SLOW-COOKER PULLED PORK SANDWICHES

1 2-pound boneless pork shoulder, cut into 2-inch pieces
1/2 onion, roughly chopped
4 cloves garlic
Kosher salt and freshly ground pepper
3/4 cup ketchup
2 tablespoons spicy yellow mustard
2 tablespoons packed light brown sugar
1/4 cup sliced pickles, plus 2 tablespoons brine
2 teaspoons hot sauce
2 tablespoons vegetable oil
4 slices Texas toast or other thick white bread
1 1/4 cups prepared coleslaw

Steps:

  • Combine the pork, onion, garlic, 1/2 cup water, 1 teaspoon salt and a few grinds of pepper in a 6- to 8-quart slow cooker. Cover and cook on low, 7 hours.
  • Remove the pork and garlic from the slow cooker to a bowl using a slotted spoon. Strain the juices, discarding the onion; transfer 3/4 cup of the juices to a small saucepan. Add the ketchup, mustard, brown sugar, pickle brine and hot sauce. Cook over medium-high heat, stirring occasionally, until the sauce is just starting to simmer and thicken, about 5 minutes.
  • Heat the vegetable oil in a large skillet (preferably cast-iron) over high heat. Add the pork and garlic; shred the meat with two forks. Cook, stirring occasionally, until the pork is crisp and golden, about 5 minutes. Season with salt and pepper.
  • Toast the bread. Top with the pork, sauce and coleslaw. Serve with the pickles.

While I'm all for pulled pork that's slow-smoked, sometimes I need my barbecue fix faster and with less prep (and less mess). This Instant Pot version is just as juicy and tender, and you can pile it onto buns or tortillas in 60 minutes or less. For a fun twist on bread-and-butter pickles, make sweet and tangy zucchini pickles. A quick brine flavored with garlic and spices adds big flavor to summer's star produce.

1 tablespoon paprika
1 tablespoon packed light brown sugar
2 teaspoons dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon mustard powder
Kosher salt
One 3-pound boneless pork shoulder, trimmed and quartered
1/2 cup apple cider vinegar
2 cups water
2 tablespoons liquid smoke
2 cups homemade or store-bought barbecue sauce
Buns or tortillas, for serving
1 pound zucchini, thinly sliced into rounds (see Cook's Note)
Kosher salt
1/2 cup thinly sliced shallots
2 cloves garlic, thinly sliced
3/4 cup apple cider vinegar
3/4 cup water
3/4 cup granulated sugar
2 teaspoons mustard seeds
1/4 teaspoon celery seeds
1/4 teaspoon ground turmeric
1 bay leaf
1/2 teaspoon crushed red pepper (optional)

Steps:

  • For the pork: In a small bowl, whisk together the paprika, brown sugar, oregano, garlic powder, onion powder, mustard powder, and 2 teaspoons kosher salt. Rub all over the pork.
  • Transfer to a 6- to 8-quart Instant Pot® multi-cooker and add the vinegar, water and liquid smoke. Cover and set it to "Pressure Cook" for 60 minutes. (This is a good time to make the zucchini pickles.)
  • Once the pork is done cooking, transfer it to a cutting board. Using two forks, shred the pork into pieces then transfer it to a large bowl and stir in the barbecue sauce. Serve it immediately or cover and refrigerate until ready to serve, up to 3 days. Reheat gently before serving.
  • For the pickles: Put the zucchini in a large heatproof bowl then sprinkle it with 1 tablespoon kosher salt. Let sit for 1 hour then rinse with water and drain. Return the zucchini to the bowl, add the shallots and garlic.
  • In a medium saucepan, combine the vinegar, water, granulated sugar, mustard seeds, celery seeds, turmeric, bay leaf and crushed red pepper. Bring the mixture to a boil over medium-high heat then remove from the heat and let cool for 10 minutes.
  • Pour the pickling liquid over the vegetables and let cool to room temperature. Transfer to jars or an airtight container and refrigerate for up to 1 month.
  • Pile the pulled pork onto the buns or tortillas, top with zucchini pickles, and serve right away.

