21.5 oz cream of mushroom soup ((2-10.75 oz cans))
43.5 oz green beans ((3-14.5 oz cans) drained)
1/3 cup milk
6 oz can French fried onions

Steps:

  • Gently mix together your soups (condensed with nothing added), green beans (drained) and milk until well blended
  • Spray your crock pot lightly
  • Pour your green bean mixture into your crock pot and spread evenly
  • Cover and cook on low for 2-3 hours
  • Sprinkle your French fried onions on top before serving

2 (10.5 ounce) cans of cream of mushroom soup
⅔ cup milk
½ teaspoon onion powder
¼ teaspoon ground pepper
4 (14.5 ounce) cans of green beans, drained
½ cup grated parmesan cheese
½ cup grated cheddar cheese
1 (6 ounce) can french fried onions, (divided use)

Steps:

  • In the bottom of a 6-quart slow cooker, mix together the cream of mushroom soup, milk, onion powder and ground pepper. Stir until all ingredients are well combined.
  • Add in green beans, parmesan cheese, cheddar cheese and half of the french fried onions. Stir gently until well combined.
  • Cook on low for 2 hours, stirring occasionally. When cooking time is complete, stir mixture well and add in the remaining french fried onions and cook for an additional 20-30 minutes.
  • After the additional 20-30 minutes is up, remove the dish from the slow cooker and serve immediately.

This comforting side dish takes a couple of supermarket short-cuts: Buy pre-sliced mushrooms and canned french-fried onions to save on prep time. The raw cremini mushrooms are thrown right into the slow cooker and release their savory goodness while the green beans cook.

3 pounds green beans, trimmed and cut into2-inch pieces (about 12 cups)
1 pound sliced cremini mushrooms (about 8 cups)
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter
1 large yellow onion, cut into 1/2-inch dice(about 2 cups)
2 cloves garlic, minced
1/4 cup all-purpose flour
3 cups half-and-half
2 cups canned french-fried onions

Steps:

  • Combine the green beans, mushrooms and 1 teaspoon salt in a 6-quart slow cooker.
  • Melt the butter over medium-high heat in a large skillet. Add the onions and a pinch of salt and cook, stirring occasionally, until the onions are tender and lightly browned, 6 to 8 minutes. Reduce the heat to medium, then add the garlic and cook, stirring constantly, until the garlic is just softened, about 2 minutes. Stir in the flour and stir constantly until it thickens into a paste, about 2 minutes. Add the half-and-half and 1 teaspoon each salt and pepper and cook, whisking occasionally, until thickened, 8 to 10 minutes. Remove from the heat and season to taste with salt and pepper. Pour the sauce into the slow cooker and stir to coat the vegetables. (The sauce will loosen as it cooks.)
  • Cover the slow cooker and cook on low until the green beans are tender but not mushy, about 4 hours. Remove the lid and stir. If the green beans look too soupy, cook for an additional 15 minutes uncovered. Season with additional salt and pepper to taste. Transfer to a shallow serving dish and sprinkle with the fried onions. Serve hot.

I was on a search for a slow cooker green bean casserole to take to a friend's house for Thanksgiving dinner. I couldn't find one I liked, so I mixed and matched and came up with this one! It was so good that I didn't have any leftovers. Happily fed 8 adults and 3 children. Use different spices for your taste! I added some onion powder and Italian seasonings. After you serve, leave the lid off of the slow cooker so the french-fried onions remaining crispy on top. You could also use cream of mushroom soup in place of the cream of chicken.

1 clove garlic, finely chopped

1 package (8 oz) sliced fresh mushrooms (about 3 cups)
1/2 cup chopped red bell pepper
1/2 cup slivered almonds
1/2 cup half-and-half

Steps:

  • Spray 3- to 4-quart slow cooker with cooking spray. In slow cooker, mix beans, soup, thyme, garlic, salt and pepper.
  • Cover; cook on Low heat setting 4 to 5 hours.
  • Stir mushrooms, bell pepper and almonds into bean mixture in slow cooker. In 1-cup measuring cup, beat half-and-half and flour with whisk until well blended; stir into bean mixture.

  • Trim the green beans and cut into 1-inch pieces (don’t be tempted to cut them larger than this, or your green beans will turn out too firm). Add them to a 5 or 6-quart slow cooker.
  • Melt the butter in a wide saucepan over medium heat. Add onion and mushrooms. Cook, stirring occasionally, until the onion is soft and golden and the mushrooms brown and have given up their liquid, about 12 minutes.
  • Sprinkle the flour over the top. Cook, stirring constantly, for 1 to 2 minutes more, until all of the flour turns golden and no white bits remain. The vegetables will seem dry.
  • Slowly add the milk a few splashes at a time, stirring between each addition to prevent lumps from forming. Increase the heat to medium high. Stir in the salt, pepper, and nutmeg. Cook and stir, allowing the sauce to bubble gently, running a wooden spoon or rubber spatula along the bottom of the pan. Continue cooking and stirring for 6 minutes, then stir in the sherry vinegar. Cook 2 to 4 more minutes, until the sauce has thickened to resemble a creamy gravy. It should be clearly thicker than it was when you started, but still be loose enough to easily coat the green beans.
