This is my fiance's favorite slow cooker meal of mine. I usually serve it with the veggies over wild rice. You can turn this recipe for 2 into 4 by splitting the hens lengthwise after cooking.

2 Cornish game hens
1 (10.75 ounce) can golden mushroom soup (such as Campbell's®), divided
2 cups chopped baby portobello mushrooms
1 (7 ounce) jar pimento-stuffed green olives, drained and chopped
1 large zucchini, chopped
1 teaspoon garlic salt

Steps:

  • Coat the hens with about 1/4 of the mushroom soup.
  • Mix the remaining mushroom soup with mushrooms, olives, zucchini, and garlic salt in a bowl. Stuff the mixture inside the hens. Arrange hens, breast sides up, in the slow cooker. Spoon any remaining soup mixture over the hens.
  • Cook the hens in the slow cooker on High for 4 hours.

1/4 tsp paprika

Steps:

  • Spray a 4 quart crockpot with non-stick spray. Click for a 4 quart crockpot.
  • Cut the onion into quarters.
  • If you are using a full size potato, cut it into large bite size cubes.
  • Add the potatoes, onion, and carrots to the crockpot.
  • In a bowl, combine the garlic powder, paprika, salt, onion powder, oregano, thyme, and pepper.
  • Sprinkle half of the seasonings over the veggies.
  • Rinse the hens well under cold water, drain, and pat very dry with paper towels.
  • Place the Cornish game hens on top of the veggies.
  • Scatter the rest of the seasonings over the hens.
  • Cook on low for 8 hours.

Number Of Ingredients 14

⅔ cup freshly squeezed lemon or lime juice
⅔ cup extra virgin olive oil
4 cloves of garlic, peeled and minced
2 tablespoons fresh oregano leaves, roughly chopped
2 tablespoons fresh flat leaf parsley, roughly chopped
2 teaspoons Ras El Hanout Spice, divided
1 teaspoon Kosher salt
4 Cornish game hens (about 1 pound each), rinsed and dried thoroughly with paper towels
1 cup water or broth
½ small sweet onion, sliced thinly
½ teaspoon black pepper, freshly ground
½ teaspoon sweet paprika
12 baby red or gold potatoes
2 - 3 shallots, sliced in half

Steps:

  • Make your marinade:
  • Whisk together the lemon or limejuice, olive oil, garlic, oregano leaves, parsley, 1 teaspoon ras el hanout and salt in a bowl.
  • Divide the marinade in between two large zipper bags. Take two hens and place in each bag. Press out air before sealing. Place them in the fridge and let it marinade at least 4 hours or better yet, overnight.
  • When ready to roast the Cornish hens: Pre-heat the oven to 425F.
  • Place the hens and their marinade in a 9 x 13 oven proof dish. Add water or broth and arrange the slices of the onion and shallots around the hens. Sprinkle the hens with freshly ground black pepper, paprika and the remaining teaspoon of ras el hanout.
  • Roast for 20 minutes. Reduce the heat to 375F. Place in small potatoes and roast for another hour or 1 hour 15 minutes basting frequently, Always test the hens before serving to make sure the juices run clear and they are full cooked. Internal temperature should be 165F. Remove from oven and let rest for 10 minutes.
  • Let them rest for 20 minutes, garnish with fresh additional fresh oregano and serve.

1 Whole Cornish Game Hen ((Thawed if frozen, about 1 1/4 - 1 1/2 lbs.))
1 Whole Apple ((Any variety that is good for cooking with such as a Granny Smith, peeled & diced))
1 Whole Onion ((Small, diced))
1 Whole Orange ((Small, quartered))
1 Rib Celery ((Cut in half or chopped large))
4 Oz. Butter ((1/2 of a stick, softened))
1/4 Teaspoon Seasoned Salt
1/4 Teaspoon Freshly Ground Black Pepper
1/4 Cup Apple Cider ((Or apple juice))
12 Oz. 7UP Soda ((1 can))

Steps:

  • Remove Giblets if they are in Cornish Hen.
  • Tie Legs up with Tie.
  • While tying (tie it like you tie your shoes) Make very large loops, with the twine and then I put the loop around the wing of the bird, this will help keep the bird from falling apart as it is removed from the crock-pot.
  • Rub the bird with the butter inside and out.
  • Salt and Pepper inside of Bird.
  • Stuff bird with onions and apples and a stick of celery.
  • Salt and Pepper outside of bird.
  • Pour 7 up and Cider inside of bird.
  • Lay bird down, with legs up into a 5 quart or larger slow cooker.
  • Put onions underneath the wings of bird and arrange around bird.
  • Squeeze Oranges on Bird and they lay onto of Bird.
  • Feel free to put remaining Apples, Celery, Onions on Bird or into crock-pot.
  • Put remaining 7 up and apple cider into crock-pot.
  • Cook on low for 6-8 hours.
  • When it is done, use a Meat thermometer and make sure it has been cooked to at least 180 degree's.
  • I used two sets of meat thongs, one grabbing at the front end, one at the back end at the same time and pulled up.
  • Do not pull at the legs, or thighs as it will fall apart.
  • You can also use more twine before hand and tie around the bird and pull up that way, just be sure to grab at the entire bird at once, not at individual pieces.
  • Then put it under the broiler in your oven for 5 minutes to get the top to get darker and crispy, removing any onions, apples, or oranges that are on top of the bird.
  • Feel free to baste when you are bringing it out of the crock-pot and you can baste again after you take it out of the oven.
  • **These are often sold in groups of two..so you can do 2 at a time, if you have a very large crock-pot, just expect it to take the full 8 hours, and it will serve 6.

1 Cornish game hen
1 onion, roughly chopped
4 clove garlic
2 Tbsp olive oil
1/2 tsp salt
1/2 tsp ground pepper
1 tsp granulated garlic
1 tsp granulated onion
2 tsp dried rosemary or 2 fresh sprigs rosemary
1/4 c water or white wine

Steps:

  • 1. Sprinkle bottom of Crock Pot with half the salt and pepper. Then drizzle 1 Tbsp olive oil over the bottom of the pot. Rough chop the onion and spread over the bottom of the pot.
  • 2. Place frozen Cornish game hen on top of the onions. Drizzle the remaining Tbsp of olive oil on the bird. Rough chop the garlic and place half on top of the bird and the rest, let fall in the pot. Season the bird with salt, pepper, and garlic & onion seasoning. Top the bird with dried or fresh rosemary.
  • 3. Add a 1/4 cup of water or white wine to the pot. Cook on low heat setting for 6 hours or until the legs begin to fall away from body.
  • 4. To serve, cut the bird down the middle. Optional: Carefully remove the hen from the slow cooker and transfer to a small baking dish. Place in a 450 degree oven just until skin is crispy and golden brown.
  • 5. Cook 2 hens at a time for a larger family dinner or substitute a whole chicken. Just make sure to increase the cooking time to allow for the larger bird.

A complete meal in the slow cooker! Cook three Cornish game hens along with three russet potaotes for a wonderful hearty meal.

3 Cornish game hens (THAWED - this takes about 36 hours in the fridge)
3 medium-sized russet potatoes (washed and dried)
1/2 lemon
1 tsp. sea salt ((plus more for potatoes))
1/4 tsp. ground pepper ((plus more for potatoes))
1/4 tsp. paprika
1/2 tsp. basil
2 Tbsp. olive oil
toppings for baked potatoes such as butter, sour cream, chives and bacon bits.

Steps:

  • NOTE - THE GAME HENS NEED TO BE THAWED COMPLETELY. This takes about 36 hours in the fridge.
  • Remove the game hens from their packaging. Rinse them under cold water to remove any debris from their insides and any stuck pieces of ice.
  • Pat the game hens dry with paper towels.
  • Add the game hens breast up to the slow cooker.
  • Squeeze the lemon over the game hens.
  • Sprinkle them with the 1 teaspoon of salt, 1/4 teaspoon of pepper, paprika and basil. Be sure to sprinkle the paprika over evenly, this will keep the hens from looking pale after cooking.
  • Add the russet potatoes on top, I tuck the potatoes in the empty spaces around the chicken. (no need to pierce the potaotes with a fork)
  • Drizzle the olive oil over the potatoes. Sprinkle the potatoes with a touch of salt and pepper.
  • Place the lid on the slow cooker.
  • Cook for 7 hours on low. DO NOT OPEN THE LID DURING THE COOKING TIME. Check to see if the chicken is cooked through and the potatoes are tender before serving. Cook for an additional hour if your potatoes aren't tender, for every slow cooker cooks slightly different.