Steps:

  • Combine 1 tablespoon brown sugar, the paprika, mustard powder, cumin, 2 teaspoons salt and 1/2 teaspoon pepper in a small bowl. Rub the spice mixture all over the pork.
  • Heat the vegetable oil in a large skillet; add the pork and cook, turning, until browned on all sides, 5 minutes. Remove the pork and transfer to a plate; whisk 3/4 cup water into the drippings in the skillet. Transfer the liquid to a 5-to-6-quart slow cooker.
  • Add the vinegar, tomato paste, the remaining 2 tablespoons brown sugar and 2 cups water to the slow cooker and whisk to combine. Add the pork, cover and cook on low, 8 hours.
  • Remove the pork and transfer to a cutting board. Strain the liquid into a saucepan, bring to a boil and cook until reduced by half, about 10 minutes. Season with salt.   • 1. In a medium saucepan, stir together the ketchup, bourbon, ¼ cup brown sugar, and ½ teaspoon smoked paprika. Bring to a boil, then reduce the heat to simmer for 10 minutes. 2. Meanwhile, in a 5- to 6-quart slow-cooker bowl, combine the remaining ¼ cup brown sugar, 2 teaspoons smoked paprika, 1½ teaspoons salt, and 1 tablespoon freshly ground black pepper. Add the pork and rub the mixture all over the meat. Turn the pork fat side up. 3. Pour ¼ cup sauce and 1 cup water into the slow-cooker bowl. Refrigerate the remaining sauce for serving. One 12-ounce can pop (I use Dr. Pepper)
One 18-ounce bottle BBQ sauce
1 tablespoon hot sauce
1/4 cup brown sugar

Steps:

  • Place the onion slices in the bottom of a slow cooker. Sprinkle the pork with the salt, pepper and garlic powder, then place it on top of the onions. Crack open the can of pop and pour it over the whole thing. Add the whole bottle of BBQ sauce and the hot sauce, then add the brown sugar to the liquid and stir.
  • Put on the lid, set the slow cooker to high and cook for 6 hours. When it's done, the pork will be dark and weird and wonderful. It'll also be fork-tender. That's when you know it's done.
  • Remove the meat from the slow cooker and shred completely. Spoon the fat from the sauce. Return the meat to the slow cooker and keep in the sauce until ready to serve. Divine!

1 extra large onion, chopped

I have a favorite pork recipe for pulled pork, but saw this on MSN and wanted to try it. And let me say this is a new favorite. The sauce has just the right amount of kick and the cooking method is easy. This porbably could be done in the crock pot too.

1 tablespoon extra virgin olive oil
2 medium yellow onions
2 tablespoons chili powder
1 tablespoon cumin
2 teaspoons paprika
1 teaspoon cayenne pepper

3/4 cup ketchup
3/4 cup cider vinegar
1/2 cup whole grain mustard
2 tablespoons tomato paste
1 chipotle chile in adobo

Steps:

  • Preheat oven to 300°F Heat oil in a large Dutch oven over medium-low heat. Add onions and cook, stirring occasionally, until lightly browned and very soft, about 20 minutes.
  • Increase heat to high; add chili powder, cumin, paprika and cayenne and cook, stirring, until fragrant, 1 minute. Add beer, ketchup, vinegar, mustard, tomato paste, chipotle pepper and adobo sauce; bring to a boil. I found this pulled pork recipe years ago, and it's a favorite at potlucks. Freezes well for easy quick meals.

4 lbs pork roast (shoulder or butt)
2 large onions
1 cup ginger ale
1 (18 ounce) bottle favorite barbecue sauce (I like Sweet Baby Ray's)
barbecue sauce, for serving (optional)

Steps:

