28 oz can crushed tomatoes (or 15 oz Crushed Tomatoes and 15 oz Diced Tomatoes with Basil, Oregano and Garlic)
15 oz can tomato sauce
12 oz can tomato paste
1/2 cup onion (chopped)
2 cloves garlic (minced)
3 Tablespoons sugar
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1 lb pork sausage (browned, drained)
8 oz can mushrooms (drained)
32 oz spaghetti ((2-16 oz pkgs) cooked (if using immediately))

Steps:

  • Place all your ingredients in your crock pot except for your spaghetti.
  • Stir until well combined.
  • Cover and cook on low for 8 hours.
  • Serve over spaghetti noodles or divide into two gallon freezer bags and freeze flat or two freezer containers

1 pound ground beef
½ pound Italian sausage (or use all ground beef)
1 large onion (diced)
4 cloves garlic (minced)
28 ounces diced tomatoes canned (do not drain)
24 ounces tomato sauce
14 ounces crushed tomatoes
6 ounces tomato paste
1 small green bell pepper (diced)
½ cup water
2 tablespoons Worcestershire sauce
1 ½ tablespoons Italian seasoning
1 teaspoon sugar
½ teaspoon seasoned salt (or to taste)
2 tablespoons each fresh parsley and basil (plus extra for garnish if desired)

Steps:

  • Brown ground beef, sausage, onions, and garlic until no pink remains. Drain any fat.
  • Add beef mixture and remaining ingredients (except fresh herbs & pasta) to crock pot.
  • Cook on High for 4 hours or low for 6-8 hours. Stir in fresh herbs just before serving.
  • Prepare spaghetti or pasta al dente according to package directions. Drain well.
  • Top spaghetti with meat sauce. Garnish with additional herbs if desired.

This is a spaghetti sauce recipe that I've developed over time. You may alter the ground meat as you please; sometimes I use all ground beef when I find a good sale but half beef/half pork is pretty tasty. My crock pot is my best friend at times when I'm having busy days at work but still want a decent meal on the table for my family. I serve spaghetti with crusty bread and a romaine salad. Cook time is the crock pot cooking time. This recipe is for a 4 quart crock pot, halve it if your pot is smaller.

1 lb ground beef
1 lb ground pork
1 medium onion, chopped fine
2 (28 ounce) cans diced tomatoes, with juice
2 (6 ounce) cans tomato paste
2 (8 ounce) cans tomato sauce
2 bay leaves
5 garlic cloves, pressed
4 teaspoons dried oregano
1 1/2 teaspoons salt
4 teaspoons dried basil
3 tablespoons brown sugar
1 teaspoon dried thyme

Steps:

  • Brown meats and onion in a skillet and drain well.
  • Transfer to your crock pot.
  • Add remaining ingredients and mix well.

1 medium onion, chopped
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 can (6 ounces) tomato paste
1 bay leaf
1 tablespoon brown sugar
4 garlic cloves, minced
1 to 2 teaspoons dried basil
1 to 2 teaspoons dried oregano
1 teaspoon salt
1/2 to 1 teaspoon dried thyme
Hot cooked spaghetti

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. , Transfer to a 3-qt. slow cooker. Add the next 10 ingredients. Cover and cook on low for 7-8 hours or until heated through. Discard bay leaf. Serve with spaghetti.

10 roma (plum) tomatoes - peeled, seeded and crushed
½ small onion, chopped
1 teaspoon minced garlic
¼ cup olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon ground cayenne pepper
1 teaspoon salt
1 teaspoon ground black pepper
1 pinch cinnamon

Steps:

  • Place tomatoes, onion, garlic, and olive oil in a slow cooker. Season with oregano, basil, cayenne pepper, salt, black pepper, and cinnamon.
  • Cover, and cook 10 to 15 hours on Low. The longer you simmer it the more flavorful it becomes. At 10 hours it's really good, but at 15 its even better.

25 pounds tomatoes
4 large green peppers
4 large onions
4 cans tomato paste
2/3 cup sugar
1/4 cup salt
8 garlic cloves, minced
4 teaspoons dried oregano
2 teaspoons dried parsley flakes
2 teaspoons dried basil
2 teaspoons crushed red pepper
2 teaspoons Worcestershire sauce
2 bay leaves
1 cup lemon juice, divided

Steps:

  • Skin Tomatoes: Core Tomatoes, and paper thin slice off the bottom. Then in a Dutch Oven, bring 8 quarts of water to boil. Use a slotted spoon to place tomatoes in the pot one at a time 30 to 60 seconds. Remove each tomato and immediately plunge in ice water. Peel & Quarter In a food processor, cover and process peppers, onions & garlic until finely chopped. Cover a frying pan with a coat of Olive Oil and brown the garlic, peppers and onion. In a 16 quart stockpot, combine the tomatoes, green peppers garlic, onion mixture, tomato paste, oil, sugar, salt, oregano, parsley, basil, pepper flakes, Worcestershire sauce and bay leaves. Bring to a boil. Reduce heat: simmer, uncovered, for 4 to 5 hours, stirring occasionally. Discard Bay Leaves. Canning: Add 2 tablespoons lemon juice (or 1/2 teaspoon citric acid powder) to each of hot quart jars. Ladle hot mixture into jars, leaving 1/2 head space to the lid. Remove air bubbles, wipe rims, and adjust lids to finger tight. Process for 40 minutes in a boiling water bath.

Great tasting sauce. I wanted a recipe that would provide a smooth texture as well as have a few chunks in it. I like chunks but children prefer smooth. A compromise that works for us. Since tomatoes vary in acid levels adjust seasonings and sugar to your tastes.

Number Of Ingredients 9

18 lbs fresh tomatoes (which should equal to 4 gallons washed, peeled and chopped tomatoes)
3 cups onions, chopped
4 -8 garlic cloves, roasted
1 -4 teaspoon olive oil
1/8-1/4 cup canning salt, start with less and add more to taste
6 -8 tablespoons sugar, start with less and add more to taste
2 tablespoons dried oregano leaves
1 tablespoon dried basil leaves
2 (6 ounce) cans tomato paste

Steps:

  • Prepare tomatoes, washed, peeled and chopped. Reserve 4 cups and set aside.
  • Prepare garlic. To roast garlic place garlic cloves on aluminum foil and drizzle with olive oil. wrap foil around garlic, sealing edges. Roast at 350 degrees for 30 minute or until tender. Cool and remove papery skins.
  • Saute 3 cups chopped onion until translucent. Reserve 1 cup and set aside.
  • Mix all ingredients except reserved tomatoes and onions. Cook tomato mixture over medium heat until heated through and then simmer for 30 minutes.
  • Using a food processor or immersion blender and puree tomato mixture until smooth.
  • Continue simmering for another hour to an hour and a half until tomato sauce thickens.
  • Add reserved tomatoes and onion.
  • Adjust seasonings to taste.
  • Heat thoroughly.
  • Ladle sauce into hot jars leaving a 1 inch headspace. Process pints 20 minutes and quarts 25 minutes at 10 lbs pressure in a steam-pressure canner.
