SIMPLE CROCK POT CHICKEN AND POTATOES
This is an extremely easy recipe for perfect crock pot chicken and potatoes. It smells wonderful and it's great to come home to a ready meal that only took 10 minutes to prepare. The chicken falls apart and the potatoes practically melt in your mouth! The potatoes cook in the juices from the chicken, so there's no need to season. They have great flavor. Add a vegetable as a side and you're good to go!

- Season both sides of the chicken to taste.
- Put sliced potatoes in the bottom of the crock pot. Put the chicken on top and cover.
- Cook on high for 4-5 hours or low for 7-8 hours.
SLOW COOKER WHOLE CHICKEN, POTATOES, & VEGETABLES

- Slice the onions into wedges, chop the potatoes to about 1-inch cubes, and chop the carrots into large-ish chunks (1.5 inches). Layer the vegetables in a large slow cooker and season with salt & pepper and about half the rosemary. (About 1/2 teaspoon dried or maybe 3-4 springs' worth fresh.)
- Season the chicken as desired: I gently pull the skin away and put salt, pepper, and rosemary under the skin, in the cavity, and all over the outside. You can also stick half a lemon and a few cloves of garlic within the cavity. Make sure it's well-seasoned!
- Make space in the slow cooker and place the chicken on top. You want a layer of potatoes and vegetables underneath so the chicken isn't sitting in its juices while it cooks.
- [Optional dry brine: Now that it's salted, you can let it rest, covered, in your fridge for 20 minutes or up to three days. I like to start mine the night before and let it rest in the fridge overnight for a quick 8-hour dry brine.]
- Cook on HIGH for about 3 - 3.5 hours, or on low for about 6 hours. I use a meat thermometer to check doneness. You want the thickest part of the thigh to reach 160-165ºF, and the juices to run clear.
- Remove the chicken from the slow cooker and let rest, or place in oven to broil for 3-5 minutes to get crispy skin.
- Stir the potatoes and vegetables into the juices and mix in the collards. Cook another 30 minutes while the chicken rests. (You can choose to leave the lid off to thicken the juices a little.)
SLOW-COOKER WHOLE CHICKEN
This no-fuss whole chicken is moist and tender. We rub it in spices and prop it up on canning lids, suspending it above the juices for a roasted effect right in the slow cooker. Piercing the skin on the bottom lets excess juices run out, allowing for even and gentle cooking. A simple homemade barbecue sauce comes together in mere minutes, perfect for slathering all over.

- Coat the insert of a 6-quart slow cooker with cooking spray and place 3 to 4 canning jar lid bands (without the flat metal rounds) in the bottom. Combine the paprika, garlic powder, pepper, salt, coriander and cumin in a small bowl.
- Dry the chicken well and turn it upside down. Cut a 1-inch-long slit in the skin between the thigh and the backbone on each side. Rub the spice mixture all over the chicken, making sure both sides are evenly coated, and place the chicken in the slow cooker on top of the lid bands. Cover and cook on low until the chicken is tender and cooked through, about 7 hours.
- Meanwhile, make the barbecue sauce: Combine the ketchup, vinegar, brown sugar, mustard, salt, chili powder, onion powder, garlic powder, cayenne and pepper in a medium microwave-safe bowl and microwave for 4 minutes, stirring once halfway through, until the sugar and spices are dissolved and the sauce is thickened. Let cool completely.
- When the chicken is ready, remove the lid from the slow cooker and brush the chicken with barbecue sauce to cover well and let it rest for 10 minutes. Carefully lift the chicken from the slow cooker by putting tongs into the cavity, and sliding a spatula underneath and transfer it to a platter. Serve additional barbecue sauce on the side.

- In a small bowl, combine the spices.
- Remove any giblets from chicken and clean chicken.
- Rub spice mixture onto the chicken.
- Place in resealable plastic bag and refrigerate overnight. (I usually skip this step because I'm always in a hurry).
- When ready to cook, put chopped onion in bottom of crock pot.
- Add chicken. No liquid is needed, the chicken will make its own juices.
- Cook on low 4-8 hours.

- Loosely chop the onion and place it in the bottom of the slow cooker.
- Remove any giblets from the chicken and then rub the spice mixture all over. You can even put some of the spices inside the cavity and under the skin covering the breasts.
