2 pounds Yukon gold potatoes, unpeeled, cut into 1-inch pieces
1 pound carrots, peeled and cut into 1-inch pieces
2 large onions, finely chopped
2 cloves garlic, minced
2 tablespoons fresh parsley, finely chopped
One 12-ounce bottle stout beer, such as Guinness Draught
1/4 cup olive oil
2 tablespoons light brown sugar
2 tablespoons tomato paste
1/2 cup all-purpose flour
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
One 4-pound boneless beef chuck roast, trimmed and cut into 1 1/2-inch pieces
2 tablespoons unsalted butter
2 tablespoons canola oil
3 cups chicken broth

Steps:

  • In a 6-quart slow cooker, combine the potatoes, carrots, onions, garlic, parsley, stout, olive oil, brown sugar and tomato paste. In a separate bowl, mix the flour with the salt and pepper. Dredge the beef pieces in the dry mixture, shaking off any excess.
  • In a medium skillet, melt the butter and canola oil over medium-high heat. In batches, add the beef pieces and sear until brown, about 2 minutes, transferring the beef to the slow cooker as done. Remove the last batch of beef to the slow cooker, add 1 cup of the chicken broth to the skillet and scrape up all the brown bits that have accumulated on the bottom of the pan. Add the pan juices to the slow cooker, along with the remaining 2 cups of chicken broth. Cover, and cook on high for 6 hours.

3 pounds lean rump roast, chuck pot roast, sirloin tip, top round or bottom round, cut into 2-inch cubes
One (750-milliliter) bottle red wine
1 carrot, cut into 1-inch pieces
1 stalk celery, cut into 2-inch pieces
1 onion, coarsely chopped
4 slices thick-cut bacon, cut into matchsticks (lardons)
2 tablespoons canola oil, plus more if needed
Coarse salt and freshly ground black pepper
1 tablespoon all-purpose flour
2 1/2 cups beef stock or low-fat reduced-sodium beef broth
1 bouquet garni (10 black peppercorns, 5 sprigs thyme, 4 sprigs flat-leaf parsley and 2 bay leaves, preferably fresh, tied together in cheesecloth)

1 tablespoon tomato paste

Steps:

  • To marinate the beef, place the cubes in a large glass or stainless-steel bowl. Add the wine, carrot, celery and onion. Cover and refrigerate for at least 2 hours or overnight.
  • Line both a baking sheet and a large plate with paper towels. With a slotted spoon, remove the beef from the marinade and transfer to the prepared baking sheet. Pat the meat dry with paper towels. Strain the marinade, reserving separately both the vegetables and the liquid.
  • To cook the beef, heat a large skillet over medium-high heat. Add the bacon and cook until the fat is rendered and the bacon is crisp, about 5 minutes. Remove the bacon with a slotted spoon to the prepared plate to drain. Pour off all but 1 tablespoon of the bacon fat from the skillet. Decrease the heat to medium, add 2 tablespoons of the canola oil and heat until shimmering.
  • Season the beef with salt and pepper. Add the beef to the skillet in two or three batches (don't crowd the pan) and sear until it is nicely browned on all sides, about 5 minutes; transfer to the prepared baking sheet when done. Set aside.
  • Add the reserved vegetables from the beef marinade to the skillet and cook until they start to brown, 5 to 7 minutes. Sprinkle the flour over the vegetables and toss again to lightly coat. Cook, stirring constantly, until the flour turns brown, 2 to 3 minutes.
  • Transfer the vegetables and beef to the insert of a slow cooker. Add the reserved marinade liquid and enough stock to barely cover the meat. Add the bouquet garni, tomato paste and garlic and stir to combine. Cover and cook on high heat for 3 to 4 hours or low for 6 to 8 hours. (Alternatively, you can cook the stew without a slow cooker: Instead of cooking the bacon and beef in a skillet, simply start in a large Dutch oven and do not transfer the vegetables and beef. Cover the Dutch oven and place in an oven preheated to 350 degrees F until the meat is tender, 2 1/2 to 3 hours.)
  • Remove and discard the bouquet garni. Add the mushrooms and continue to cook until tender, about 30 minutes. Stir in the reserved bacon. Taste and adjust the seasoning with salt and pepper. Serve piping hot with noodles, potatoes or rice. Or, better yet, cool, refrigerate and reheat to serve the next day.

Steps:

  • Whisk flour, garlic salt, and black pepper together in a small bowl; pour into a large resealable plastic bag. Place stew beef in bag, seal the bag, and shake to coat beef to coat completely.
  • Heat olive oil in a large skillet over medium-high heat; saute coated beef in hot oil until browned on all sides, about 10 minutes. Stir onion into beef; saute until onion is softened, 5 to 7 minutes. Pour beef and onions into a slow cooker.

