Have your chili 3,4, or 5 ways, Cincinnati style. This is also great on hot dogs, smothered with shredded cheese.

1 1/2 lbs lean ground beef
2 medium onions, chopped
1/2 cup chopped celery
6 garlic cloves, minced
2 tablespoons mild chili powder
1 tablespoon paprika
1 1/2 teaspoons dried basil
1 1/2 teaspoons dried oregano
1 1/2 teaspoons dried thyme
1 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cumin
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon ground allspice
1/2 teaspoon salt
1/2 teaspoon black pepper
2 (14 1/2 ounce) cans diced tomatoes
1 (8 ounce) can tomato sauce
1/2 cup water
1 lb spaghetti, cooked
1 medium onion, finely chopped
1 cup finely grated cheddar cheese
1 (15 1/2 ounce) can kidney beans, rinsed, drained, and heated
hot sauce (your favorite- I like Franks or Crystal)

Steps:

  • Brown ground beef, onions, and celery in a large skillet, drain off all fat.
  • Place ingredients for the crock pot into the slow-cooker and stir well.
  • Cover crock pot and cook for 7-9 hours on low, or 3 1/2-4 1/2 hours on high, stirring during last part of cooking if using high setting.
  • Cook spaghetti 1/2 hour before chili is done.
  • To have chili 3-ways, serve it with spaghetti, chili and cheese.
  • To have chili 4-ways, serve it with spaghetti, chili, onion, and cheese.
  • To have spaghetti 5-ways, serve it with spaghetti, chili, beans, onion, and cheese.
  • Douse your chili liberally with hot sauce, if desired.

1 1/2 pound ground beef
2 medium chopped yellow onion (plus more serving (optional))
29 ounce diced tomatoes
8 ounce tomato sauce
1/2 cup beef broth (or up to 2 cups for thinner consistency)
2 ounce unsweetened chocolate (chopped)
2 tablespoon chili powder
1 tablespoon fresh minced garlic
1 tablespoon paprika
1 tablespoon unsweetened cocoa powder
1 tablespoon light brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon ground cinnamon
1/2 teaspoon ground cayenne pepper (or to taste)
1/2 teaspoon ground cumin
1/2 teaspoon ground allspice
1/2 teaspoon ground nutmeg
1/2 teaspoon salt (or to taste)
1/2 teaspoon black pepper (or to taste)
cooked spaghetti (for serving (optional))
shredded cheddar cheese (for topping (optional))
cooked beans (for topping (optional))

Steps:

  • In a large slow cooker, add ground beef. Use a spatula to break it up for easier cooking.
  • Add yellow onion, diced tomatoes, tomato sauce, beef broth, unsweetened chocolate, chili powder, garlic, paprika, unsweetened cocoa powder, light brown sugar, Worcestershire sauce, cinnamon, cayenne pepper, cumin, allspice, nutmeg, salt, and pepper. Stir ingredients thoroughly until combined.
  • Cover slow cooker and cook on LOW for 6-8 hours. Once cooked, stir chili well.
  • Serve Cincinnatiu00A0chili immediately as desired, such as one of the "ways" that include spaghetti and beans or garnished with cheddar cheese and yellow onion.

My latest chili recipe - I've found it tastes best if made the day before. Adjust the heat by using hot, medium or mild picante sauce and taco seasoning (I use hot for both). Red pepper flakes are optional, but I like it hot and use 2 teaspoons.

1 (16 ounce) jar picante sauce (mild, medium or hot)
2 (14 1/2 ounce) cans diced tomatoes, undrained
1 (1 1/4 ounce) packet taco seasoning (mild, medium or hot)
2 (15 ounce) cans chili beans, in sauce
1 (15 1/2 ounce) can dark red kidney beans, undrained
1 (15 ounce) can black beans, undrained
3 tablespoons chili powder
2 tablespoons ground cumin
1/2 teaspoon salt (optional)
1 teaspoon black pepper
1 teaspoon oregano
1/2-2 teaspoon red pepper flakes

Steps:

  • Mix all ingredients in Crock Pot.
  • Cover; cook on HIGH for 3 to 4 hours.
  • Note: To make on stovetop, mix all ingredients in a big soup pot; cover and simmer for about an hour or so.
