooked chicken, onions, celery, carrots, corn, soup, chicken broth, and dill to your slow cooker.
- cover and cook on low 3 to 4 hours or until chicken is no longer pink and vegetables are tender.
- Turn off heat.
- Stir in half and half.
