BAKED CINNAMON APPLES (CROCK POT)
This is a super rich indulgence that is very much like the middle of an apple pie. A great recipe for those apples that are sitting in your fridge that nobody wants to eat. Prep time includes time to peel the apples by hand (but you don't have to peel them if you don't want to). Enjoy!

Steps:
- Put all ingredients EXCEPT BUTTER into crock pot; stir well, coating all apple slices, and place slices of butter on top.
- Cook on HIGH for 1-1/2 to 2 hours OR cook on LOW 3-1/2 to 4 hours, stirring once half way through.
- Serve and enjoy!

- Sprinkle roast with salt and pepper. In a large skillet, brown roast in oil on all sides; cool slightly. With a paring knife, cut about sixteen 3-in.-deep slits in sides of roast; insert one apple slice into each slit., Place half of the remaining apples in a 4-qt. slow cooker. Place roast over apples. Drizzle with honey; top with onion and remaining apples. Sprinkle with cinnamon., Cover and cook on low for 6-8 hours or until meat is tender. Remove pork and apple mixture; keep warm., Transfer cooking juices to a small saucepan. Bring to a boil; cook until liquid is reduced by half. Serve with pork and apple mixture. Sprinkle with parsley if desired.

- In slow cooker, stir together sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, corn starch, and salt. Cube butter and stir into the mixture.
- Cook on low for 4 hours or high for 2 hours, stirring once during cooking.

CROCK POT BAKED APPLES
Old-fashioned comfort food that looks after itself until you're ready to serve it! Enjoy Baked Apples in summer without heating up the kitchen, or at any time of the year. Adapted from a recipe in Betty Crocker's "Slow Cooker Cookbook". If you are planning to make this recipe, please read Rita's experience with this recipe, and my notes below.

- Core apples, combine brown sugar and dried fruit (cranberries, raisins, cherries or mixed fruits) and fill the centres of the apples with the sugar/fruit mixture; place the apples in a 5- to 6-quart (5-6 litre) crock pot.
- Combine the wine or apple juice with the melted butter and pour it over the apples; sprinkle the apples with cinnamon and nutmeg; cover the crock pot and cook on low for 2 to 3 hours or until the apples are tender.
- To serve, spoon the apples into individual dessert dishes, spoon the wine/apple juices over the apples, sprinkle with chopped nuts and cream or ice cream.
- How ironic my introductory words: "looks after itself". True, but it seems crock pots sometimes have minds of their own and produce something other than what we had planned for them to make! From reading many reviews on Zaar, I've come to the conclusion that the results from crock pot recipes are sometimes more unpredictable than recipes made in other ways. I've not had anything like Rita's experience on this occasion, but rather the opposite, which is of course easier to deal with: I've several times had to continue cooking on low or to raise the setting to high with other crock pot recipes. And I've at times cooked crock pot recipes for hours longer than was specified, which has left me wondering how similar or different the low setting is on different brands of crock pot. Rita's experience suggests that the cooking time needs to be seriously adjusted so until I have a chance to check out this recipe and report back, which I will do VERY soon, I'm changing the cooking time from the four to six hours suggested in the original recipe to TWO to three hours, or until the apples are tender. I thank Rita for so graciously accepting the unforeseen fate of her beautiful apples. Such an enticing before picture! And when she looked into her crock pot - her second picture - after three hours cooking: what a shock! I'm just so glad that she hadn't gone off for six hours and left her apples and the crock pot to do their own thing - and I'm so pleased that at least the cooked apple sauce was delicious.

- Wash and core the apples, removing at least a 1" center in each apple. Set the apples on a plate. Stir together the dried fruit, pecans, brown sugar, salt and cardamom or cinnamon. Fill each apple with this mixture, packing it firmly into each apple.
- CROCK-POT DIRECTIONS: Place the filled apples in the bottom of the crock-pot. If you have a smaller crock-pot, you can raise a couple of the apples by sitting them on top of wadded up balls of foil in between the other two apples. (This is how I cooked ours this time.) Top each apple with a teaspoon of butter. Cover with lid and cook for about 2 hours on high, until the apples are fork tender. If you would like to cook on low, this should take 4-5 hours.
- OVEN DIRECTIONS: Preheat the oven to 425 degrees. Place the filled apples in a muffin tray. Top each apple with a teaspoon of butter. Bake until fork tender, about 20 minutes.
- Serve each apple with a dollop of Vanilla Bean Whipped Cream or a scoop of Vanilla Bean Ice Milk or Ice Cream, if desired. Enjoy!
