CROCK POT GLAZED CARROTS
This recipe is posted as part of a challenge during ZWT8 for France Region. I used Bayhill's recipe (Recipe #232735) as the base for changing her dish to a crockpot dish. I did tweak a few ingredients while making this in the crockpot as I felt the brown sugar would work better than granulated and added cinnamon as it reminds me of another recipe I have posted on Zaar.

Steps:
- Place all ingredients into a lightly sprayed 2 quart slow cooker; stir together.
- Place lid on slow cooker and cook on HIGH for 1 hour.
- Stir together one more time and then turn heat down to low and cook for an additional 2 1/2 - 3 hours (till done to the crispness you prefer is reached).

CROCK POT PORK ROAST, POTATOES, AND CARROTS
I decided to come up with my own Pork Roast recipe for a crock pot. I took a few ideas from the other recipes and this is what I came up with.

Steps:
- Rinse and dry roast.
- Combine all dry seasonings and rub onto roast.
- Use olive oil to brown the roast.
- Deglaze pan with chicken broth.
- Place potatoes, carrots, and roast into crock pot and set to low for 6 hours.

Steps:
- Spray 5- to 6-quart slow cooker with cooking spray. In slow cooker, mix carrots, parsnips and onions. Top with sweet potatoes.
- In small bowl, mix honey, oil, 2 teaspoons of the thyme, the salt and pepper. Pour over vegetables; stir to coat.
- Cover; cook on Low heat setting 4 to 5 hours or until vegetables are tender. Just before serving, add vinegar; stir gently. Sprinkle with the remaining 3 teaspoons thyme.

- Place all ingredients in a 3.5 - 4 quart slow cooker.
- Cook on HIGH for 3 hours, or until the carrots are tender. Lightly shake the crockpot WITHOUT removing the lid as soon as the butter has melted (about 15-30 minutes into cooking), to make sure the carrots are all coated.
- To thicken the glaze, remove the lid and cook for another 10-15 minutes, stirring with a wooden spoon from time to time.

CROCK POT GLAZED CARROTS WITH BROWN SUGAR AND CINNAMON
Steps:
- Rinse off the baby carrots with cold water and pour into the crock pot.
- Add the brown sugar, butter, orange juice, and ground cinnamon to the crock pot. Mix well to combine and break up the lumps of brown sugar.
- Mix the cornstarch with the water and pour into the crock pot. Mix to combine.
- Cook on high for 4-5 hours or low 7 to 8 hours or until the carrots are tender.
