STUFFED PORK CHOPS

Stuffed Pork Chops image

Stuffed pork chops, moist, tender and stuffed with cherries, dates, oranges & bleu cheese: you won't know which part of these you love the most!

Provided by Kathleen

Categories     Main Course

Time 1h15m

Number Of Ingredients 19

3/4 Cup Light Brown Sugar (Firmly Packed)
1/4 Cup Table Salt
6 Cups Water
4 Center Cut Rib Chops, (Bone In, 1 1/2 Inch Thick)
1 Tablespoon Vegetable Oil
1 Large Red Onion, (Halved and Sliced 1/8 Inch Thick)
1 Tablespoon Granulated Sugar
3/4 Cup Port
1/3 Cup Pitted Dates, (Chopped)
1/3 Cup Dried Sour Cherries
1 Orange, (Cut Into 4 Wedges)
3 Tablespoon White Wine Vinegar
2 Teaspoons Fresh Thyme (Minced)
1/4 Teaspoon Table Salt
1/3 Cup Pecans (Toasted, Chopped)
Salt
Pepper
2 Tablespoon Vegetable Oil
3/4 Cup Blue Cheese (Crumbled)

Steps:

  • In a large bowl or container that can accommodate all the water and pork chops, dissolve brown sugar and salt in water.
  • Using a sharp knife, cut a pocket, on the fatty side of the pork chop, almost to the other side but not through. Submerge pork chops in brine, cover and refrigerate 1 hour.
  • Meanwhile, in a medium, heavy-bottomed saucepan, heat 1 tablespoon oil over medium heat until it begins to shimmer. Add onions and granulated sugar and cook, stirring often, until the onions are soft and browned about 20-25 minutes.
  • As the onions cook, mix the port, dates, and cherries in a microwave safe bowl. Cover top with plastic wrap and microwave on high until the mixture is simmering, about 1 minute. Set aside.
  • In a small bowl, squeeze the oranges to yield 1/4 cup of juice. Reserve juiced wedges (this recipe will use them again in a later step).
  • When the onions are browned, add in the simmered fruit mixture, the orange juice, 2 tablespoons of the vinegar, and thyme. Continue to cook the mixture until it becomes thick and jamlike, about 10-12 minutes. Add the remaining 1 tablespoon of vinegar and pecans and season with salt and pepper to taste. Allow mixture to sit until it's just warm, about 10-15 minutes.
  • Adjust oven rack to the lower-middle position and place a rimmed baking sheet on rack. Heat the oven to 450 degrees.
  • Remove chop from brine and rinse with water. Dry chop well with paper towels. Place 1/4 of the filling in the pocket of each chop. Trim orange wedge, as needed, to fit into the outside opening of porkchop to contain the filling. Season chops with salt and pepper.
  • In a 12 inch, heavy bottom skillet, heat 2 tablespoons oil until just beginning to smoke. Carefully place chops in hot skillet and brown well, about 3 minutes. Flip chops and brown well on the second side, about 2-3 minutes. (don't move chops until its time to flip them or they won't develop a nice brown crust).
  • Using tongs, move browned chops to preheated baking sheet in the oven. Cook chops, flipping halfway through until an instant-read thermometer inserted into the center of the stuffing reads 135 degrees, about 15 minutes. Transfer chops to a plate and loosely cover with foil. Allow to rest for 10 minutes. Sprinkle with blue cheese and serve immediately.

CROCK POT PORK CHOPS WITH MUSHROOM GRAVY

Crock Pot Pork Chops with Mushroom Gravy image

These Crock Pot Pork Chops are smothered in a delicious mushroom gravy. Cooking pork chops in the slow cooker is an easy way to make flavorful, tender pork chops!

Provided by Kristine Rosenblatt

Categories     Main Course     Slow Cooker

Time 2h20m

Number Of Ingredients 14

4 thick cut pork chops (at least 1 inch thick, boneless or bone-in)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
½ teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon unsalted butter
1 tablespoon olive oil
1 medium yellow onion (sliced)
8 ounces mushrooms (crimini or white, sliced)
3 cloves garlic (minced)
¼ cup all-purpose flour
1 ¾ cups low sodium chicken broth

Steps:

  • Combine garlic powder, onion powder, dried thyme, paprika, salt and pepper in a small bowl. Rub over both sides of pork chops.
  • Heat the butter and olive oil in a large skillet over medium-high heat until the butter is melted. Add the pork chops to the pan and brown on both sides, about 2 minutes per side. Remove pork chops to a clean plate.
  • Add the onion and mushrooms to the skillet. Cook, stirring often, until they begin to soften, about 5 minutes. Add the garlic and cook, stirring, for 30 seconds.
  • Stir in the flour followed by the chicken broth. Cook, stirring and scraping up any bits stuck to the bottom of the skillet, for a few minutes until the broth simmers and thickens. It should lightly coat the back of a spatula. Remove pan from the heat.
  • Pour the contents of the skillet into the slow cooker. Place the pork chops on top. Cover and cook on low setting for 1 ½ to 3 hours. Pork chops are done when they reach an internal temperature of at least 145° F. (In my slow cooker, 1-inch thick boneless pork chops need about 1 ½-2 hours to cook through and bone-in take about 2 ½-3 hours.) Try to avoid over-cooking the pork chops, as that will make them dry.*
  • Optional: To further thicken the gravy, remove the cooked pork chops to a clean plate and cover with foil. Turn the slow cooker up to high. In a small bowl, stir together 1 tablespoon cornstarch and 1 tablespoon water. Pour the cornstarch mixture into the slow cooker and stir. Cook on high for 15-20 minutes, until the gravy thickens slightly. (Alternatively, you can heat the gravy in a pot on the stove over medium heat, stirring, for a few minutes until thickened.)
  • Season with additional salt and pepper, to taste. Serve pork chops with mushroom gravy.

  • Season tops of chops with Creole Seasoning to taste.
  • Pour Cream of Mushroom Soup over top.
  • cook on low 6 - 8 hours until done.
