1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon ground black pepper
2 pounds skinless, boneless chicken breast halves
2 tablespoons butter
¼ cup water
3 tablespoons fresh lemon juice
2 cloves garlic, minced
1 teaspoon chicken bouillon granules
1 teaspoon chopped fresh parsley

Steps:

  • In a bowl, mix the oregano, salt, and pepper. Rub the mixture into chicken. Melt the butter in a skillet over medium heat. Brown chicken in butter for 3 to 5 minutes on each side. Place chicken in a slow cooker.
  • In the same skillet, mix the water, lemon juice, garlic, and bouillon. Bring the mixture to boil. Pour over the chicken in the slow cooker.
  • Cover, and cook on High for 3 hours, or Low for 6 hours. Add the parsley to the slow cooker 15 to 30 minutes before the end of the cook time.

1 teaspoon dried oregano
1/2 teaspoon seasoned salt
1/4 teaspoon pepper
2 tablespoons butter
1/4 cup water
3 tablespoons lemon juice
2 garlic cloves, minced
1 teaspoon chicken bouillon granules
2 teaspoons minced fresh parsley
Hot cooked rice

Steps:

  • Pat chicken dry with paper towels. Combine the oregano, seasoned salt and pepper; rub over chicken. In a skillet over medium heat, brown the chicken in butter; transfer to a 5-qt. slow cooker. Add water, lemon juice, garlic and bouillon to the skillet; bring to a boil, stirring to loosen browned bits. Pour over chicken. , Cover and cook on low for 5-6 hours. 1 broiler-fryer chicken (cut up, or about 3 1/2 pounds of chicken pieces)
1 teaspoon leaf oregano (crumbled dry)
2 cloves garlic (minced)
2 tablespoons butter
1/4 cup dry wine, sherry,
1 ​cup of chicken broth , or water
3 tablespoons lemon juice

Steps:

  • Season the chicken pieces with salt and pepper. Sprinkle half of garlic and oregano over the chicken.
  • Melt butter in a sauté pan over medium heat and brown chicken on all sides.
  • Transfer chicken to crock pot. Sprinkle with remaining oregano and garlic. Add wine or sherry to the sauté pan and stir to loosen brown bits; pour into slow cooker.
  • Cover and cook on low (200 F) for 7 to 8 hours. Add lemon juice last hour.
  • Skim fat from juices and pour to a serving bowl; thicken juices, if desired.

1 ½ pounds boneless, skinless chicken breasts
2 Tablespoons butter
15 ounces chicken broth (or chicken stock)
6 Tablespoons lemon juice
4 cloves garlic (minced)
1 lemon (zested)
3 Tablespoons diced onion
1 teaspoon fresh parsley (chopped)
8 ounces cream cheese
3 cups cooked pasta

Steps:

  • In a small bowl, mix together the oregano, salt, and pepper. Rub the mixture into chicken.
  • Melt the butter in a skillet over medium heat. Brown chicken in butter for 3 to 5 minutes on each side. Place chicken in a slow cooker sprayed with non-stick cooking spray.
  • In the same skillet (don't rinse it out - everything that is left in that pan will add flavor!), mix the chicken broth, lemon juice, and garlic. Bring the mixture to boil. Pour over the chicken in the slow cooker. Add the lemon zest and diced onion on top of the chicken.
  • Cover and cook on high for 2-3 hours or low for 5-6 hours. Add the parsley to the slow cooker 15 to 30 minutes before the end of the cook time.
  • About 15 minutes before you're ready to serve, remove the chicken and place on a serving platter. Add the cream to cheese to the juice in the crock pot and whisk until smooth. Let cook on high heat for 15 minutes so that it can thicken up. If you want to make the sauce thicker, mix together 1 teaspoon cornstarch with 1 teaspoon cold water and whisk into sauce.
  • Serve over cooked pasta.

1 whole chicken, based on the size of your slow cooker - a 1.3kg chicken should just about fit into a 3.5L slow cooker - while a 6.5L would probably fit a 2kg chicken
4 lemons
10 cloves garlic, 8 whole and 2 halved
4 sprigs fresh rosemary
salt
pepper

Steps:

  • Remove any giblets etc. from the cavity of the chicken, sometimes in a small bag.
  • Stuff chicken with 1 sprig of rosemary, 1 lemon (quartered) and 4 cloves garlic.
  • Season all sides of the chicken with salt and pepper.
  • Remove both ends of a lemon, cut in half to create very thick slices.
  • Line the bottom of the slow cooker with 4 lemon slices, 4 whole garlic cloves and a sprig of rosemary.
  • Put the chicken in the slow cooker.
  • Cut 2 garlic cloves in half and put all four pieces on top of the chicken along with the 2 remaining lemon slices.
  • Garnish with 1-2 more sprigs of rosemary. Put the lid on the slow cooker and set to high for 4 hours.
  • Place cooked chicken under the grill (broil) for 10 minutes to crisp the skin (optional).
  • Allow chicken to rest for 10 minutes before carving and serving. Leftover juices in the slow cooker are mostly lemon juice with a bit of chicken fat and can be used sparingly as a strongly flavoured sauce.

This is a lemon herb garlic chicken dish which is made in a slow cooker to contain it's natural flavours. When we served it the meat fell away from the bone. If you wish to increase the celery and carrot you may do so without dramatically change the flavour of the dish. I normally remove the skin off the drumstick, which I recommended with this dish but feel free to leave it on. Everyone enjoyed it in our house hold, hope you will enjoy it.

20 g butter
1 kg chicken drumstick, with bone
1 stalk celery, chopped
1 carrot, chopped
1 1/4 cups chicken stock, liquid stock
1 lemon, juice of, freshly squeezed
1 spring onions or 1 green onion, finely sliced
3 garlic cloves, sliced
2 tablespoons fresh parsley, chopped
1 teaspoon dried oregano, ground
salt, to taste
ground black pepper, to taste

Steps:

  • In a hot non-stick pan, add butter and melt.
  • Add chicken drumstick and brown or seal chicken.
  • Place celery & carrot on base of crock pot/slow cooker.
  • Add brown chicken drumstick into the crock pot/slow cooker, making sure the chicken drumstick are not sitting on top of each other (must be laying side by side). Pour left over juices in the pan into the crock pot/slow cooker.
  • Pour chicken stock and lemon juice on top of drumstick.
  • Sprinkle onions, garlic, parsley, oregano, salt and black pepper on top of the chicken drumstick.
  • Cover and cook on 'Low' setting for 6-8 hours. (Depending on you crock pot/slow cooker, mine tenders to cook quickly even on the slower setting).
  • Serve with juices on rice or with crusty bread.