  • Slice one onion and place in crock pot.
  • Put in the roast and cover with the other onion, sliced. Pour over the ginger ale. Cover and cook on LOW for about 12 hours. See Note2 below regarding amount of time needed!
  • Remove the meat, strain and save the onions, discard all liquid. With two forks, shred the meat, discarding any remaining fat, bones or skin. Most of the fat will have melted away.
  • Return the shredded meat and the onions to the crock pot, stir in the barbecue sauce. Continue to cook for another 4 to 6 hours on LOW.
  • Serve with hamburger buns or rolls and additional barbecue sauce. Any leftovers freeze very well.
  • TIP: freeze ready-made sandwiches - a scoop of meat on a bun, well-wrapped. These make a great quick meal or snack. To reheat, remove wrapping, wrap in a paper towel, and zap 1-2 minute in the microwave.
  • Note: Shoulder or butt are recommended because the meat shreds very well. Other cuts do not shred as readily. It is a fattier cut, but the fat melts away in the cooking and is poured away when you discard the liquid.
  • Note 2: I have an older, smaller crock pot. The above times work perfectly for me. But if you have a newer or bigger crock pot, you may need to revise times downward, esp. after the bbq sauce is added. I think you need at least a couple of hours for it all to meld, but that may be all you need. Update: I recently bought a bigger crockpot, I think 5 or 6 qts. I cooked a 6 lb pork shoulder in it for 8 hours and it was shreddable at that point. Shredded, added the sauce, and cooked for another hour or so to meld everything. So use your best judgment on timing!
  • Note3: You might want to turn your roast over after it's cooked a while, to ensure more even cooking. I think this may depend on the size and shape of your roast and the size of your slow cooker. Remember that each time you remove the lid you lose heat and be careful, as turning a large piece of meat is awkward.
  • Note4: my sister says this takes 2 hours in the Instapot. I don't have one, up to you to figure out the steps.

3 tablespoons dark brown sugar
2 tablespoons cajun seasoning
1 tablespoon salt
1 tablespoon cumin

1/2 tablespoon mesquite powder
1/2 cup frozen apple juice concentrate
1/2 cup cider vinegar

Steps:

  • Combine the rub spices and coat the shoulder.
  • Bag the rubbed shoulder overnight in the fridge.
  • Put Apple juice and vinegar in crock pot and add the shoulder and the rub that's stuck on it.
  • Start the pot on high, turn down to med after an hour and a half.
  • Cook for 12 hours total, 10 hours if your pot has no medium setting.
  • Remove the shoulder and let rest for at least half an hour.
  • Pull shoulder apart with a couple of forks.
  • Place the pork on a cheap bun or Wonder bread with your favorite barbecue sauce and some slaw if you want to be traditional.

Last year I received a crock pot cookbook with a recipe in it for pulled pork. It was nice but I thought the sauce it made in the pot was a bit too thin. I made several changes and am happy with this recipe so its time to share it! I sometimes have to water the sauce down now. The sauce/marinade can be made up to 3 days in advance and kept in the fridge until needed. Marinating time is not included. I make this in my 3 1/2 quart crock pot.

2 medium onions, very finely chopped
6 garlic cloves, crushed

1/4 cup brown sugar
1 1/2 tablespoons Worcestershire sauce

3/4 cup finely chopped stoned prunes or 3/4 cup dates
1/4 cup cider vinegar

  • In a frying pan heat the oil over medium heat, add the onions and fry for 8-10 minutes until soft.
  • Add the garlic, chili powder and pepper and cook for another 2 minutes, constantly stirring.
  • Now add tomatoes, sugar, Worcestershire, liquid smoke, soy, sage and prunes.
  • Stir, bring to a boil and simmer for 2 minutes, take off the heat and cool.
  • Whilst the sauce is cooling add the vinegar( it will leave a less pungent smell in your kitchen).
  • Leave the sauce until cold, it will become quite thick.
  • Slash the pork several times with a sharp knife, cover completely with the sauce, place in a bowl, cover and leave in a cool place for 10-12 hours.
  • When ready to cook place in your crock pot and cook on low for 10 to 12 hours (my crock pot needs the full 12 hours).
  • Transfer the pork onto a cutting board and pull the meat apart to shreds with two forks.
  • I then add some of the sauce to it and serve the rest on the side but you can mix the meat up with all the sauce.
  • If you find the sauce too thick just add some water to it.
  • Serve over warm buns and I hope you enjoy it!