4 sprigs thyme
1 sprig rosemary
2 fresh bay leaves
2 tablespoons olive oil
3 pounds beef chuck roast, cut into 2-inch pieces
1 large onion, chopped
5 cloves garlic, chopped
7 medium carrots (about 12 ounces), peeled, cut diagonally into 1-inch pieces
3 large stalks celery, cut diagonally into 1-inch pieces
1/2 cup dry red wine
2 tablespoons all-purpose flour
4 cups low-sodium chicken broth
1 1/2 pounds small red potatoes, halved
One 28-ounce can diced tomatoes
Kosher salt and freshly ground black pepper
Chopped flat-leaf parsley, for serving

Steps:

  • Arrange a rack in the lower third of the oven and preheat to 275 degrees F. Tie the parsley, thyme, rosemary and bay leaves together with kitchen twine.
  • Heat the oil in a large Dutch oven or other heavy pot over medium-high heat. Working in batches, cook the beef in a single layer spaced about an inch apart, turning a few times, until the pieces are browned on at least three sides, 8 to 10 minutes per batch. As the beef finishes browning, transfer to a large plate.
  • Reduce the heat to medium. Add the onion and garlic to the pot and cook, stirring occasionally, until the onions are tender and beginning to brown, about 6 minutes. Add the carrots and celery and continue to cook until they are brightly colored and fragrant, about 4 minutes. Stir in the wine, scraping up any browned bits on the bottom of the pot, and cook until it evaporates, about 4 minutes. Sprinkle the vegetables with the flour, stir to evenly coat them and cook for 1 minute. Add the broth, potatoes, tomatoes and the reserved beef with any accumulated juices. 1 pound baby multi-colored beets with tops, peeled and tops removed
1 pound rainbow carrots with tops, peeled and tops removed
1 pound multi-colored Peewee potatoes
1 pint Brussels sprouts, chopped
2 cups good red wine
1/2 cup fresh parsley
2 teaspoons Worcestershire sauce
1 teaspoon whole allspice
5 cloves garlic
3 bay leaves
1 medium onion, chopped

Steps:

  • Put 1 cup of the flour in a shallow bowl and season with salt and pepper. Dredge the beef in the seasoned flour and set aside.
  • Heat a heavy skillet on medium-high heat, add the bacon and cook until crisp. Set the bacon aside, leaving the drippings behind in the skillet (chop the bacon and reserve for serving). In batches, brown the beef in the skillet, adding olive oil if necessary, about 3 minutes per batch. Transfer each batch to the slow cooker as it browns.
  • Add the butter and remaining 3 tablespoons flour to the skillet. Cook 3 minutes, stirring with a whisk. Whisk in the tomato paste. Turn off the heat, pour in the beef broth and whisk to get all the ingredients incorporated with the brown bits from the bottom of the skillet. Add the mixture to the slow cooker.

1 1/2 lbs beef stew meat
12 potatoes, medium, cut in half (1 1/2 lbs)
1 medium onion, cut into 8 wedges
1 (8 ounce) bag baby carrots (about 30)
2 cups water
1 1/2 teaspoons seasoning salt
1 bay leaf
1/4 cup water
2 tablespoons all-purpose flour

Steps:

  • Rehydrate tomatoes as directed on package, drain and coarsely chop (or use canned undrained).
  • Mix tomatoes and remaining ingredients except 1/4 cup water and the flour in a crock pot slow cooker.
  • Cover and cook on low heat setting 8 or 9 hours or until veggies and beef are tender.
  • Whisk together 1/4 cup water and the flour and gradually stir into beef mixture.

This recipe came with our crock pot instructions 15 years ago and it's been well used. We love coming home from skiing to a pot of stew. Another serving addition to this recipe that comes from my husband's grandparents, is to serve up the stew in a bowl and top with a scoop of cottage cheese and then sprinkle with seasoned salt. It sounds funny but is so.....tasty, I recommend you try it that way if you like cottage cheese. If you want the stew a bit thicker you can leave the lid off the last 1/2 hour or so and turn the heat up to high.

2 pounds cubed beef stew meat
¼ cup all-purpose flour
1 tablespoon cracked black pepper
½ teaspoon salt
4 medium (2-1/4" to 3" dia, raw)s potatoes, peeled and diced
1 ½ cups red wine, or more to taste
1 (12 ounce) package baby carrots
6 slices thick-cut bacon, cut crosswise into 1/4-inch strips
3 stalks celery, diced
1 onion, diced
1 tablespoon minced garlic
1 tablespoon seasoning salt (such as Johnny's®)
2 each bay leaves

Steps:

  • Spray a slow cooker with cooking spray and place meat inside.
  • Mix flour, pepper, and salt together in a small bowl. Pour over the meat and stir to coat. Stir in potatoes, red wine, carrots, bacon, celery, onion, garlic, seasoning salt, and bay leaves.
  • Cover and cook on Low for 10 to 12 hours or High for 4 to 6 hours.

