Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain. Transfer to a 4-qt. slow cooker. Stir in the remaining ingredients. Cover and cook on low for 5-6 hours or until heated through.

2 pounds breakfast sausage, casings removed, meat broken up
Nonstick cooking spray, for the slow cooker
One 30-ounce bag frozen shredded hash brown potatoes
1 red bell pepper, finely diced
1 orange bell pepper, finely diced
2 cups (8 ounces) shredded mild Cheddar
1 medium red onion, finely diced
2 cups (8 ounces) shredded whole-milk mozzarella
12 large eggs, lightly beaten
1 cup whole milk
1 teaspoon paprika
Kosher salt and freshly ground black pepper
2 scallions, thinly sliced
Hot sauce and ketchup, for serving

Steps:

  • Cook the sausage in a large nonstick skillet over medium-high heat until browned and cooked through, 6 to 8 minutes. Using a slotted spoon, transfer the sausage to a bowl to cool slightly and discard any fat left behind in the skillet.
  • Coat the insert of a 6-quart slow cooker with cooking spray. Layer half of the hash brown potatoes with half the sausage. Toss the bell peppers with the Cheddar, red onion and 1 cup of the mozzarella. Layer half the mixture over the sausage, then repeat the layering with the remaining potatoes, sausage and vegetable-cheese mixture.
  • Whisk the eggs, milk, paprika, 1/2 teaspoon salt and 1/4 teaspoon black pepper in a large bowl, then pour over the casserole mixture. Sprinkle the top with the remaining 1 cup mozzarella, then cover and cook on low until the eggs are set and have become a custard, about 7 hours. Turn off the heat, uncover and let rest for about 10 minutes.
  • Sprinkle with sliced scallions and serve with hot sauce and ketchup.

1/2 cups milk

Steps:

  • 1. Spray a 6 quart slow cooker with cooking spray. Layer 1/2 of the potatoes on the bottom of slow cooker.
  • 2. Top with half of the sausage, mozzarella and Parmesan cheese, sun dried tomatoes and green onion. Repeat layering.
  • 3. Beat eggs, milk salt and pepper in large bowl with a wire whisk until well blended.
  • 4. Pour evenly over potato-sausage mixture.
  • 5. Cook on low setting for 8 hours or on high setting for 4 hours or until eggs are set.
  • Substitute 1 pkg. Regular Flavor Jimmy Dean® Pork Sausage Roll, cooked, crumbled for Jimmy Dean® Hearty Original Sausage Crumbles.

Homemade (or use regular can) cream of chicken condensed soup
1 tablespoon butter
2 tablespoons flour
1 cup water
1 cup whole milk
2 teaspoons chicken bouillon paste
1/2 teaspoon thyme
1/2 teaspoon poultry seasoning
Salt & pepper, to taste
1 bag (32-ounce) hash browns, defrosted
14 ounces smoked sausage, diced
1 small onion, diced
2 cups cheddar cheese, grated

Steps:

  • For the homemade condensed cream of chicken soup (if using--otherwise skip to next paragraph), melt butter in a small saucepan over low heat. Sprinkle in flour and whisk. Cook 1 minute. Stir in water and whisk to remove any lumps. Simmer until thick, then stir in milk and chicken bouillon paste plus the seasonings. Sauce should thicken slightly at this point. Taste and adjust seasonings. Set aside. Place hash browns, smoked sausage, onion and cheese together in a lightly greased crockpot. Pour over condensed soup and stir. Cover and cook on high for 3 hours or until potatoes are soft and sausages are hot. Serve and enjoy!. *Chicken bouillon paste is similar to bouillon cubes, but in a paste form. It's found in jars right next to the boxes of chicken stock. 1 small onion, diced
3 cloves garlic, finely chopped
2 bags (20 oz each) refrigerated shredded hash brown potatoes
3 cups shredded Cheddar cheese (12 oz)
2 cups sour cream
1 can (10 1/2 oz) condensed cream of mushroom soup
1/4 cup water
1/2 teaspoon pepper
1/4 teaspoon salt

Steps:

  • Spray 5-quart slow cooker with cooking spray.
