Our slow cooker recipe for smothered steak with tomatoes and peppers is made with sirloin tips, or use lean, budget-friendly chuck or round steak.

1 1/2 pounds sirloin tips (cut into ​pieces or strips)
4 tablespoons flour
2 tablespoons vegetable oil or extra virgin olive oil
1 large green bell pepper (sliced in strips)
1 large onion (quartered and sliced)
1 can (4 ounces) sliced mushrooms (drained, optional)
1 can (14.5 ounces) diced tomatoes
3 tablespoons low sodium soy sauce
1/2 teaspoon garlic powder
1/4 teaspoon freshly ground black pepper
1/4 teaspoon crushed red pepper (optional)

Steps:

  • Put the steak pieces in a bag with the flour and shake to coat.
  • Heat the vegetable oil in a large skillet or sauté pan over medium-high heat (or the crock pot insert if it is stovetop safe) and brown the steak pieces on all sides. Place the steak in the crock pot insert if you didn't use it for browning it.
  • To the steak add the bell pepper, sliced onion, and drained sliced mushrooms, if using.
  • Combine the tomatoes with the soy sauce, garlic powder, black pepper, and crushed pepper, if using. Pour over the steak and vegetables.
  • Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 4 to 5 hours.

1/4 teaspoon pepper
1 green pepper, sliced
1 (16 ounce) can tomatoes
3 tablespoons soy sauce
1/3 cup flour
1 teaspoon salt
1 large onion, sliced
8 ounces mushrooms
1 (10 ounce) package frozen French-cut green beans

Steps:

  • Place steak strips, flour, salt, and pepper in crock pot, stirring well to coat steak.
  • Add remaining ingredients.
  • Cover and cook on low 8 hours or high for 4 hours.
  • Serve with rice.

21 oz condensed cream of mushroom soup ((2 10.5 ounce cans))
1 packet Lipton Onion Soup Mix ((use Recipe Secrets Onion or Beefy Onion flavor))
1/4 tsp ground black pepper ((to taste))
3/4 cup water ((optional, for thinner gravy))
1 1/2 lbs cube steaks ((4-6 cube steaks))
1 medium yellow onion ((or white onion, sliced))
4-8 oz mushrooms ((optional, sliced))

Steps:

  • Combine the cans of cream of mushroom condensed soup with the Lipton Onion Soup Mix and ground black pepper (plus water if desired) in your crock pot. Mix until well combined.
  • Layer the cube steaks over the 'gravy' mixture adding one at a time. Top each cube steak with some of the sliced onions as you add them, staggered in shingle-fashion, over the cream of mushroom base. Top with optional sliced mushrooms (white mushrooms or cremini) if desired.
  • Set your crock pot to high and cook for 6 hours. Serve over rice, potatoes, or pasta.

1/2 cup all-purpose flour
1 tablespoon ground mustard
1/2 teaspoon salt
1/8 teaspoon pepper
2 (1 lb) beef flank steaks, halved
2 tablespoons butter or 1/2 cup margarine
1 cup thinly sliced onion
1 (28 ounce) can crushed tomatoes
2 tablespoons Worcestershire sauce
1 tablespoon brown sugar

Steps:

  • In a large plastic bag, combine the flour, mustard, salt and pepper.
  • Add steaks and shake to coat.
  • In a large skillet, brown steaks on both sides in butter.
  • Transfer to crock pot.
  • Top with onion.
  • In a bowl, combine the tomatoes, Worcestershire sauce and brown sugar.
  • Pour mixture over meat and onion.
  • Cover and cook on low for 6-8 hours or until meat is tender.

This is really basic, but turns out well every time. I'm sure all of the readers can add their own touches to make it their own. I think the Franco American brand gravies are now Campbell's.

3 lbs beef round steak
1 (10 1/2 ounce) can beef gravy, Franco American
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can water
1/2 onion, sliced (thinly)
1 (2 ounce) package onion soup mix
1 (8 ounce) jar mushrooms (optional)

Steps:

  • Mix gravy, soup, and water in a bowl. Place all ingredients except mushrooms in crock pot. Cook on low 6 to 8 hours. Add mushrooms during the last half hour. Add Kitchen Bouquet to color if gravy is too pale.
  • Serve gravy over rice or mashed potatoes.
  • Variations:
  • Use 1 can mushroom gravy in place of mushroom soup.
  • Use cream of celery soup in place of mushroom soup.