2 -4 tablespoons butter, melted
1/2 cup honey
1/4 cup prepared mustard
3 garlic cloves, minced
1 teaspoon salt
1 -2 teaspoon curry powder

Steps:

  • Place chicken in slow cooker.
  • Combine all remaining ingredients and pour over chicken.
  • Cook for 4 to 6 hours on high or 6 to 8 hours on low.
  • To freeze: Prepare and cook recipe as directed. Allow to cool and freeze in a freezer bag or container.
  • To serve: Reheat in the microwave.

1 medium onion, peeled and sliced
1 (8 ounce) can tomato soup
1 lb stewing beef
4 bay leaves
5 beef bouillon cubes
1 dash of oregano and pepper

Steps:

  • Put all ingredients in crock pot and fill pot with water.
  • For fresh (or thawed) beef cook 6-8 hours on low, for frozen cook on high.

This if from the WW site, and I've added a few ingredients, which don't change the point value, which is 4 per serving. If you aren't on a diet, this is still really good. The pureed beans make the stew very hearty.

1 lb lean stewing beef
cooking spray, 1 spray
1 small onion, chopped
2 cups mushrooms, sliced
2 large garlic cloves, minced
2 large carrots, sliced
15 ounces cannellini beans, drained and rinsed
1 cup beef broth
14 1/2 ounces canned diced tomatoes
1/4 cup sun-dried tomato (rinsed)
1 chipotle chile in adobo, chopped (optional)
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper (or to taste)

Steps:

  • Place the beef in your crock pot, on high heat.
  • Add onion, mushrooms and garlic to a 12" non-stick skillet and saute over medium high heat for 5 minutes, or until soft. Stir occasionally. Add to the crock pot.
  • Add carrots.
  • Place the beans in a blender or food processor, with the broth, and blend until pureed. Add to the crock pot.
  • Add all remaining ingredients.
  • Cover and cook on high for 6-7 hours. Garnish with fresh thyme.
  • I served this over spinach, but it would be nice in a big bowl with some lovely French bread!

I bought a nice shoulder roast and decided to make a beef stew with it. The prep time includes prepping the vegetables.Remember as always, the seasonings can be adjusted to your own personal tastes.For extra color add some frozen peas near the end of cooking time.Also remember crockpot cooking times vary, so adjust this recipe according to your crockpot.If desired, serve with a salad and crusty bread.If you decide to try this, I hope you enjoy it. :) Submitted to " ZAAR " on December 7th, 2009

2 1/2 lbs shoulder roast, cut into bite sized cubes
3/4 cup flour
1/4 cup vegetable oil
1 1/2 teaspoons dried parsley flakes
1 teaspoon garlic powder
1 1/2 teapoons ground black pepper
2 teaspoons seasoning salt (If you have Penzy's Smoky 4/S seasoned salt by all means use it. )
5 cups potatoes, peeled, washed, and cut into bite sized pieces (I used Yukon Gold )
1 lb baby carrots
1 cup onion, coarsely chopped
1/2 cup water
2 (10 3/4 ounce) cans Campbell's Golden Mushroom soup
2 bay leaves

Steps:

  • In a large bowl add flour and cubed beef, cover meat with flour until well coated and set aside.
  • In a large skillet heat oil until hot but not smoking, then add beef.
  • When meat starts to brown, sprinkle with seasonings and stir until meat is coated ( Remember, you just want to brown the meat not cook it until it's done ).
  • While the meat is browning, place vegetables in the bottom of the crockpot.
  • Place browned meat over vegetables, add water, soup and place bay leaves on top of soup.
  • Check after 6 hours and remove bay leaves, stir once or twice until veggies are well blended.( Add more water at this time if it seems too thick).

Stir in herb bundle, bay leaves, potatoes, and 2 cups stock. Cover and cook on LOW for 7 hours.
  • Whisk together flour and remaining 1/2 cup stock in a small bowl; whisk into mixture in slow cooker until incorporated. Stir mushrooms, pearl onions, mustard, and red wine vinegar into beef mixture. Increase slow cooker heat to HIGH, and cook, uncovered, until slightly thickened, about 15 minutes. Turn off slow cooker; remove and discard herb bundle and bay leaves. Ladle stew into bowls, and sprinkle with chives.
