CROCK POT MEATLOAF
This meatloaf is a breeze to make, holds together and slices nicely- a problem I have had with meatloaves in the past. It is a sure winner from my mother-in-law, who is a fabulous cook. Feel free to experiment with Ro-Tel tomatoes or other ingredients.

Steps:
- To remove loaf when done, line crock with wide strip of aluminum foil, coming up sides of crock.
- In a large bowl combine eggs, milk, bread crumbs, and soup mix. Mix well, then add meat. Mix thoroughly, then shape into a rectangle or oval that won't touch sides of crock. Place in crock. Cover and cook on low for 6 hours or high for 3 hours.
CROCK POT MEATLOAF
An easy meal to make regardless if in crock pot or oven...still I love crock pot recipes because you can come home and dinner is done! Tomatoes may be changed to alternate topping of your chose. Also you may freeze this meatloaf and drop in the crock pot...cook a couple of hours more.

Steps:
- Place the milk and the bread in a large mixing bowl, and let stand until the bread has adsorbed all the milk.
- With two forks, break the bread into crumbs.
- Beat the ground beef into the crumbs until well mixed.
- Make a hollow in the center of the meat and break the eggs into it.
- Beat the eggs a little; then grate the onions into the eggs.
- Add garlic, salt, pepper and mustard.
- Beat the eggs into the beef.
- Shape into a round cake and place in the slow cooker.
- Drain the tomatoes, and place them on the meat.
- Cover and cook on Low for 5 to 7 hours.

MAGIC CROCK POT MEATLOAF
This recipe came with my Rival crock pot. The meat loaf is very moist and tender on the inside and a little bit crunchy around the outer edges. I cook mine on low for 9 hours.

- Reserve 2 T. ketchup.
- Combine ground beef, eggs, oats, soup mix and remaining ketchup.
- Shape into loaf and put into crock pot.
- Top with remaining ketchup.

Steps:
- Mix all ingredients in a large bowl.
- Form into a meatloaf shape that will fit into your crock pot.
- Put foil under the meatloaf in crock pot.
- Cut it long enough to cover the bottom and sides of meatloaf.
- Place meat loaf in crock pot and top with an additional 3-4 tablespoons ketchup.
- Cover and cook on high for 2-2 1/2 hours.
- I served this with roasted potatoes with parmesan and herbs!
MEATLOAF - CROCK-POT
I have 3 kids on 3 different sports teams, so during baseball season I do a lot of crockpot cooking since it seems like I'm always on the run. I was intrigued by the idea of cooking meatloaf in the crockpot but the couple of recipes I tried were very greasy and fell apart too easily. I came up with this recipe that my family really enjoys. I think the potatoes on the bottom are really key to the success of the result because they keep the meat up off the bottom and let it cook out of the liquid. I know the recipe is going to seem like too little liquid to start with, but the crockpot retains all the liquid inside and really is enough. Let me know what you think.

- Spray crockpot with non-stick cooking spray to help make clean up easier. Layer sliced potatoes and onions on bottom.
- Mix all the meatloaf ingredients together really well. I use an electric mixer to make sure everything is evenly mixed.
- Shape into an oval loaf and lay on top of the potatoes and onions - try to not let it touch the sides of the crock to prevent the heat of the crock from overcooking the meatloaf.
- Mix all the topping ingredients together and spoon on top of the meatoaf. Cook on high for an hour, then turn the crockpot down to low and cook an additional 4-5 hours or till its done all the way through.
- Add a salad and dinner is complete! Enjoy.

- Cut three 25x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on the bottom and up the sides of a 4- or 5-qt. slow cooker. Coat strips with cooking spray., In a large bowl, combine the first nine ingredients. Crumble beef and sausage over mixture and mix well (mixture will be moist). Shape into a loaf. Place meat loaf in the center of the strips., In a small bowl, combine sauce ingredients. Spoon over meat loaf. Cover and cook on low 3-4 hours or until no pink remains and a thermometer reads 160°. Using foil strips as handles, remove the meat loaf to a platter.

Steps:
- Combine beef, egg, and other ingredients (excluding milk and ketchup or salsa)in a mixing bowl.
- Use hands to evenly distribute ingredients among ground beef.
- Pour mixture into crock pot, shape into a loaf.
- Top with ketchup or salsa, spreading evenly on top of loaf.
- Pour milk on bottom of crock pot (this keeps the meatloaf moist and from sticking to the pot).
